I know it's not too common to use queen size mattress for a toddler's bed but we already have a queen size mattress and box springs that we plan to use for our 3.5 year old son. But I would like to at least get bed frames and beddings that are fun or kid friendly yet good quality. I just don't see much of a choice when I do online search so I am hoping some of you would have some good ideas or suggestions on where I can look. Since we don't have too many rooms for when we have guests, we would probably use his room for guests when we do have them.

We did the same thing with our daughter for a toddler's bed. She loved it. We purchased a queen frame with matching dresser and taught her to care for the furniture.
We wanted her to have child like linens and had some trouble finding the Disney set she wanted, so we purchased 2 twin comforters and had them sewn together. We purchased the Disney shams and pillow cases in standard size and then just purchased solid colored sheets. We cut apart the Disney sheets and used them as accents on the solid sheets. We painted one wall in a bright color and framed posters of her favorite characters.
She always loved her room. When other parents came over, many of them said they wished they had gone ahead and purchased "real furniture" cause their kids spent such a short time in their toddler furniture.
Be sure to check the discount stores like TJ MAX and Ross. They have such inexpensive prices, you will not mind purchasing the sets and cutting them apart to make curtains, pillows and trims for your "custom" linens. Of course this was 17 years ago, I am sure there are more resources out there on the internet now. Good Luck.
My thought would be to keep the headboard somewhat neutral so it can be used all through his life. He may want to take it with him or you may want to use it as a guest bed when the time finally comes. I found bedding at Overstock.com and then paired it up with solid sheets for both of my girls. Use accessories to liven up the room.
You might want to look at IKEA an Big Lots they have really good prices.

As for the bedding, I always find great bedding from Pottery Barn Kids. Look for full/queen sizes. They are usually pretty expensive, but I only shop during the sales and I can find good deals then. Hope that helps.
You may want to try doing some solid colors for a base of the bed and then liven it up with fun pillows and curtains and accessories. You could also try Big Lots and places like that. Most bedding companies will only produce a small amount of large sizes in child themed sheets and comforters. If they don't sell they get sent to someplace like Big Lots. You could also Liven up the room with wall art or a mural. If you would like to do a mural I have done many and I have very reasonable prices. Feel free to contact me.
I went through the same thing. I ended up with a standard wooden frame headboard and plain sheets, but found a character queen size comforter (Monsters Inc.) and coordinated colors from the comforter. It was easy to put an adult looking comforter on the bed when guests stayed. While it may be a hassle now not to have all the cute little kid stuff, it was actually nice not to have to worry about getting new bedroom furniture. Changing just the accessories was much cheaper than if we had to upgrade to new furniture.
He's 10 now and grown out of all of the character decor. We contemplated changing it to a baseball theme with red, white and blue. However he wanted just a simple cowboy theme. So it was easy to change the color scheme of the sheets to cocoa and we got very nice dark brown comforter.
Some friends of ours just made a very simple headboard out of old lumber. It looks like a barn. I don't know about you but we are not handy. It was so simple, we could do it. However, the problem is we do not own the tools to accomplish it. I'm sure you could find a handyman who could put something together rather inexpensively. Then you could get a brown comforter and some cow print or western throw pillows. ...just an idea.
