Layered Mexican dip: layer 1 brick softened cream cheese, 1 can refried beans, 1 jar salsa, and 8 oz. shredded cheddar in ovenproof shallow serving dish - bake at 350 for about 20 mins or until cheese is melted - serve with tortilla chips. Best dip ever - always a big hit.

Veggie Pizza!
Just roll out two packages of crescent roll dough on a cookie sheet and bake according to directions on the package. Let the crust cool while you mix the "sauce" - 2 bricks of cream cheese, softened, 1 cup of mayo, and 1 package of dry ranch dressing mix - combine and mix thoroughly, then spread over the cooled crust, all the way to the edges. Sprinkle with some finely shredded sharp cheddar cheese, a little or a lot, whatever your preference is. Then top with whatever veggies you like best chopped into very tiny pieces. I like to make sure lots of colors are represented so it looks pretty. My favorites to use are broccoli, cauliflower, carrots, grape tomatoes, and cucumbers. Sometimes I also sprinkle some real bacon bits on the top as well.

Garlic Ciabata Bites

These can be served warm or room temp...so you can make them ahead of time or it takes a whole 2 mins to warm them in the broiler when you get where you are going.

Sliced Garlic Ciabatta Bread (my grocery store sells it in the bakery dept.)
Pesto sauce
a slice of mozzarella cheese
a sliced tomato on top
sprinkle with sea salt.

*I lay them all out on a sheet pan, drizzle with EVOO and then lightly toast, then flip them over add the stuff to the non-brown side and then return them to the broiler for 2 mins til everything melts!

Easy and delicious! One side is crisp and the other is chewy and gooey!

12 inch tortillas
16 oz soften cream cheese - light or regular
16 oz salsa

Mix together the soften cream cheese and salsa. Spread on tortillas leave about an inch on each side of the tortilla, but DO spread top to bottom. Roll up and refrigerate for 4 hours or overnight. Cut in 1 inch spirals and serve. YUM!!

The great thing is, you can make 2 batches with different salsa - like maybe a mango salsa for some sweet and spicy.

Pesto
Fresh basil, finely chopped/minced - about 1 cup packed
2 garlic cloves, minced or pressed
3 toasted walnut halves, crushed to a rough powder.
salt and pepper -- don't skimp -- people tend to skimp on seasoning when cooking from scratch
1/2 - 3/4 cup e.v. olive oil (cheap olive oil is fine)
Mix it together with a fork.
Add a half-cup of grated parmesan and mix.

Serve with fresh loaf of french bread
(also goes great on pasta, pizza, tomatoes, chicken, pork chops, etc.)

A wonderful DIP: canned salmon, sliced celery (little pieces) and mayonaise and of course a couple of spices to taste. Salt, pepper, onion powder (and I add garlic powder to everything) try to the side a tiny pinch of dill on a little spoonful (not everyone likes that). Actually not everyone likes salmon but I love it!

There's also SALMON PIE.You need canned salmon (about two to three the size of the smaller tuna cans) and milk, onions, crackers (saltine) and celery. Chop an onion and some celery and sautee it in butter for awhile til it looks pretty soft. Mix with salmon, about a half cup of milk two beaten eggs and a sleeve of crumbled saltine cracker crumbs (or a baggie or whatever you want to call it). Mix it all together, squeeze lemons into it and put in a (I prefer a glass pie plate but you can use anything) and cook for about twenty minutes. More lemon, more milk, more butter, more tender. OH I am going to go shopping, this is making me hungry. Sprinkle a few crumbs on the top for about the last five minutes. Voila!

Cheese dip in a crock pot. Big velveeta block, 4 cans rotel, a can of cream of celery.
I usually just buy couple bags of the big, cheap tortilla chips to go with it.

Always a hit.

One of my favorites is so easy and always gets eaten up by the end of the party. Take one cream cheese brick and put on a pretty plate or chip tray (if the center compartment is big enough to hold the cream cheese brick). Pour salsa over the brick and sprinkle with shredded cheese. I surround it with tortilla chips. Voila! It literally takes seconds to prepare and it is SO good!

Any kind of gooey hot dip, little smokies wrapped in crescent dough (those disapeared in like 3 minutes at my last party), and my mom makes these little baked cups where you take plane sliced white bread and push them into a baking cup then fill it with herb cream cheese and sauteed mushrooms. Bake at 375 and brush with butter until crisp. Also, you can bake brie. My friend pours maple syrup on it and tops with toasted nuts. Bake in 375 oven for 15 minutes. You can also make it at home and bring it since it stays warm. You can do that with jam and nuts too and sturdy crackers.

I found this recipe for "Beer Cheese Dip" in the Washington Post. I serve it with sliced pretzel rolls. I have had a lot of requests for the recipe. Just make it a head of time so it has time to firm up in the fridge. Here's the link:

I like to get a block of cream cheese and spread it thinly on a microwaveable dish. Pour a can of chili no beans on it, then sprinkle with cheddar cheese. Microwave for about 2 minutes until cheese is melted. Serve with tortilla chips.
