heres easy one: potatoes and beef smoked sausage:, Blt's, BBq-d chicken w/ Bag Caesar salad, (my favorite): and believe it or not, SPAM is a GREAT camping food, they make it in light, original and in turkey. All taste fantastic and add them w/ some grilled veggies, teriyaki sauce, or bbq sauce. It's cheap and easy. We also have put grocery store salmon on the fish griller and ate raw veggies w/ it aND ranch. The kids love it. Dont 4get the marshmallows! If the kids like veggie burgers, you can also grill those. they taste awesome w/ scrambled eggs and tomatoes. Have Fun

By the way, I LOVE soccer too. There is no team where I am save it be for little kids... And I just have no time to coach right now. Just imagining you playing soccer is such a refreshing breeze of thought. =)

Invest in a dutch oven! They usually come with a cook book. My favorite dutch oven recipe:
enchiladas-Precook chicken at home. Layer tortillas, chicken, enchilada sauce (and any extras you like) and heat on coals until the cheese is melted. Super easy . Because of the spices in the sauce, this is the only recipe that I line the oven with foil. I even make cake in it-a yummy treat for camping.
my kids favorite recipe for campfire cooking:
Pigs in a blanket-Place precooked sausage on a roasting stick and cover with refrigerated bicuit dough (the cheapy 10 in a can kind). cook over fire slowly until bisuit is browned on all sides.
We also make breakfast burritos on the camp stove.
Google cooking recipes and you will find tons. Girl scout and boy scout websites also have great camp recipes.
My biggest tip is to precook most meats and do any chopping before you leave home. It will save a lot of time for meal prep.

Our favorite is hobo stew cooked over a campfire. I use hamburger but you can use any meat of choice. I make "bowls" from tinfoil, heavy duty works best. Before leaving home I fill a ziplock with all the spices I will use. We like Mrs. Dash, basil, oragano, salt and pepper, and onion flakes. In each bowl add a small handful of each of your favorite veggies. We use mushrooms, potatoes, carrots, fresh green beans. (use whatever your kids will eat) Divide the meat up between bowls. Add spices and 1 1/2 cups of water. Seal up bowls and put into fire or on a grill on top of the fire. Cook for 1 hour or until potatoes are cooked. My kids like to mold the top of the foil "Handle" into a shape so that they know which is theirs. This is a meal that the kids can help prepare their own bowl. I cut up the veggies and leave them in piles on a tray so that they can choose. They have to have some of each veggie. Yummy! The kids gobble it up because they made it.
