Seeking Successful Gluten-Free Cake Recipes

I looking for a tried and true recipe for a gluten-free birthday cake. I am familiar with resources to find GF recipes, but I'm hoping someone out there has "that gem" that they always use. My daughter's birthday is this week so I don't have a lot of time to sort through which ones may or may not work from the GF recipe sites! Thanks for your help!

E., are you familiar with the Foodlab Yahoo Group? Lot's of recipe sharing (and a recipe database) for families with food allergies/insensitivities. I've noticed a lot of GF recipes.

I made this for my daughter's 1st bday in April--I'm gluten free, not her, but I wanted to eat her cake with her! everyone ate it. Very easy

I made a simple frosting of confectioner's sugar, butter, and a bit of cream. Then added a touch of strawberry for it to be pink!

I also use Pamela's box mixes. They taste great and are super moist. You can get them at Woodman's and Fruitful Yield, and maybe Whole Foods. The chocolate brownie mix is to die for, and you might be able to make that into a cake. Good luck!

I'm sure there are some good recipes out there, but I have found the box mix from Cherrybrook Kitchen to be pretty good. They are sold at Whole Foods and some major grocery stores in the natural or GF section. They are about $5 a box.

Hi E.,
I use Pamela's or the Namaste brand. Their cakes, cookies and brownies bake up awesome. I'm not a fan of Arrowhead Mills and even the Whole Food Brand (365) can be kinda dry.

Actually Betty Crocker now makes one and it is very good. It is about $4 a box but that is still probably cheaper than buying all the individual ingredients. Hope this helps. Happy B-Day to your little one!

I have tried a box mix that, yes, is gluten free. My Dad is gluten intolerent, and for his birthday my family had it. Everyone thought it tasted pretty good. I bought it at Wal-mart in the isle with the gluten free flours and such, I think the brand is redmill or something close to that. I also just saw at Jewel box mixes for gluten free made by one of the big companies(betty crocker, duncan hines), but I have not baked any of those.Good luck, A.

Whole Foods sells the NAMASTE brand already mixed cake you just add the wet ingredients

E., you may already be aware of this but Betty Crocker has come out with gluten free cake mixes in chocolate and vanilla flavors. They can be bought at Jewel for about $4. I've have one but have not made it yet so can't attest to taste - sorry. Also a fourless chocolate cake can be a good tasting alternative. Also, Deerfield bakery has GF birthday cakes, if I recall correctly. A bit pricey but I hear all their GF pastries are very good.

My 2 year old daughter has recently been diagnosed with Celiacs disease so I'm always on the look out for good easy GF recipes but don't have many myself yet. Good Luck...

If you add some sour cream to the box mixes, it makes the cake a lot moister. Also, let the batter sit in the pan for 20 min. or so before you put it in the oven. It makes the rice flours turn out with a more wheat flour - like texture. For my daughter's birthday I did this with the 365 brand at whole foods and no one knew it was GF.

given your time restraints, maybe you want to go with a GF mix? I know Whole Foods has their own label of GF cake mix. Pamela's, Cherrybrook Farms also have their own brands of GF cake mix and frosting.

As loath as I am to promote businesses on this site, there is a Gluten Free Store in Northbrook that carries delicious-looking frozen premade cakes. VERY pricey, but super-easy. I think their website is glutenfreestoreusa dot com.

I do not have a recipe, but Betty Crocker makes a gluten free chocolate and vanilla cake and I made the chocolate one last night and it was great!! You can get it at most supermarkets

I am not sure where you live but Deerfield's bakery in Schaumburg has the best gluten free bake goods I have found. You can go on their web-site and see what they have. The brownies are to die for. I have not tried making a cake yet but Gluten Free Baking Classics by Annalise Roberts is a must have cookbook. Everything we have tried has been great. We use the Authentic Foods (www.authenticfoods.com) flour mixes for all our GF baking needs. I found the Whole Foods in Glenview has more GF foods then anywhere else. I try not to buy too much of it because of the cost though.
I was diagnosed with Celiac in April, misdiagnosed 20 years ago with IBS. Best of Luck!
