Hi Moms, I love to cook. I cook excessively. I cook for my kids, my guy, other family members, my kids friend's, I bring food to people down the street.
I love it when people just stop by so I can whip spmething up. I spend a lot of time on foodie media outlets getting ideas, trying new things.
Every once in awhile, like today, I'm just plain stumped. Can't find a single idea that turns me on!
So my question is...
If you could have ANYTHING you desire for dinner tonight, with no restrictions (like time, money, mess, diet, etc.) what would that thing be?
Fresh seafood! Crab cakes, crab salad, shrimp cocktail, shrimp scampi, steamed lobster and crab with lots of real butter and lemon wedges. OH my Lord, shrimp and grits!!!!! Fried flounder or freshwater large mouth bass with coleslaw and sweet potato fries. HUSHPUPPIES (hold the onion, please) and a gallon of SWEET ICED TEA, with fresh lemon. Add in an oceanfront table and I'm in heaven!

Yesterday I was craving meatballs. So, I made up homemade meatballs last night and had them for dinner last night, lunch today, and going to eath them again tonight for dinner. Oh ya... did I mention I am also pregnant... so I am blaming this on baby being hungry for meatballs. HA HA HA. I think I have almost finished off a 1 lb of hamburger in all the meatballs. Mmmmm.. they were sooo deliciuos. (might have to go for a snack now).

I was very happy to see bok choy on sale this week, since I've been craving Chinese food. I'm making beef and bok choy in hoisin/soy sauce over udon noodles and rice for the hubby.
Oh! After reading some of your responses, I have to say-time, effort, etc. not an issue-I would make pierogies! Dozens and dozens of pierogies in cheese, potato, saurkraut, meat and fruit, all covered in melted butter and sauteed onions. My mom and her friends used to make hundreds every year to split between the families and freeze, but it wasn't my mom's recipes and we don't remember how to make them. Definitely pierogies!

I'd go for something with a longer and more involved prep like beef bourgignon. I tried the Julia Child recipe after watching Julie & Julia, and it's really wonderful! Soup from homemade stock is great on a fall day, too. Bon appetit!

Oh this is so hard...but I'm feeling cozy so I would either go for comfort food like homemade mac and cheese, gnocchi or something else delcicious and bad for me...BUT if I had no restrictions I might go for a filet with some blue cheese crumbles and skin-on mashed potatoes with lots of butter!

Chicken Curry! Of course, that's not what we are having. Tonight is pancakes because my daughter has ballet and it takes too long to cook anything else.

4) Seared scallops, the giant ones...with asparagus, butter and lemon
5) Thai Noodles which I have no idea how to make or even which ones??The glass noodles with thin cut chicken, broccoli, egg, mild light brown sauce - I soooo crave this .................................................. had a moment of staring longinly into space. Mmmmmmmmmm.

If I could have ANYTHING...
Oysters on the 1/2 & grilled oysters on the 1/2 with sorrel sauce and bacon, a creamy and herbacious or mushroom rissotto OR carne asada OR crab stuffed mahi mahi, w/ bacon wrapped chev stuffed jalepeno poppers on the grill & broccoli raab sauteed with olive oil & garlic. Maybe a ceviche. Or Poke (hawaiian ceviche).
What I'm actually having (2nd runner up)
Beef Barley Stew
- EVOO
- 2+ lbs of stewmeat cut small (1/2 x 1/2)
- Garlic Salt
- 4 ribs celery - 2 diced 2 chopped
- 4-5 carrots - cut large (1/2" slices) ... the carrots I bought are smallish, otw fewer carrots. 2 big ones, 4-5 smallish ones, or 2lbs baby carrots
- 2 onions - 1 diced 1 chopped
- 5 cans original recipe stewed tomatoes
- 3 beef shanks
- water to cover
- 3/4 cup barley
- 5-10 hours
Prep everything. Couple rings of olive oil around the bottom of a really big pot. When EVOO is just smoking all of the stew meat. LOTS of garlic salt (it has to be enough to also season the shanks... I go across the pan once, stir, across the pan again). Brown. Add enough water to cover. Add all the chopped veggies and cans of tomatoes. Add beef shanks. Add more water to cover. Bring to boil. Turn down to simmer. Cook for at LEAST 5 hours, covered for about 1/2 that time, uncovered for the rest if I want it to cook down more. 1 hour before eating, add barley (make sure heat is LOW once barley is added.. or the starches with burn. Yucky). Salt and pepper to taste. Serve with crusty bread. It's a simple soup that just gets sooooo much flavor for cooking so long.

I always love greek gyros. I have never made them myself, but would love to do so.
I am always also a fan of pepperoni rolls. I tried making my own one time. Not as good as the local pizza place.
I am also a fan of our yummy shepherds pie. But it takes me too much time to make it. Dont' feel like it today.
And I also never tire of eating mymom's homemade gumbo. It's pricey and timely to make (she does sausage, shrimp, chicken, etc). It's so yummy.

authentic jerk chicken cooked on a charcoall grill. homemade fluffy, yeasty, white bread. grilled zuchini, onions, and either grilled or stewed tomatoes. and I have an off theme request for desert - real, homemade TiraMisu - with mascarpone and espresso - no shortcuts please! Porky pine balls. Hamburger or smoked sausage cut in bite sized pieces.
One cup of dry rice, two cups of water, one can of cream of mushroom soup, 1 can of whole kernel corn, sliced mushrooms. Heat the water to boiling, put all the ingredients in the pot with the boiling water. Turn the burner down to low. Cooks in about 20 minutes. Its a one bowl wonder.
Jalapeno poppers. Cut the tops off the peppers. Throw the seeds and membranes away. Cook 1 lb pork sausage and one diced onion until done. mix the diced onion, and pork sausage mix with 2 8oz pkgs of cream cheese. Stuff the cream cheese/sausage/onion mix into the peppers. (Cake decorating kit) Wrap the peppers with raw or partially cooked bacon and place in the oven @ 300 degrees. Remove when the bacon is completely done and serve. (When I have time, I smoke my bacon first. That adds a delightful flavor.) Removing the seeds and white membrane takes almost all the heat from the peppers.
Make Chili Rejanos (sp?) Use poblano peppers if you like the flavor, but not the heat. Removing the seeds and white membranes takes almost all the heat away, but leaves the flavor.
If I had some in my freezer, I'd smoke some pork ribs. I like the St louis ribs better than the babyback ribs. They have more meat and smoke better. I use mesquite for smoke. When buying ribs, always buy the heaviest packages. The bones themselves weigh the same The difference is the meat. So I buy the heaviest packages.

Beef stew.
Or what I have been craving is something from a restaurant. Fresh rosemary bread (with cracked pepper and olive oil dipping sauce), garlic-parmasean alfredo with black olives and parmasean crusted chicken.
Another thing I have wanted (my SO wont eat) is chicken and dumplings. I make mine with gnocchi, and I make it thick so its hearty.

Mmmmm, stuffed peppers! My husband makes them w/red peppers, chicken, rice, mushrooms, and cheese! It's really the only thing he can make but it is sooooo good! Beef Borginion is also another, YUM!!!! If you really want a challenge, turducken! (A duck in a chicken in a turkey!) That always sounds like an insane thing to me! LOL! I love to cook/bake but my kitchen is soooo small. I don't get to do nearly as much as I'd like!
