What to Do with Leftover Chicken/turkey

We like to cook two chickens in the oven, then use it for the next few evening's meals. I am tired of tacos, and the weather's warming up, so don't really want soup either. I also sometimes make chicken salad, nachos, & sandwiches. I made a chicken casserole, but husband complained that it was too creamy (had sour cream in it). He said he wasn't a fan of the alfredo-type sauce.

Ideas? I'd like something that my 22 month old can eat too. Not a huge fan of casseroles, but would take suggestions anyways.

How about chicken wild rice soup or white chicken chili? I love the website www.allrecipes.com . They have TONS of yummy recipes!

OOPS!! I posted this and then saw that you didn't want soup! I am so sorry!
Have you ever had Thai lettuce wraps? Saute some sliced carrot, onion, water chestnuts and whatever else sounds good to you, add the cooked chicken in and add bottled peanut sauce and serve wrapped in Bibb lettuce. YUM!!!! My husband and I are crazy for them. Usually they are made with sauteed chicken, but leftover chicken will work well too.

Chicken enchiladas
Shred leftover chicken put it in a pot with a small can of enchilada sauce (either green or red) and let it simmer for about 10 min. Heat tortillas in microwave for about 20 seconds to soften. (healthier and less messy that putting them in oil) I put about 6 at a time in the microwave with a wet papertowel on top. Follow the directions on the back of the enchilada can for the rest. I use 2 cans on top of the enchiladas because i like mine saucey!

I like to use some chopped up chicken, put it in a wide pot on the stove top, add a large can Campbells Cream of chicken soup, throw in a thawed bag of mixed vegetables, thin the soup mix with maybe a cup of milk or water. Then I follow the directions on the Bisquik box for dumplings. The dumplings cook in the soupy mixture and come out light and fluffy. You can use the same process but omit the dumplings and throw in a cup of rice instead. Or you could add some noodles. You can put chicken on pasta and cover it with a marinara sauce. Some people use left over chicken / turkey in their chili recipes. Or you can add it to a tossed salad. The left over possibilities are endless.

Chop/grind up leftover chicken (I guess you could use turkey) 2 cups chicken mix with small pack cream cheese, 2 T milk, and some chopped onions. Make squares out of two crescent rolls, place about 2 Tbs mixture in center of each square and pull corners up & twist to seal. Bake at 325 for about 30-40 min and serve topped with gravy. Yum!

Make rice one day, then the next day make chicken fried rice. You can make same day but give the rice a little time to sit and dry out a bit. Add a little oil to a pan, add in the rice to warm up then make a small valley in the rice. Scramble a few spoons of soy sauce with one or 2 eggs, add a little salt and pepper-even garlic- and pour into the valley. Let the egg mixture cook just a bit like making not quite cooked scrambled eggs. Then mix the eggs with the rice, add your chicken and some veggies. My almost 2 year old likes this. The best thing is you can flavor as you like-more or less soy sauce, garlic, salt, egg etc. We also do this with shrimp.

Shred it with a fork and add BBQ sauce. It tastes similar to chopped BBQ except with chicken/turkey

You have some great ideas here, but here are a few more:

1. Warm the chicken with some mild (for your daughter) chunky salsa, serve over brown or long or multi grain rice. Add a side veggie and you are done!

2. Freeze some of the chicken for when you need a quick dinner - that way, you don't get tired of eating chicken/turkey!

3. Stir fry with some veggies (ones that you and your family like). You can add garlic, soy sauce, any flavor really.

My kids' favorite at that age was the homemade chicken nuggets. Cut them in bite size pieces and toss in a bag of Shake and Bake and pop in the oven. Put in spaghetti instead of ground beef. Google "chicken with angel hair pasta" and you will be sure to get all kinds of great recipes with olive oil, veggies, etc.

When I cook chicken by boiling it I place it in water that covers it and cook it until it just about falls off the bone. Then I take the chicken out and de-bone it when it cools a bit, I put the skin and bones back in the water and cook it a while. I use the chicken in various ways and even freeze some of it for later. I take the water with the bones, etc...in it and strain it through cloth into a large pot, like a 2-3 gallon stock pot. I put it in the fridge and then the next day I skim off the fats that have congealed on top. I pour it into gallon zip top freezer bags (you can use a few smaller ones) and freeze them up to a month or so. I use them for making chicken and noodles/turkey and noodles or anytime I want to use broth, even some cassaroles.

My favorite dish I made up for using chicken is what I call: Sour Cream Chicken Enchilades.

I put a lot of cut up cooked chicken in a large bowl (Mine is a "That's a Bowl" by Tupperware) because you'll need lots of mixing room. I add about 1/3 package of my favorite taco seasoning from Wal-Mart. I use from 1/2 to a whole tub of regular sour cream, I just don't like fat free flavor but it's a choice, I add some grated Monterey Jack Cheese, and some chopped green chili's. I mush it up together until it looks like it's creamy enough and I taste it to see if I like the blend. It may look slightly pink if you added very much of the taco seasoning. I am not a huge fan of strong taco flavor so I don't use too much. I take a midium sized spoon, like a regular serving spoon from a flatware set, not a huge spoon, and put a spoonful of the mix on a flour tortilla and roll it up. Place it in a greased pan, I spray mine and use several 9X13 cake pans. Fill the pan with 1 layer. Cover with foil and heat until hot, maybe 20 minutes, it depends on how full the tortilla's are. Take the foil off and put more schredded Monterey jack on top then heat it until melted but not toasted looking.

Serve with any number of sides, everyone likes different sides with Mexican.

My chicken and noodles, creamy version.
Use chicken and broth from freezer, bring to a boil, add Reamus frozen noodles, when they are fully cooked add condensed cream of chicken soup, heat throughout.

I make my own fried rice, it's actually quite easy. You could cute the chicken up and have chicken fried rice, or stir fry chicken. (Fried rice works better with day old rice, so if you make chicken and rice as a side make extra rice!) I'm sure you could find an easy recipe for fried rice online. As for the stir fry, stir fry your veggies with a little oil in some marinade or stir fry sauce then add the chicken just to heat through and flavor with the sauce.

You've gotten some great recipes! I did this the other day. I boiled chicken with a can of diced tomatoes and sliced garlic. When the chicken started pulling away from the bone I removed it and strained out the big chunks of tomato and garlic. Then I boiled a bag of star shaped pasta in the remaining liquid. When the pasta was done I strained that out keeping the liquid again. I poured that liquid back over the chicken. Add side of broccoli and all done! My family loved it! The good part was I didn't have to add anything to the pasta like butter. Just put a shaker of Parmesan on the table. Good luck!

CHICKEN AND DRESSING
1 cooked and chopped chicken
1 8pz package of herb seasoned stuffing mix
1 stick of butter
1 can cream of mushroom soup
1 can cream of chicken soup
2 cups of chicken broth (can use the canned)

In casserole dish
place dressing mix as per box (set aside 1/3)
I sometimes will add celery and onion to dressing mix to add flavor
on top of dressing in dish or pan add chicken, mix 2 cups of broth with the soups and pour over the chicken. Top off with the dressing mix that you set aside.
This can be made the night before and put in the ref.
Bake about 1 hour in 350' oven.

(you may want the cranberry sauce to go with this one.)

KING RANCH CHICKEN
1 cooked and boned (chopped chicken)
1 package of corn tortilla's
1 can cream of mushroom soup
1 can cream of chicken soup
chopped onion to taste ( I use about 1/2 of a large)
1 Large can diced canned tomato's with the juice
shredded cheddar cheese
jalapeno's or green chilies to taste

Place corn tortilla's in the bottom tear to bite size
add boned and chopped chicken
in bowl mix soups together
add that to the top of the chicken
add onion (diced) to the top of the soup
if you use the jalapeno's or green chilies and I think that you should at least try the green chilies if not the jalapeno's
top off with the canned tomato's mix with the (jalapeno or chili) use the juice also.
top off with the cheddar cheese

bake at 350' for about 45 min.

Add to a boxed jambalaya mix with some sausage or frozed salad shrimp.

Or, shred it, then freeze it. 3/4 cups rice, 1 can of cream of chicken soup, 1 and 1/3 cup of water, pepper, onion powder (we use garlic powder instead), add the frozen chicken (broken up so it's not all in one lump; it needs to be frozen, though, or it will overcook), cover and bake for 45 minutes at 375. Uncover it, add cheese, and bake until cheese is melted. (You can also do this with up to four whole thawed chicken breasts.) (My husband doesn't like alfredo sauce, either, and he enjoys this.)

Shred it into a sauce pan or crock pot, then add barbecue sauce and just warm it up. (In a crock pot, this is a great, easy food you can just leave running for potluck gatherings, or for football games when everyone is eating, but not at the same time.) Great for sandwiches, on tortillas, or just in a bowl with a spoon.

uncooked lasagna noodles 1 (10.5 ounce) can condensed cream of chicken soup 1 (10.75 ounce) can condensed cream of mushroom soup 1 cup chopped onion 1/2 cup grated Parmesan cheese 1/2 cup sour cream 1/4 cup mayonnaise 1/2 teaspoon garlic salt 4 cups chopped cooked chicken breast 4 cups shredded Cheddar

Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Add noodles and cook for 8 to 10 minutes or until al dente; drain.
In a medium bowl, combine chicken soup, mushroom soup, onion, Parmesan cheese, sour cream, mayonnaise and garlic salt.
In a 9x13 inch baking dish, layer 1/3 of the noodles, soup mixture, chicken and cheese; repeat 3 times, ending with cheese.
Bake in preheated oven for 1 hour.

and with it came a ton of recipes that can be cooked in the beanpot - I would think you can cook the reipes in other pots as well but you might have to adjust the cooking time.
there were a lot of chicken recipes - so I thought you might be interested in them.
Another thought might be slow cooker or things like pot pies or baked chicken. My daughter likes chicken casaer salads or we take the left over larger pieces and bread them and fry them like fried tenders or nuggets.

I know you're not much on casseroles but Chicken spaghetti is AWESOME. This is how we make it: Bake or broil chicken (or boiled can wk too) cut ckn up in bite size pieces; 1 med. chopped onion, 1 or 2 (I like more) bell pepper(s), colby-monterry jack cheese (8 or 16oz whichever you prefer), 8oz pk of spaghetti noodles, 1 reg. can of cream of mushroom soup, 1/8 tsp black pepper, 1/3 cup of milk. Mix all ingredients plus only HALF the bag of cheese together w/cooked pasta (you should break the pasta in 'thirds' or 'fourths' for cooking to make it easier to serve & eat); spread in oblong shaped baking pan or dish (b/c it makes a lot); cover w/remaining amount of cheese; bake at 350 for approx 25-35 min until cheese is cooked & casserole doesn't look really 'wet' inside. Serve & enjoy! We've also been sprinkling parmesean cheese on top as well but too much of it makes it taste somewhat 'chalky' to me so if you decide to use that, I'd do it sparingly. We also like a lot more cheese mixed in the casserole so what we do sometimes is buy two packs of cheese & use one for the mix & 3/4 of the other for the top. I think it tastes better w/more cheese but that's up to you. Have you also considered Chicken Helper boxed meals? They're really not bad & they have a good selection. They now also have Asian Helper which is really good too but I like that better w/beef but is okay w/chkn too. Baked 'fried' chicken is also great, another fave of ours. This is how we make that: put enough cooking oil in baking dish/pan to cover the bottom plus abt an inch up from the bottom. Coat one side of chickn w/oil, cover or hand coat in Bisquick, spice w/your choice of spices (ours is Sage, Nature's Seasonings, Italian seasoning, Thyme, Parsley flakes), turn over repeat on other side. Bake at 350 for 30 min. turn cken over & cook other side for 30 min or til done (will at least be 45-50 min total). SOOO good! Serve w/Rice A Roni, plain rice or choice of veggies, basically anything will go w/baked fried ckn. Betty Crocker website also has great chicken recipes as well as other recipe websites too. Hope this helps & enjoy if you decide to try the ckn spaghetti or baked 'fried' chicken.

If you're tired of chicken why don't you cook a roast instead and do beef.

Here's a few of my recipes for cooked chicken:

Bowties with Chicken

1 TBS oil
1 1/2 lbs boneless chicken cut into bite sized pieces
2 green peppers called Cubanelles or 1 small regular green pepper in 1" pieces
2 tsp minced garlic
1 tsp Italian seasoning or Oregano
1 tsp salt
1/4 tsp pepper
1 qt bottled tomatoes or 8-10 fresh tomatoes
1 can olives sliced
22 oz bowtie pasta (1 1/2 package) or spaghetti
Parmesan Cheese (optional)

In a skillet cook the chicken in oil. Remove to a plate. Cook the vegetables, Italian seasoning, salt and pepper about 5 minutes. Add tomatoes and olives. Warm. Meanwhile cook pasta. Drain and stir into sauce mixture. Pasta will absorb some liquid and get softer.

Chicken Enchiladas
Chicken
Celery diced
Onion diced
Cheese shredded
1 pkg 20 flour tortillas
1 can Cream of Chicken soup whisked with 1 can milk until smooth
Sour cream (optional)

Boil the chicken. Saute the onion and celery together in a little oil. Shred the chicken and add to the vegetables. Microwave the tortillas in the package for 1 minute to soften. Take one tortilla and put a scoop of chicken and a scoop of cheese inside. Roll up and place in greased 9x13 glass pan. (You can use a little sauce if you don't want to use Crisco) Pour sauce over top. Bake 30 minutes at 350 to melt cheese and allow the sauce to soak in. Can serve with sour cream.

Hawaiian Haystacks
Take cooked Rice and soup and cover it with the following toppings
Cream of Mushroom soup or white sauce for a gravy

Toppings:
Green pepper, diced
Chicken breast, diced
onion, diced
tomato, diced
chow mein noodles (dried like crackers - in the asian section)
pineapple tidbits
celery, diced
peas, frozen
almonds, slivered
Soy sauce

Guacamole Chicken
1 Chicken boiled (or leftover chicken)
Gravy or a white sauce made with chicken broth
3 C rice cooked
1 onion, chopped
1 garlic clove

Guacamole:
5 avocados
2 TBS onion, chopped
1 garlic clove
2 TBS tomato, chopped
hot sauce to taste
½ tsp salt

Cook chicken and remove bones. Make a white sauce using chicken broth. Cook rice in broth with onion, garlic and parsley. Make guacamole by mashing avocados with chopped onion, garlic, chopped tomatoes and salt. If making ahead of time, seal with a light coating of miracle whip and then mix it in just before serving. Serve rice with chicken and gravy. Spoon a generous portion of guacamole on top.

Chicken Curry
2 Chicken breasts cubed
1 onion diced
1 garlic clove
Cook in a frying pan. Then add to sauce, serve over rice

Curry Sauce:
½ C margarine
½ C flour
4 C milk
2 tsp curry
1/8 tsp ginger
1/8 tsp cumin
1 tsp salt

For sauce: melt butter, add flour. Whisk in milk, cook over med heat until thick. season with the spices.

optional toppings: peanuts, green onion, mandarin oranges, coconut, chopped cilantro
The toppings really make the meal stand out!

I use left over chicken in sandwiches, soups, a lot of the stuff you mentioned. You can also use it in stir fry with rice or noodles, chicken with pasta and veggies.

Chicken/Turkey pot pie. Simple and quick my family loves it.
Left over chicken (or turkey) about 2 cups
1 can of Campbell's Cream of Chicken Soup
1 can of mixed vegetables ( I add extra peas, corn and mixed vegetables)
2 frozen or ready to bake pie crust second one is for the top put all ingredients in the crust put top crust on seal around the edges put slits in the crust then bake for about an hour or according to the crust package instructions and soup is coming out the top. Enjoy! Sometimes I even take the left over stuffing or potatoes whatever we had with the meal and add that to the bottom of the pie it is really good..
