Hey!! What are you guys making for a New Year's Eve party?? I need some suggestions. We are going to be mostly just snacking.

I like the following dip and it is super easy:
1 lb ground sausage cooked
1 can Rotel
2 blocks of cream cheese melted
mix together and keep warm.
serve with chips

Both of these recipes have been BIG hits at my parties!
Unfortunately I do not have the measurements to the stuffed mushrooms. I just add ingrediants 'to taste' and they come out perfect everytime!

Beef & Spinach Pinwheels
6 oz softened cream cheese
2 TBSP horseradish (in a jar)
1/2 tsp pepper
2 TBSP milk
2 large (14 inch)tortillas
2/3 lb thinly sliced roast beef
2 medium tomatoes, very thinly sliced
12-16 fresh spinach leaves

In a small bowl, beat cream cheese until light and fluffy. Stir in horseradish, pepper and milk so that cream cheese mixture spreads easily.
Lightly moisten both sides of tortilla with water and lay flat on wax paper. Spread cream cheese mixture on tortilla. Evenly layer the beef, tomatoes and spinach on top. Roll up. Wrap in wax paper and then in plastic wrap (to help hold it together.
Refrigerate for up to 4 hours. To serve, cut roll into 1 inch slices. Lay flat on a serving tray and serve!.

Stuffed Mushrooms
12 large fresh mushrooms
Olive oil
2 cloves fresh garlic (crushed or pressed)
Onion powder
breadcrumbs
6 strips of cooked bacon crumbled
Dried basil flakes
Parmesan cheese

Rinse mushrooms. Remove stalks from mushroom caps. Chop stalks finely. Heat 3 tablespoons of olive oil in pan. Add garlic, chopped mushroom stalks and onion powder. Gently sautee for 5 minutes. Add breadcrumbs, parmesan cheese, bacon, dried basil flakes and pepper to taste.
Arrange mushroom caps face up in a shallow & lighly oiled pan. Lightly brush outside of mushroom caps with olive oil.
Fill each mushroom cap with stuffing.
Preheat oven to 375 and bake for about 20 minutes.
(Time is approximate - keep oven light on and just watch the mushrooms)
I usually transfer the mushrooms to layered papertowels, after baking, to absorb some of the oil, and then move them onto a serving tray.
These are a HUGE hit and very easy to make. I've been asked for the recipe so many times but I don't have the measurements so its hard to give the receipe out.

Make this dip. It's awesome. It'll go with chips or veggies.

16 oz sour cream
1 cup shredded mild cheddar cheese
1 packet of Ranch mix
3 oz of bacon bits

Just mix. It's a hit everywhere I go.

I know this is a little late, but it is by far our whole family's favorite. We make it every year at Christmas! (you can save this for next year, since it's late)

Apache Bread

1 pkg round Hawaiian bread or any round bread
16 oz. sharp Cheddar Cheese, grated
1 8 oz pkg cream cheese, softened
1 8 oz carton sour cream
1/2 cup minced green onions
1 tsp. Worcestershire sauce
2 4 1/2 oz. cans green chilies, chopped
1 cup finely chopped ham (can use processed or baked ham)

Preheat oven to 350. Cut (slice) off the top of the bread, reserving top and scoop out the inside. (just use your hands and get big bite size pieces out until it's an empty bowl). Combine remaining ingredients and mix well. This will be a very stiff mixture. Fill the bread with the cheese mixture, replace the top, and place on a cookie sheet. Bake in a 350 oven for 1 hour and 10 minutes. Serve with tortilla chips (or any kind of chip or cracker) and/or use the torn bread you have. Stir to make sure it's good and hot through and through before serving! YUM!!

Great Meatballs
Use:
Sqeezable Bottle of Grape Jelly
Bottle of Liquid Smoke
Bottle of Chili Sauce
Heat Grape Jelly & Chili Sauce and mix well, add Liquid Smoke
You can purchase great frozen meatballs and follow directions on the package. Add the above mixture and enjoy!

What's simple and delicious is bacon-wrapped water chestnuts (I know it sounds odd, but YUMM!!)

Bacon-Wrapped Water Chestnuts
approx. 2-3 cans whole water chestnuts
approx. 2-3 pkgs uncooked thick sliced bacon
toothpicks
teriyaki glaze (the very thick kind)
teriyaki marinade (regular teriyaki sauce)

cut bacon strips in half; wrap each whole water chestnut and secure with a toothpick; place into airtight container. After all water chestnuts are wrapped with bacon and in container, pour 1/2 the bottle of teriyaki glaze over them all and pour a bit of the teriyaki sauce over them as well; shake to coat all; store in fridge to marinade. When ready to cook, preheat oven to about 250-300 degrees; place bacon wrapped water chestnuts into lined (or sprayed with light oil) 9x12 glass cake pan(single layer); pour over a bit more of the glaze and sauce; after about 30 mins, remove from oven and turn each one over (be sure to baste them in the liquid so they won't get dry); bake for about 20-30 minutes more, or until bacon is done. Serve immediately and watch them disappear!

I made a dip for a Christmas party last weekend that was a huge hit. We sereved it with crackers but I think it would be better with Pita Chips.

2 blocks cream cheese
1 8oz pkg of Mozz Cheese
1 package of pepperoni (the larger one)
1 bottle of pizza sauce or 16 ozs of Spagh sauce

Chop up the cream cheese so it will melt easier and place in your bowl or crock pot. Chop the pepperoni and mix it with the sauce and Mozz cheese. Pour over the cream cheese. If you use the microwave to warm it, I would do it a little at a time so that you don't scorch the cheeses. In a slow cooker it takes about an hour and a half to melt it all.

Once all of the cheese is melted, just mix it up and serve it warm! Super yummmm!

This has always been a great hit and so easy!
1 package of cocktail weiners
l lb bacon - strips cut into 1/3s
l box brown sugar

Wrap each weiner in 1/3 strip of bacon - secure with toothpick
Place weiners in baking dish, pour box of brown sugar over weiners and let set overnight. When you get ready to cook, bake at 350 degrees for 1 hour.

I have frozen these and then the night/day before poured the sugar on them.

Firecracker Crackers
2/3 cup Canola Oil
2 T Red Pepper crushed (flakes)
1/2 t ground red pepper
1 package Valley Ranch Salad Dressing
l bag Nabisco Soup and Oyster crackers
Pour all of the above except the crackers into a zip lock gallon bag and mix well - pour in crackers and mix well - by turning bag over and over. Then set on cabinet for about 15 minutes, shake and turn over and let set for another 15 minutes, do this about 3 to 4 more times. Pour on paper towel for a few minutes to absorb any oil. Then serve. They have a tick to them after a few seconds.

Another quick and easy one:
Block of cream cheese
l jar of Archer Farm - red pepper and onion relish (from Target)
Pour relish over cream cheese and serve with crackers.

we're having an appetizer party. everyone is bringing appetizers to share. A really good and easy one is the buffalo chicken dip:
1 to 2 blocks of cream cheese
rotisserie chicken from the store
ranch dressing
Franks buffalo sauce
cheddar cheese

spread the cream cheese -i use about 1 and 1/2 blocks of cream cheese- in a dish (8x10 or large tart or pie dish)
cut up about 1 breast of the rotisserie chicken
drizzle hidden valley ranch on top
pour one 5 oz bottle of Franks on top
sprinkle with cheddar cheese
bake at 350 about 30 min or until bubbling.

serve with Fritos Scoops and/or celery sticks. it is really easy and yummy. it is spicy but you can adjust the hot sauce.

Ok - You can NEVER go wrong with deviled eggs...YUM!! I got a couple of recipes from Kraftfoods.com (under Entertaining). They have an interesting Spicy Nut Mix recipe that adults would like - might be a choking hazard for little toddlers, but not older kids. A pot of chili might help the appetizers go a little further too. As for easy - pigs in a blanket are another quick snack! (I get a 4 pack of the biscuits w/10 each and a pack of the all-beef little smokies and just roll up one sausage per biscuit = super easy & affordable to make 40 of them!) Good luck!

Here are a couple of good recipes I have made in the past. Hope you like...

Cheese spread with Blue Cheese Recipe
• 2 packages (8 ounces each) cream cheese, room temperature
• 4 to 6 ounces blue cheese, crumbled
• 2 tablespoons finely grated onion
• 1 tablespoon Worcestershire sauce
• dash or two Tabasco sauce
• chopped parsley for garnish
Preparation:
Mash cream cheese with a fork; add crumbled blue cheese. Add grated onion, Worcestershire sauce, and Tabasco; blend well. Pile in a serving dish; sprinkle with chopped parsley. Makes about 2 cups. Serve with crackers or triangle Triscuts.

Corn Dip

2 cans Shoepeg corn (drained)
1/4 cup chopped onions
2 cups grated cheese (Jack/Colby mix)
1 cup sour cream
2/3 cups mayonnaise
10-12 chopped, de-seeded jalapenos (I usually use at least 14 to make it spicy and include a few seeds)

Serve with Fritos

Cranberry Salsa

1 can whole berry cranberry sauce
1/2 red onion, finely chopped
1 med jalapeno, finely chopped
1 bunch cilantro, finely chopped
1/2 tsp cumin
1/2 tsp salt
1/2 tsp pepper
3 tablespoons lime juice

Mix all ingredients together. Cover and refrigerate for several hours. I always double this recipe. Be careful with the red onion, if it is too hot, don’t use as much, otherwise it will overpower the salsa.

Serve with bagel chips or tortilla strips

Meatballs

1 large bag of frozen meatballs from Sam’s
2 16oz cans jellied cranberry sauce
6 Tablespoons cider vinegar
4 Tablespoons brown sugar
2 Tablespoon prepared mustard

cook and stir over medium heat until sauce is melted
add meatballs and simmer uncovered 10-15 min

Or slow method is mix all of the sauce ingredients in a bowl and set aside for a minute. Put the large bag of frozen meatballs in large crockpot. Pour sauce ingredients over the frozen meatballs and cook for about 4-6 hours or until the meatballs are heated all the way through. You can serve directly out of the crockpot too if needed.

Bacon Wrapped Jalapeno Poppers


Ingredients
25 fresh jalapeno peppers
14-16 ounces cream cheese
2 cups shredded cheddar cheese
2 (16 ounce) packages bacon

Cut stems off of peppers and cut them all in half longways.
Remove seeds from peppers.
Fill each pepper with cream cheese and sprinkle cheddar cheese on top.
Wrap 1/2 slice of bacon around each pepper half.
Place on baking sheets and place in 450 degree oven for 10 to 15 minutes or until bacon is fully cooked.
Remove and serve when cooled.

Every year for New Years Eve we have a big fondue dinner. It is quite a lot of prep but so worth it!! It is so much fun, it has become our family's tradition. We do 3 kinds of meat and various veggies. You do oil in the fondue pot and you can make lots of different kinds of dipping sauces. It really is a lot of fun! And it covers dinner and entertainment.

I know you said mainly snacks, but thought I would mention this anyway. Who knows, you may decide to try it next year!

A shrimp cocktail is easy because all you do is buy it and thaw it ... and it's protein, so it will fill folks up.

Or pinwheels. You spread softened cream cheese on flour tortillas, then sprinkle generously with chopped olives (which you can buy already chopped) and green onion. Roll the tortilla tightly and let it sit in the fridge all day. Pull it out just before time to serve and cut into 1/2" slices, then serve it with salsa.

We are doing chips/queso/salsa, little smokies, a veggie tray, and maybe some swedish meatballs. We are having a poker party with a bunch of people so I didn't want to have to make too much and spend my whole day cooking. Just quick and easy stuff that will fill everyone up while they are drinking.

The dip Holly mentioned is a good choice. Shrimp cocktail is always good,, velveeta w/rotel (queso) & chips is quick and easy, as well as little smokies in bbq sauce or served rolled in crescent rolls and baked. I have done alot of finger foods at many parties and they all go over very well.

Super easy and everyone loves it. 2 packs little smokie sausages, one jar of chili sauce and one jar of grape jelly. Put it all in a saucepan or crockpot and cook on low til all the jelly melts. Its sounds a little weird- but I have these at every new years party and they are the first thing to go! Have fun
