Just curious and hoping for an inspiration or 2. Now I feel compelled to list what we had all week. I fiinally cooked my Christmas turkey! I smoked a turkey on the grill so I wouldn't heat the house up. We have had that with dirty rice and veggies. We had turkey sanwhiches one night with cold pasta salad. Last night I made homemade salsbury steak - seasoned cooked hamburger patties and mushrooms, thickened juices, with mashed potatoes. A couple days ago we had jerk chicken. I buy a good jerk sauce from the Jamaican restaraunt down the street and cook on the grill. Day before that I made shrimp and pasta. I cooked the shrimp in garlic, ginger, and red chili paste with white wine and serve over noodles seasoned with garlic, olive oil, alt and pepper. Oh yeah, I made french bread pizza one night with the kids and I bought a roll of pizza dough one night and made sausage, mushroom, alfredo pizza. Of course we had veggies evernight but that's not all that noteworthy. Tonight maybe steak fajita taco salad.

Fritata - scrambled eggs with sauted onions, zucchini, summer squash and pepperoni. And blueberries picked fresh from the bushes in the back yard for dessert.
On the BBQ:
1 pork tenderloin rubbed with Original flavored Mrs. Dash and some rosemary from the garden.
Veggie packs:
Sealed foiled packs of zucchini, carrots, red potatoes, red onion, butter, and more Mrs Dash.
Served with apple sauce.
This is so easy and so yummy!

Tonight is baked chicken with itailian bread crumbs, white rice, steamed carrots, and onion home made onion bread rolls.
last night was grilled bar b q chicken (hubby cooked) mixed white and yellow corn, white rice, and biscuits
the night before that grilled bar b q ribs (hubby cooked) grilled cor on the cobb, home made corn bread. Hope this helps
Stuffed bell peppers with mac and cheese! I made tenderloin the other day, spegetti last night, sat were having brisket and Sunday we are having bbq (shrimp, hamburgers and sausage!) Hope that helps I was at a loss earlier and then saw the bell pepers.
I don't have a name for it, but I mixed rotini pasta (cooked, lol), spaghetti sauce, cut up grilled chicken (that I grilled and cut up), and mozerella cheese and baked it. omg, it was sooooo good!
Finally cooked the last frozen turkey the other day - 15 lbs (bought at Thanksgiving for 20 cents a pound. They're at HEB right now for 84 cents a pound). Anyways - One big turkey lasts my husband and son and I about a week. Bake it in one of those Reynolds Oven Bags (made large for Turkeys). That night you just eat turkey with a side and the good juices. THEN:
- make grilled cheese & turkey sandwiches
- make turkey and cranberry sauce sandwiches
- make what I call a "Mezetta sandwich" with hot banana wax pepper slices
(all three of these sandwiches are TOTALLY better on the fresh sourdough from the bakery.)
- make enchiladas
- make tacos
- make nachos
- make soup - turkey noodle soup, taco soup with a can of mexican style tomatoes and put in fresh cheese and fresh avocado and tortilla strips whe you serve it
- make chicken salad (but with turkey) - hard boiled egg, pickles, mayo, lime
- make a garden salad with turkey chunks on top (seasoned and kept cold or warmed up). Salads taste great with a little sweet in them. My son and I like to put freshly diced oranges and feta cheese on top of our salad. Rasins are good too. THe salty meat/salad dressing and sweet orange are a great contrast.
i think I'm going to shake & bake some chicken, green bean casserole & mac n cheese...
Making a chicken and broccoli stir fry as we speak, lol.
-- Chicken cooked with various spices and OJ in oven... for me I pull the chicken apart when done and put it in a nice fresh salad, hubby and daughter just cut it up and eat.
-- A Cheese Potato dish also in oven.
-- Corn on the cob on stove top.
-- Also have fresh fruit (watermelon, strawberries & blueberries).
-- Dessert vanilla ice cream which I will add some of the fresh fruit to top mine off, daughter will eat plain, hubby who knows.
Was going to do the chicken and corn on the grill but the weather is questionable and we look low on charcoal.
my daughter made the special request for tuna sanwiches. Already have some apple pie leftover for dessert.
tonight : Swiss Chard and sausage soup - our garden is overflowing with Chard.
w- margherita and chicken spinach pizzas on the grill

m - grilled fish tacos, black beans, and a side salad

Im making mole its a mexican dish, first u boil the chicken then buy mole its in a can already prepared, then u can make that with orange rice mix with corn, then fried pinto bean!!!!!! Yesterday i made fryed fish tilapia!!!!!!!!
How about french bread and do build your own subs with a fruit salad on the side?

The night before it was spaghetti with clams.
The night before it was BBQ chicken & sausage outside on the grill with roasted/grilled veggies.
The other night it was a roast in the crock pot.
The other night it was pulled pork... made in my crock pot.
The other night it was Ramen.
We do theme nights most nights....
tonight's dinner was chicken fajitas, peppers, onions, flour tortillas, grated cheese, refried beans, salsa, sour cream, tortilla chips and brownies for dessert.
We love to grill out, we have several 'Grill Nights' a week. My neighbors aren't surprised to see us in our coats grilling in the middle of winter when it's snowing.
We grill: fish, hot dogs, hamburgers, turkey burgers, steak, pork chops, shrimp, chicken, corn on the cob, asparagus, zuchinni, pizzas, smores (my fav) I might serve any of these with salad, chips, frozen french fries, homemade french fries, a veggie, ranch beans, baked beans, rice.
'Mexican Night': could be any combination of the following: chicken enchiladas, beef enchiladas, chicken tacos soft or crunchy, grilled shrimp, beef tacos soft or crunchy, taco salad, rice, refried beans, homemake guac, queso, chips, four tortillas, corn tortillas, salsa, black bean salsa, sour cream, lettuce, tomatoes, avacado, grated cheese, beef or chicken fajitas, peppers, onions
'Italian night': Homemade: lasagne, spaghetti w/meat sauce, chicken parmesan, ziti, chicken alreado usually with a salad or veggie and garlic bread. I use whole wheat pasta.
'Crock pot night': Roast w/veggies (leftover roast I make BBQ beef sandwiches), chicken, chili (leftover chili I freeze and then thaw out for chili dogs or chili burgers). All kinds of crock pot recipes.
'Homemade pizza night': bacon, chicken, ground beef, pepperoni, different cheeses, black olives, jalepanos, fresh basil, spinach, mushrooms, garlic, tomatoes. Everyone decides what they want on their own pizza and we bake in oven or on the grill. We use pizza dough, boboli pizza crust or french rolls.
'Breakfast for dinner': could be any combination: bacon, sausage, eggs, pancakes, waffles, toast, biscuits, biscuits and gravy.
'Chinese night': chicken stir fry, beef stir fry (use left over steak sliced super thin and veggies with some kind of sauce of my own concoction, garlic chicken, orange chicken..always served with brown rice
We also like meatloaf, beef tips and noodles, homemade chicken and noodles, homemade salsbury steak.
'Sandwich night': turkey, roast beef, swiss cheese, cheddar cheese, bacon, lettuce, tomato slices, onion, hoagie rolls, bread, avacado.
I always keep fresh fruit and veggies ready to eat in the fridge: watermelon, strawberries, cherries, grapes, blueberries, kiwi, blackberries, pineapple, carrots, cucumber, broccoli, cauliflower, celery and bowls of fruit on the counter: apples, pears, peaches, plums, apricots, oranges, bananas
I love to bake so there is always some kind of homemade sweet goody around.
Okay, I have small group for church tonight at someone else's house, so I'm off the hook for cooking, but I'm totally saving this post because everything sounds so yummy! I made a roast with veggies in the crock pot the other day. I also love to make "fish florentine". Very simple recipe with tilapia (or other light/white fish) coated in flour, season salt and garlic powder. Cook in a pan and top with creamed spinach (I cheat and buy the frozen kind). So easy and so good!

Great ideas!!! I am off the hook this week because our 15 yr old daughter is off to Cheer camp and hubby is stuck in airport right now.
Some of our favorites are
Salmon baked in foil with a mixture of tomatoes, olive oil, garlic, onion and seasonings to taste with rice or noodles,
Chicken pot pie home made, chicken broccoli casserole, pan seared prime rib eye steak with baked potatoes.
As a side dish...we LOVE Stouffers Spinach souffle and Creamed Spinach, and Perogies
Rotisserie chicken from the grocery store! Already prepared. (-: I will have a salad with mine and my son will probably have fruit and salad. Sorry I can't be more inspiring! I have two boys who play baseball and a husband who travels. Those rotisserie chickens are pretty cheap and make for great leftovers.

It's been a slow week. Usually I'm pretty good about cooking, but this week I've been phoning it in. Yesterday, seriously, we had grilled cheese sandwiches, tomato soup and omelets. Tonight, we had Chicken Ravioli (from Costco, LOVE THEM) with Barilla Tomato and Basil sauce. Cut up veggies with both meals. It doesn't help that Daddy's out of town and it's just Mommy and the kids. Oh well, at least they got protein and veggies each night and I didn't take them to McDonalds or something...
We had sloppy joes with ground turkey on the new little flat buns and salsa salad (lettuce, tomatoes, olives, cucumbers, peppers, shred cheese, salsa, and a sourcream salsa dressing, crushed corn chips on top).
It was yummy!
Monday I made my "famous" shrimp, avocado, salsa salad. We love this.
Cooked shrimp, rinsed and dried. Mix with your favorite salsa, add chopped avocados, put on greens. My son, mom and I ate 3/4 pound of shrimp!
Last night...Baked Salmon and couscous w/ feta,cranberries,almonds and watermelon.
Tonight...BLTEAO's (bacon,lettuce,tomato,fried egg over-easy,avacado and onion)and cottage cheese
Friday night...oldest graduates...eating out! Yeah!
Like S H, I can give you a rundown of what we've had recently:
satay chicken with peanut sauce, and baby spinach with cucumber salad
veggie burgers with grilled squash and zucchini
LOADED NACHOS (can't eat healthy all the time!)
black bean burgers with green beans and salad
salmon with wild rice and grilled corn on the cobb
homemade pizza with olives, feta, spinach, tomatoes, and artichokes
cinnamon toast crunch. seriously.

We weren't able to all sit down at the same time (son had karate right at the dinner hour and Hubby works really early tomorrow and goes to be early tonight), so I made chef salads.
I prepped all the ingredients and made a salad for hubby and daughter before leaving to drive son to karate. Stuck all the remaining ingredients in the fridge before walking out the door. Made son's when we got home.
Ham, Turkey, MontJack Cheese cubes, shredded cheddar, fresh tomato from my plant, red bell, black olives, perfectly boiled eggs, sweet vidalia onion, cukes, oh, and I tossed in some radish slices too. Yum.
