Ditto the foil dinners - ground meat and various sliced vegetables wrapped up and stuck in the campfire. Each person can make their own combination of seasonings and veggies, too.
I like to make "dough boys" for breakfast - use a "just add water" biscuit mix (like Bisquick) to make a soft dough, wrap the dough around the end of a stick, and roast over the fire until cooked. When done, pull it off the stick and fill the hole where the stick was with jam and/or butter. It's like a marshmallow roast for breakfast, and was really fun to do as a kid.
Cold cut sandwiches are easy if you have a fridge.
Baked potatoes with chili - wrap the potatoes in foil and stick them in the coals to cook, bring chili in a can and heat it on the fire. Cheese and/or sour cream are optional, but doable if you have a fridge.
how many days/people?
I froze leftover chili and brought that - it doubles as an ice block LOL - heat and serve with burgers or hotdogs.
pasta - my kids are happy if it's just tossed with olive oil and parmesan, I added veggies that I had already washed/steamed at home and some leftover cooked chicken.
You could fix a soup or chili ahead of time and freeze. But when we went camping we cooked everything there. You can fix almost anything...chicken breasts (I suggest boneless), pork chops, steaks, spaghetti. I don't know if you are grilling or if you have a cooker...the boyscounts use to use dutch ovens, grills, and the big cookers (the ones you use to deep fry turkeys).
Depends on for how many and how it will be cooked once you are camping. If you have a dutch oven you can make just about any casserole/stew that your family will eat. Also chili, roasts. When we go I cook over the fire so it is better you have all ingredients defrosted before cooking. You can also make foil pack meals that just get thrown into the fire. Good Luck!

I love cooking steamed veggies when we camp. Take a sheet of heavy duty foil and lay flat. Pile chunks of broccoli, zucchini slices, onion slices, mushrooms, etc. in the center. Top with 4 or 5 ice cubes. Close up ends of foil to make a pouch. Cook over the campfire/grill for 10 - 15 minutes depending on how well done you like your veggies. The ice will melt and steam the veggies. Just be careful about the flame temp. I have made charcoal this way, also. LOL!!!
I like to make sloppy joes and put it in a ziplock bag for space, works well!
macaroni salad, baked beans, pancakes in the package add water to make. precooked bacon or refrigirated. chips. canned chili for chili dogs. deviled eggs or just hard cook them. lunch meat peanut butter. crackers, viennas, fried chicken thats all I can think of.
In addition to stuff to put on the grill, I would bring some veggies with dip, salad and fruit. Also, if you have a campfire I would make smores with the kids. They love it.
What type of cooking equipment is available? Campfire, out door camp stove, charcoal grill? Personally, we never have hamburgers when camping. I have done hot dogs and let the kids roast them over the campfire. One of our favorite meals is steak or london broil and baked potatoes done over the open fire, however, it does take a long time for the potatoes to cook. It's always a good idea to bring along a salad (potatoe, tuna macaroni, or pasta) as a side dish - it keeps well in the cooler.
