ok so I have 3 lbs of boneless skinless chicken breasts to make for dinner. want something yummy but not the same old same old covered in cream soup w/rice stuff. anyone have a stand out recipe? I just don't want to make the same thing lol

Chicken stir fry with whatever leftover veggies you have? You can use broccoli, carrots, peppers, water chestnuts, mushrooms, celery, etc., and serve rice on the side.

Or, dip chicken breasts in beaten egg, then roll in panko bread crumbs or a mix of wheat germ and bread crumbs, quick fry until brown in oil (olive or canola), then finish in the oven. You get a crispy outside and not all the fat - even though the fat is healthy oil. You can add herbs or spices to the crumbs or even the egg mix first , also sesame or flax seeds - whatever you have. You can also mix some grated Parm cheese in with the crumbs.

Good luck! What time should I come over for dinner?? LOL!

Pan Roasted Chicken and Veggies:

Brown chicken on stove top with olive oil.
Then add cut up potatoes, carrots, and spices. I use garlic, minced onion, parsley flakes, salt, and pepper.

I also add chicken broth (or chicken bullion cube) to the pan too.

Then cook on medium heat until veggies are tender.

I like to serve it with salad, and warm bread. It's always a favorite here in our house :)

Chicken Parm
melt one stick of butter in one bowl, in second bowl puree dry stuffing mix and add Italian seasonings and grated Parmesan cheese
Dip each breast in butter then roll in bread crumb mix
place on cookie sheet and bake @ 350 for 25 min
Serve w/ spaghetti

Chili Powder

Shred chicken after fully cooked in crockpot then use the meat in chicken enchiladas. I assemble like lasagna, using tortillas instead of noodles & layer 2-3 times then top with shredded cheddar. Bake until cheese melts. Serve with lettuce, tomato, sour cream & guacamole.

I cut the breasts in half. Dip them in egg wash and bread crumbs.

Quickly fry the chix in a frying pan in hot oil -- just to brown the outsides. Do not cook through.

Add 2 T. of white cooking wine into a 14 oz jar of chix gravy and mix well.

Lightly grease bottom of a 9x9 glass pan. Spread a thin layer of gravy mixture on the bottom of glass pan. Put 1 layer of chix breats atop. Sprinkle w/ mozzerella cheese. Repeat layers like a lasagna.

Bake (covered) @ 325 for 40 minutes in a preheated oven.

heres a yummy recipe. cut down or add if you are making more or less breast.

6 chicken breast
1 can of cream of chicken soup
8 oz dried stuffing mix
6 slices swiss cheese
1/4 cup milk
1/2 stick melted butter

Spray your 9x13 pan with Pam and lay the chicken breast down. put a slice of swiss cheese over each breast. Mix the cream of chicken soup and milk together spread over the top. spread the stuffing on top and drizzle the melted butter. Top with foil and bake at 350 for 50 minutes. its yummy.

I love to bake my chicken breasts with a bit of lemon pepper and then when they are almost done, I saute green peppers, tomato, and onion in a skillet and pour over the top of the breasts. This is delicious.

And I know you don't want to hear it, but I have a chicken/rice casserole that is SO yummy...bake chicken separately, and in the casserole dish bake brown rice, frozen broccoli, cream of mushroom soup, and cheddar cheese. Mix together when both are done...this one is super yummy.

My MIL makes a chicken/stuffing/squash casserole that is delicious, but I couldn't tell you the specifics. I know it's diced chicken, stove top stuffing, and some sort of summer squash...I think there's a layer of stuffing on both top and bottom. There might be cheese in it...not sure. :)

Also, fried chicken strips are delicious homemade. Thin slice your chicken breasts, bread, and either bake or fry. YUMMY!! Now I want chicken for dinner.

This is delicious -

Cranberry Apricot Chicken
1 can cranberry sauce (jellied or whole berry, whatever you prefer)
1 cup of Apricot preserves
1 cup of french dressing
1 packet of Lipton's onion soup mix

Mix the above ingredients together in a saucepot and cook on medium until everything is well blended and mostly smooth.
Place your chicken in a glass casserole dish (or anything with high sides) and pour all of the sauce mixture over it and bake it at 375 for about 30 minutes (or until cooked through).

We like to eat this chicken recipe with potato cubes:
Cut several peeled potatoes into cubes (however much you think your family would need)
Season with salt and pepper. Saute them in a large pan in vegetable oil (not much, just enough for it not to stick) for 5 minutes. Then add 3 tablespoons of water, turn the heat to high, and cover the pan tightly. This will steam the potatoes. Steam them for about 3-4 minutes, stirring once or twice just so they don't stick to the bottom. Then remove the lid and turn the heat back down to medium or so and cook until the water is cooked off (maybe 3-4 minutes). Then add 1 tablespoon of butter or margarine and mix well in the potatoes. Place the potatoes on a large cookie sheet and bake at 375 for about 25 minutes. Hopefully, they should be crispy on the outside and soft in the middle. Delicious.
