You could do a stir fry -- they sell frozen bags of "stir fry vegetables", and pick up some Asian sauce. Slice the chicken thin, cook it in a pan, add the veggies and sauce, and simmer while you make rice.

I actually have a few good ones. I mentioned one in an earlier post today. You can do Salsa Chicken. Basically, I just take boneless, skinless chicken breast and cover it with Pace Picante Sauce (whatever heat level you like, I use medium) and bake as you normally would. I serve with rice and a veggie.
Or, you can do orange chicken. Take about half a can of frozen concentrated orange juice, about 1/4 cup of honey, a little salt and pepper. Boil it for about 3 minutes and this is your sauce. Salt and pepper your chicken, then brush with some of the orange sauce. Reserve the rest to use as a sauce over the cooked chicken. Bake the chicken at 375 for about 40 minutes or until done.

Sautee cut up chicken in pan with a little bit of oil. When the chicken is cooked, add 1/2 cup of barbecue sauce and 1/2 cup of orange marmalade. Serve over rice. Easy orange chicken! So good!

this is great, i'm always looking for new good chicken recipes! I just made this one and it was easy and fantastic-

Brown some salt & peppered boneless skinless chicken thighs in a dutch oven or regular pan if you don't have one. Transfer to baking dish if not in a dutch oven. Quarter up some red potatoes and some red onion. Put a can of diced tomatoes over it (i like the smoked ones) and bake. so yummy! my older son (he's 5) likes to help me by washing & cutting the potatoes :)

I made this last week-and we all loved it! After I rolled the chicken, I egged it and rolled it in Panko breadcrumbs-then baked it-I also made the sauce with cream of chicken soup, sour cream and lemon juice-mine was thick so I added a little cream-but you could use white wine.

Are you looking for something quick or just different? I usually cook chicken wings in the oven because they are quick and effortless. I change up the seasonings and plug 'em in. Boneless breasts I have seasoned (whatever) and pepper-crusted and baked covered with olive oil.

Do you enjoy cooking? Make a tomato sauce by stewing your own tomatoes and seasoning, and use it to cover the chicken before cooking. Or mushroom sauce.

Have you gone on Pinterest.com? It's a website that you, oh it's so hard to explain just look it up and you should be able to figure it out. I have gotten soooo many recipes from it and it's not just recipes, there's alot more to it. I have made a bunch of recipes from there that have been absolute hits in my house.

One of my favorite sites when I'm stumped is allrecipes.com because they have some great recipes, loads of comments with suggestions for variations, and a cool ingredient search feature. One of our favorites from that site is "Chicken in Basil Cream" (in desperation one night, I searched for recipes that had chicken and basil but no tomato, then sorted by highest rated). Based on the comments from others, we add garlic and white wine and skip the pimentos... so yummy... now I'm hungry for dinner and it's only 10 AM!
