Egg Free Cakes for Birthday?

My son shows symptoms of having an egg allergy, and his first birthday is in a week! We were planning on making him a cake, but now I don't know if I should skip cake all together or if there's a good white cake recipe that doesn't involve egg. Any suggestions?

So What Happened?

Hi all! Thank you so much for all the responses. This was very helpful! We made a "trial run" cake last week using white cake and sprite, and it was great. The only complaint anyone had was that it was a little dry, so next time we're gonna add a little applesauce to make it more moist. I'd highly recommend that if you're trying to avoid eggs - you can't even tell it's different.

I'm sure as we go along this allergy journey I'll have more questions. Thanks again for all your help!

There is a cookbook called "Vegan Cupcakes Take Over the World." And once you've had one, you realize that the title may be actually correct.

So, here is their chocolate cupcake recipe. These are so moist and delicious and fast to make, I never make any other kind anymore.

I'm vegan but not really into cooking. For my 30th birthday I hired a lady who made my vegan cupcakes and delivered them to my home. For smaller functions I use a mix and vegan icing. You can google vegan icing for how to make it or use Cherrybrook Kitchen brand that Target carries.

The egg replacer I use is Ener-g egg replacer. Kroger carries it in the organic section over by the produce. This section also has mixes.

Also, Wholefoods makes a wonderful vegan chocolate raspberry cake.

There are some GREAT cake mixes at Whole Foods and Central Market. I don't know the names of them off the top of my head...but look there.

You could also try a 'wacky cake', they usually are chocolate, but if you replace the cocoa powder with the same amount of corn starch and add a teaspoon more of vanilla, it is a nice fluffy vanilla cake. You can also use another flavor extract, like lemon or almond depending on what you want (and remove the coffee). Here is the original chocolate recipe that makes a 2 layer 9 inch cake, a 9x13 sheet cake, or 24 cupcakes. Good Luck!

3 cups unbleached all-purpose flour
2 cups sugar
1/3 cup unsweetened cocoa
2 tsp baking soda
1 tsp salt
2 tsp vanilla extract
1 1/2 tbsp vinegar
1/2 cup vegetable oil
2 cups cold water
1 tbsp coffee powder

Preheat oven to 350.

In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Dissolve the coffee powder in the cold water (or just use cold coffee for a slightly more mocha taste) and pour the water over the mixture. Stir until smooth.
Divide evenly into prepared pans. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

I have done the cake mix + diet coke (or sprite) and it tastes just fine.

HungryGirl often advocates using Pumpkin in mixes...especially brownies, but I can't remember about cake mixes. I haven't tried it, but I want to - I'm sure it would be great. http://www.hungry-girl.com/

The "Fit and Delicious" restaurant is now "Laura's Bistro" is now on 75 around Parker (or Park) on the west side along the service road (next to international house of pancakes). I know she can make egg free cakes. I've had her gluten free cakes and they are very good. www.delicious-n-fit.com

I coordinate a food allergy support group in Tyler for families that have children with food allergies. Let me know if I can help you in any way. Also on the blog you can find a frosting recipe when you scroll down the posts. You can substitute milk for the recipes calling for Rice Milk or Soy milk. Let me know how it turns out. Let me know if you need help finding the egg replacer. I have a couple other substitutions that can be used as well. Good luck

My son has multiple food allergies. We use EnerG Egg Replacer. A dietitian sent me the following substitutes. I haven't tried them because my son is allergic to most of the other ingredients, but maybe they would work for you.

SUBSTITUES FOR EGGS IN A RECIPE
•1 tsp of baking powder + 1 Tbsp of water + 1 Tbsp of vinegar (add vinegar separately at end)
•1 tsp baking soda +1 Tbsp oil +2 Tbsp baking powder + 1 Tbsp vinegar (add vinegar separately at end)
•1 tsp of yeast dissolved in ¼ cup of warm water
•1 ½ Tbsp of water + 1 ½ Tbsp of oil +1 tsp of baking powder
•1 Tbsp of apricot puree (binder)
•1 packet of plain gelatin mixed with 1 cup boiling water (binder). Substitute 3 Tbsp of this liquid for each egg. Refrigerate remainder, for 1 week, microwave to liquefy.

This sounds nutso; but it works, and it is so moist and delicious!!!

1 box cake mix
1 can diet Coke
Mix together (with nothing else) and bake at temperature and length on box.

Done.

Go to the Bittersweet Blog! She has the most amazing, easy, delicious, quick, amazing--did I say that already?--delicious recipes!! She's Vegan, so no animal products whatsoever--and it's mostly all desserts!! Yeah!! and I'm not even vegan!

Check it out right now! I can personally highly recommend the vegan chocolate cake (cupcakes, but I make it as a cake) my sons or I make it all the time--it's a piece of...Cake!

Check out the mixes by Cherrybrook Kitchens, sold in the health food aisle at Kroger and also Whole Foods. No egg is required. Or, if you are making from scratch, get Ener-G egg replacer. It is not an egg substitute; it is egg replacer. It can also be found at WFM or the health food section of Kroger.

There is a brand of cake mixes and frostings called Cherrybrook Kitchen that is dairy and egg free. They have it at Target. It is very good, my neice loves it.

My daughter has a peanut & tree nut allergy, so we've been involved with a Dallas-area food allergy group. I learned from one of the other parents that you can make cakes with clear soda, like Sprite or 7-up. Check the box to make sure there are no egg products in the mix, and then make it according to instructions but use a can of clear soda in place of the egg(s). I ran out of eggs and used a can of soda for a cake a few months ago just to try it out. It came out pretty good. Not as fluffy as if you use an egg, but not bad at all.

Hi, J.,
My husband has developed a sensitivity to eggs over the last couple of years. Through trial and error we have found that he can eat the organic brown eggs. They are free of antibiotics and pesticides, which may be the problem. Many people, especially children, are very sensitive to chemicals in food and in our environment.
Anyway, just a suggestion.

My nephew had severe allergies, when he was younger. For his birthday, my sister-in-law made a "cake" out of rice kripie treat, in the shape of a train. She made batches and formed a train engine and a few cars. She decorated it with food coloring and gum drops. It was really cute!

Betty Crocker white cake mix along with EnerG Egg Replacer (in place of the eggs) is not bat at all. Home made recipes are usually the best option when using the egg replacer, but I've found the Betty Crocker mix to be the next best thing.

I've also heard you can substitute a tablespoon of soy powder for an egg when baking. Good luck with the egg-free cake! It looks like you've gotten some great suggestions here. :)

Delicious 'n Fit is a bakery in Plano that deals with all kinds of allergies - gluten-free, etc... I don't know if they do egg-free specifically, but they might be able to help you out. HTH, good luck!

I think there were some chemical-free (gluten, egg, etc.) free ones at Kroger when we went. They were in the Organic section of the store.

In the recipes I have been reading they use Banana to replace eggs, and unsweetened applesauce to replace butter. I would suggest that you experiment with it and see what happens.

You could simplify and just melt ice cream and then spread it in a casserole and refreeze. Then decorate. (I don't think ice cream has egg, does it?)

There may not be time for this but Tupperware has a dish that you can use to make cake with simply cake mix and a soda. NO JOKE! I bought it just for that reason. =)
