What Is Your Favorite Weird Recipe??

My kids, well all but the 5 year old, LOVE Lima Bean Casserole!! Even adults cringe when I say it, but then they try it and LOVE it. It is so yummy, affordable, can be semi-healthy, and easy! Plus a 9x13 lasts us for at least two meals. I was just wondering if anyone else had any weird sounding recipes that are actaully really yummy they would like to share. I am looking for new and alternative options from the usual!

Lima Bean Casserole:
3 bags baby lima beans
1 package chicken breast
2 cans 98% fat free cream of chicken soup
Same amount of mayo/miracle whip as soup
4 cups shredded cheddar cheese
garlic

I just bake the chicken with salt, pepper, and garlic. I cook the lima beans according to the package. Mix the soup, mayo, as much garlic as you want (we LOVE garlic), and 2 cups of cheese. Then add the lima beans once they are cooked, and cube the chicken and add that. Put it in a 9x13 and top with the rest of the cheese. Bake at 350 for about 30-45 minutes.

My kids like when I make homemade croutons to put on top also. I just cube some bread and cook it on the stove in butter and garlic. Then I put them on top of the casserole and put it on broil at the end to make them crunchy :).

I guess a favorite in my house would be super easy fettucine alfredo.

1 package softened cream cheese
1/2c stick butter/margarine
3/4c parmasan cheese (grated, the kind in the bottle)
3/4c milk
Garlic powder and other seasonings to taste.

Combine all over medium low heat in a sauce pan stirring almost constantly.

For a little extra flavor I'll chop up green, yellow, and red bell pepper and cook it with it ends up tasting like a jalepeno popper if you add the right spices in with it. Its also super easy because you can cook the chicken before hand and you can cook the noodles then empty them into a strainer and then you can use the same pot to cook the alfredo in (cuts down on dishes). I also like having some andouille sausage with it too. The possibilities are endless with this, good luck!

I make the bisquick impossible cheeseburger pie. It is half cup of bisquick,1 lb of ground turkey or ground beef. I like ground turkey. I think it comes out moister. 1 cup of milk,1 cup of cheese or more depending on how cheesey you like it. 2 eggs. 1 onion chopped. I changed it up a little and decided to make it with some salsa. I use the corn and bean salsa that you buy at walmart. I put may be a half jar in it on top of the hamburger once it is browned. I forgo the onion if I use the salsa. I put the cheese on top of it and then the bisquick on top in a casserole dish. I spray the dish with cooking spray and cook it at 400 for 30 to 35 minutes.

-Caesar Salad on a Stick

Quite literally. Skewer romaine lettuce. Put a few drops of lemon juice in the center of each cruton. Add chicken or shrimp if you like. Put the caesar dressing in a squirt bottle and spray. Sprinkle over parmesan.

This was a "we don't have room for dishes on the horses, and I'm sick of silverware" dish idea (originally just brought the spray bottle and cheese in the container of salad-on-a-stick) that has turned into a summer favorite.

- Eggplant Fries with Sea Salt and Honey.

Deep fry eggplant spears. Drizzle with honey. Sprinkle with Sea Salt. Yum.

I love making my now famous (well at least in my group of friends)
German Lasagna

You basically make the glue with cheddar cheese, ricotta cheese, and eggs . Layer your noodles alternating with the "glue" and the meat ( I like to use keilbasa, chopped up and sauteed in garlic, butter and saukraut.

Top with shredded cheddar cheese, and serve with sour cream. It is something out of the ordinary, but all the flavors are normal, so people will eat it, and will want seconds!

**Tea and Ginger Soup**

The name may weird but is easy and very nutritive.

-4cups of low sodium chicken stock
-extra virgin oil
-2 cups of pea sprouts
-2 cups of baby spinach leaves (I like baby spinach for this soup)
-a couple of sun dried tomatoes (soaked them for an hour and sliced)
-1 tsp fresh ginger
-3/4 cup green tea
-1 chop garlic
-sea salt
- 1 cup of baby peas

Bring to boil 2 cups of stock and 1 spoon of olive oil. Add the pea sprouts until soft and take them out. Put then the spinach until soft and take them out with the pea sprouts.
You can divide them in the bowls and cover the bowls.
Heat the other spoon of oil, add the tomatoes (without the water that you soak them), garlic,ginger, salt, tea, the 2 cups left of stock. Bring to boil.
Reduce heat and put the baby peas until soft.
Take the peas and divide them into the bowls and fill the bowls with the soup.

My daughter loves a baked potatoe and plain cucumber, sliced and a little salt and sour cream. Don't know why, to me it has no taste, for for her it is the best thing ever. She even skips over chicken or fish or whatever protein I made for dinner.

One of our family favorites is tuna/potato chip casserole. It is made with equal amounts of canned tuna (flaked) and crushed potato chips (great way to use up the crumbs at the bottom of the bag). Mix together and use a white sauce for liquid. Bake for about 20 minutes at 400.

apple hashbrowns

we start by infusing a bottle olive oil with real vanilla bean for a week(works in any recipes that call for olive oil)

warm the oil, shred peeled apples over it, top with finely diced tofu(not necessary) chopped walnuts, then cover with sliced american cheese

cook at varied times depending upon taste

the results taste like caramel,,,,,only good for you

Thousand Island Chicken

1 lb. chicken breast
1 8 oz. bottle of thousand Island dressing
1 8 oz jar of orange marmalde
1/2 packet of onion soup mix.

Mix the dressing, marmalade and onion soup mix together. Pour over chicken in baking dish. Bake at 400 for 30 mts., until chicken is done.

Serve over rice.

Sounds gross, and the first time I made it, I thought I was crazy, but it's really good!

I recently discovered my daughter likes tuna mac & cheese:

prepare a box of Velveeta Shells & Cheese according to directions (or 2 - 3 packages of Easy Mac lol)
heat up about half a can of peas (or other veggie of choice)
once mac & cheese is done, stir in 1 can of tuna and the peas

My daughter loves it! I like it too :) It's also a good one for her to help make.

Another favorite is my Garlic Parmesan Chicken. I don't remember the exact measurements right now...

melt butter & mix in garlic (we love garlic too!) I want to say it was a stick of butter & 1 tbsp of garlic
mix plain bread crumbs with shredded Parmesan cheese
dip thawed boneless skinless chicken tenders or strips into the butter/garlic & then the bread crumbs/cheese
then place the chicken into a 9x13 pan

repeat with the rest of the chicken, filling the pan in 1 layer
then you can cover it with any remaining bread crumbs/cheese

Bake at 350 for about 15 minutes until the chicken is cooked.

We LOVE that one :) We also love garlic & cheese & chicken........haha :)
