What about Bridge to Terabithia or Spiderwick Chronicles. Night at the Museum?? Polar Express (though I don't want to see any more snow for a looooong time).
My kids love Jumanji and Zathura, and I really like them too--action and adventure but not much real violence.
Any other suggestions for them, ages 3-7? My 3 year old likes whatever his big brothers like and takes his cues from them, so he's really up for whatever they like.

Spy Kids is fun. We love The Incredibles. Night at the Museum is great.
Spy Kids (only the first one, the other ones are awful) Honey I Shrunk the Kids, Night at the Museum, Stuart Little and Babe are also really good (and more action packed than you might think!)
The Roald Dahl movies (and books) were also big hits around here, The Witches, Matilda, Fantastic Mr. Fox, James & the Giant Peach and of course Charlie and the Chocolate Factory (we prefer the original.)
The Goonies and Escape to Witch Mountain are two that come to mind.

I didn't put cartoons on here as there are loads of them to choose from but all of the above are wonderful movies that your kids will love. they are not full of smart alec, wise cracking rude kids which a lot of the newer movies are. we have started to rewatch these recently as we just get sick of all the rudeness found in a lot of todays movies. all of the above are original movies not the newer updates. my grandkids are 13, 11 and 9 and we have been watching these types with them forever. my granddaughter is 11 her favorites are anything with haley mills. my grandsons love anything with don knotts lol.

Find some of the old classic Disney movies. My kids loved the Love Bug movies. After seeing the previews they want to see The Apple Dumpling Gang and Escape to Witch Mountain. Honey I Shrunk the Kids would be another good one.
The Chronicles of Narnia - The Lion, The Witch and The Wardrobe is awesome!
The Neverending Story has a lot of action and adventure plus it's an awesome movie. My 4 yr old likes it too. My 4 yr old has been watching Willy Wonka a lot lately too.

My kids just watched Sword and the Stone, and liked it.
I'm not sure if Ghostbusters is to scary for your 3 year old, but I think your 7 year old could handle it (the TV version, I can't recall if the real one has too much language). I just read common sense and it says there is sexual content (I have not seen it in years).

We just watched Indiana Jones and the Raiders of the Lost Ark this past weekend, and my kids liked that (although they are a little bit older than yours, 8 and 11). I think several of the Indiana Jones movies would be fine for young kids; they're all pretty wholesome adventure movies.
We also like the National Treasure movies with Nicolas Cage. My kids love the newer Alice in Wonderland movie (the one with Johnny Depp). More action and adventure than you'd expect there. ;)
Zoom with Tim Allen (2006) is just really cute, a tiny bit of crude humor (like booger jokes) but otherwise good
