I'm looking for a recipe to make baked apples like the ones they have at Boston Market and Golden Corral Buffet (almost like apple compote, but it's a side dish). The only recipes I'm finding are using whole apples or something like a cobbler and that's not what I want.

I do this and mash it up for applesauce or keep them whole for a dessert. Just slice apples, add water to cover bottom of pan, add sugar and cinnamon (you can always add more later after tasting it) and let it boil/simmer on the stove for about 15 min. depending on the number of apples. When they're as soft as you want them, either mash or put them in a dish!

I use my crockpot to bake apples. Slice/peel your apples, 1/2 cup water, 1 TB brown sugar, 1 tsp cinnamon, 2 tsp vanilla. Let them cook in the crockpot on high for 4 hours. They are so yummy!!

Peel and chop 4 large apples. Combine chopped apples with 3 tablespoons butter, 4 tablespoons brown sugar, 1 teaspoon cinnamon, and 1/8 teaspoon nutmeg in a saucepan and cook over medium heat for about 8 minutes or until apples are crisp-tender.

I'm not sure if this recipe is what you're looking for, but its a hit in our house/family: http://www.marthastewart.com/recipe/baked-apples-with-mex....

When I want to make these at home and don't have the Mexican chocolate on hand, I just use some mini semi-sweet chips. Good luck!
