We always make chicken salad with it. Use some low fat mayo, celery, celery salt and pepper and put on whole grain bread. Yum! You've got me hungry now! Lol.
So last night I roasted 2 chickens since one is rarely enough and everyone wants their own drumstick & wing. My husabnd got home late, and the kids ate very light last night. I have ALOT of left over cooked chicken. The bones and stuff are already in the crockpot for soup for another day.
Any ideas for all this left over white meat? We're trying to be healthy so cassaroles with lots of cheese aren't an option - but we'll eat any cuisine from thai to mexican to italian.

You can add bite sized chunks of chicken to almost any salad.
We love chicken and dumplings.
In a deep skillet, add chicken meat to a large can of cream of chicken soup, add milk or water for a desired consistency, add a bag of mixed veggies. Mix up some Bisquick biscuits (I use buttermilk - they come out fluffier) and drop large spoon sized dough bits into the skillet. Let it simmer for 10 min then cover for another 10 min so the dumplings finish cooking in the steam. We're having this for supper tonight.
tortillas or tacos with whole wheat tortillas. I spread vegetarian refried beans down the center of a tortilla, top with shredded chicken, diced peppers, a handful of frozen corn or peas, some beans (black, kidney, whatever) and maybe a little Mexican cheese. Fold both sides over to the center and secure with a toothpick, put on a sprayed baking sheet, and covered with some tomato or enchilada sauce, and maybe a little cheese if you didn't put it inside. Bake at 350 for about 20 minutes.
chicken chili with beans & tomatoes
chicken noodle casserole with low fat cream of celery or broccoli soup (or some milk with cut up vegetables like broc or peppers or celery or a combination) and whole wheat noodles
stir fry with fresh vegetables (broc, celery, mushrooms, carrots, peppers, or whatever you have, plus added water chestnuts for more crunch), with just a little sauce made from low salt soy sauce & chicken broth, served over brown rice
chicken salad with walnuts & green grapes, served over whole wheat toast (like a chicken salad sandwich only open-faced and without mayo)
Freeze it in small portions and break it out over the next 2 months as needed.
I second the chicken salad idea! I make a curry chicken salad with walnuts, celery and grapes. I use plain Greek yogurt instead of mayo for the dressing, which is fat-free and low calorie but still delicious and creamy.
OK, now I really need to eat breakfast! :-)
Make quesadillas with veggies and chesse
Make tortilla wraps. I fill the table with meats, cheeses, and veggies, the kids make their own. Like sandwiches but healthier.
Make Fried Rice. My kids favorite!

We always do this...it's tasty!
You could do a casserole that doesn't involve high fat cheeses...
Slice tomatoes, line the bottom of the casserole dish. Season to preferred taste (I use Mrs. Dash & a little Kosher salt & dried basil). I add chopped onion and garlic over top of the tomato. Place chicken on top of tomato & seasoning. Slice more tomato and lay on top of chicken. Season just like you did the bottom tomatoes. Sprinkle a little mozzarella over top and bake @ 350 until cheese is melted.
This goes GREAT over top of a brown rice or 'Uncle Bens Sundried Tomato Basil' rice.

For a super easy meal... just use premade salsa verde instead of making your own!
we make cassadillas (?) with our left over chx. Either BBQ, Buffalo, Terriaki, you can mix it up w/ any items you'd like ! We dont have a 'maker' but we use a big wide frying pan. something different..... GL
chicken salad! chicken cassadillas (can't spell it, but you get the idea!) ;)
Roll it up in little circles of pie/pizza dough, or even a tortilla, with a blop of salsa, pinch of cheese (or not) and bake in the oven.
Toss with greens, red onion, some kind of fruit (grapes, grapefruit, dried cranberries, strawberries)maybe some nuts, make a vinegarette with jam, dijon mustard, lemon juice or vinegar or both.
Put some veggies in a very hot pan, gr peppers, snow peas, carrots, etc, with a splash of oil until carmelized, add cut up chix with soy sauce, grated ginger, grated garlic, squeeze of lime juice, smidge of peanut butter, red pepper flakes, finish with some cold crunchy sprouts on top, or serve over rice.
Grind up or chop very finely leftover white meat and make meat balls, and egg, bread crumbs, basil/parsley, splash of evoo, brown in skillet, pour tomato sauce, serve with any pasta.....

Mix all of the ingredients into a bowl and add the miracle whip and other ingredients to your taste. Sprinkle the top with a little paprika for color. Eat with Ritz crackers or Club crackers. Sometimes I eat mine in spinach wraps.
Then make some lemonade or ice tea and enjoy for lunch.

chicken pot pie! Its great. Just get already prepared dough. Best thing to do is look it up on youtube. They give great ideas for chicken pot pie and soooo easy. The kids love it.
My girl friend made a Buffalo Chicken dish that was delicious although for me a little spicy. She pulled the chicken apart and mixed it in with the buffalo dressing and had chips, taco shells (hard and soft ones) with the usual toppingsShe also had a Blue Cheese dip to add to the top. It was fun and different and easy to make she warmed it up in the oven for about 10 to 15 min, you can also microwave it.
I just roasted two chix breasts last night to prepare chicken salad for lunch today. Or you cld turn uut into a chix pasta salad.
Pad thai (do you have Trader Joe's nearby? They sell good Thai curry sauces and rice noodles. Just need fresh cilantro and cashew or peanuts chopped up).
Enchiladas - corn tortillas, Trader Joe's enchilada sauce, cheese - doesn't have to be a lot - buy organic.
Stir fry with broccoli and cashews - get a Chinese sauce. serve with brown rice (much healthier than white).
Any Indian jarred sauce - like korma or tikka masala. Can serve with lentils, chick peas, or diced potatoes if tired of rice.

Easy Chicken Cacciatore
Just cut up the remaining chicken, place pieces in a 9 x 13 pan with green pepper, celery & tomato sauce & bake till veggies are tender. Serve with rice or pasta.
Add it to salads, make sandwiches, add some taco seasoning for chicken tacos.
get 2 pie crust can of cream of chicken or mushroom soup can of veg alittle milk and chicken mix on top of crust then cover with other crust bake till golden brown CHICKEN POT PIE

Haven't seen your other answers yet, so this is probably redundant, but:
Two words: FREEZE IT.
Cube it and put it in separate baggies. You will find it SO convenient to pull a bag of precooked chicken from the freezer, you'll wonder why you didn't do it sooner! You can use it in soups, sandwiches, main courses, casseroles, etc. It's a huge timesaver.

I love to make wraps with left-over chicken. I have 3 kids and only one of them will eat a wrap with us, so I make them a chicken quesadilla (sp?) which requires the same ingredients. We load ours with tons of lettuce and tomatoes, a little red onion and cheese, and then a dressing of your choice.
