I am going to make meatloaf for supper tonight. I love meatloaf. My husband and kids don't like it. At least not the way I make it. We went to visit my sister this summer and she served meatloaf, and they ate it and said it was pretty good. I didn't get the recipe, and I can't get ahold of her. Anyway, I will try a different recipe than what I usually make. What are your favourites?

I make the recipe that is on the back of the Lipton Onion Soup Mix, box.
My kids LOVE it, it is not dry, and even my Husband who hates meatloaf will eat this, and like it.
And it is SUPER EASY.

2 pounds of ground beef and anything else you find.

Okay, seriously. I use 2 lbs of 97/3 ground beef, otherwise your loaf will swim in grease and shrink to a meat tube.

• Chopped onion (maybe 2 tablespns)
• Chopped green peppers (maybe 1 teaspn)
• 1 glove garlic chopped (or maybe 2)
• 1 blop of ketchup
• 3 shakes of wyrstershire stuff
• 1 drop of steak sauce
• grated carrots
• salt
• pepper
• 1 egg

Now you need something to hold the whole thing together. You can use cooked rice, raw oatmeal, or bread crumbs. I use rice if I have any left over. When I use the rice, I will sometimes add a little bread crumbs.

Stick your two hands in there and mix it until everything is very well blended. Oh you can add capers too, but I only do that when I have them on hand.

Pat a loaf in a cake pan or glass pan. Don't over work the meat or it will be too tough. Bake at 350 for about an hour and a half. Just keep checking it. You should have some juice at the bottom of the pan and it should be well browned on top. Then cut into it to see how well it is done on the inside.

You can put a little tomato sauce along the top of the loaf, but we prefer ketchup after it is cooked.

Ground beef, chopped onion, egg,milk, garlic salt, worcheshire sauce, teriyaki sauce and teriyaki sauce. Mix it all together (it will be wet) put it in a baking dish and bake at 350. It is delish! I have never had anything but compliments.

I do not use any bread crumbs, rice, crackers or anything like that and my meat holds together just fine. I find that the meatloaf is much tastier and moist without them.

I do mine like Shane B's - kinda winging it, adding stuff here and there. My exception is that I don't do bread nor raw onion. I do saltine crackers instead, although I would happily crumble cheeze-its in there if that's what I have on hand. A squirt of brown/spicy mustard is good too.

My kids LOVE meatloaf. How the heck are you making it? Does it get too dry or something?

I usually just wing it, because it's pretty hard to ruin.

For really simple, I use 1-1/2 to 2 pounds lean ground beef. In a bowl, I throw in a package of onion soup mix, some chopped onion, an egg or two, crumbled up whole wheat bread slices (the heals of the loaf work great), I add some ketchup and/or bbq sauce, a little water, and mash it all up with my hands. If it seems too moist, add a little more crumbled bread. If it seems too dry, add a little more water. Put it in a loaf pan and bake at 350 or 375 for about an hour or until the meat is cooked through. Once done, drain off any grease that's collected in the pan. You can add a little cheese on top if you prefer it and let it melt.

I make mine a little different each time depending on what I have on hand and depending on how much meat I have to work with.

Anyone with an aversion to onions probably wouldn't like this recipe, but my kids do a happy dance when I make meatloaf. They love to make sandwiches with the leftovers....if there ARE any. They like it with cottage cheese and fresh steamed veggies or a nice side salad and garlic bread.

Moist meatloaf
We cannot tolerate the Bell peppers so we leave them out.

1 1/2 lb ground beef..
1 1/2 lb ground Turkey
1/2 lb ground pork

2 or 3 sliced stale bread torn to pieces. soak in 1/4 cup milk, squeeze excess milk.. mix with a raw egg.

1 med white onion chopped.
1 seeded and chopped poblano pepper
(optional add a chopped bell pepper)
1 small clove of garlic, chopped (or 1/2 teaspoon garlic salt)
1/2 tspoon ground black pepper

Mix all of the above together and form into a loaf

Line the bottom of a loaf pan or roasting pan with crinkled foil to hold the loaf out of most of the fat that will cook out.

I then pour a can of Rotel chopped Tomatoes on top.. Place in a 350 oven for about 1 hour.. cook until the internal temperature reaches a minimum of 160°F

For a change, I sometimes, place a cubes of American cheese (you could use velveeta) in the center of the loaf . Make sure the cheese is completely covered by the meat. .

I have a few meatlofa recipes but I love the one on the back of the Lipton
Onion Soup & Dip Mix box.

I used to use the packets for onion dip.

However, I found the recipe on the back, tried it & loved it.
It calls for 2 lbs of beef but i make it w/1 lb. & chg some of the
ingredient amts to coincide w/the smaller amt of beef.

Mine is ground beef, chopped onions, bell pepper, and garlic, egg, whole wheat or multigrain bread chunks, Lea & Perrin's Worchestershire, Tony Chachere's.
I don't put catsup, mustard, or sugar on top.
Sometimes I change it up - add salsa, jalapenoes, chili powder, and cheddar and make Mexican meatloaf.
Or add chopped tomatoes, oregano, basil, parmesan and mozzarella and make Italian meatloaf.

This is my go-to. It's so good and the kids just gobble it up. I use equal parts ketchup and bbq sauce instead of all bbq sauce.

Meatloaf:
3 slices white bread, crusts removed, torn into chunks by hand
1/4 cup whole milk
Panko crumbs or oyster crackers
3 pounds ground _________ (turkey, beef, 3meat combo, whatever)
2 eggs
Leaves from 2 fresh thyme sprigs
1/4 bunch of Fresh parsley chopped
Salt and freshly ground black pepper
3 to 4 bacon slices
1 onion, roughly chopped
3 whole cloves garlic

For the glaze:
1/2 cup catsup
1 teaspoon ground cumin
Dash Worcestershire sauce
Dash hot pepper sauce
1 tablespoon honey

Preheat oven to 400

Sauté the onions, bay leaf, garlic, and thyme until translucent. Set aside to cool.

Tear up bread into chunks and let soak in milk.

Combine everything. (Technical, that) except bacon & glaze and panko using your hands. Add in panko until mixture is no longer too wet. Form into loaves, muffin tin*, pan, whatever you're using. Wrap bacon around sides (or place in bottom of muffin tins, before meatloaf!) Cook at 400 for 10 minutes. Pour on glaze. Turn heat down to 350. Cool until 160 for beef, or 180 for turkey. Time depends on size of loaves. 1 lb loave about 40-60 min. 1.5 pound loaves = 60-90.

I mix one pound of ground beef and one pound of sausage (I prefer to use Jimmy Deans Sage breakfast sausage.

I add in 3-4 slices on bread soaked in milk, 1-2 eggs, whatever veggies I have on hand chopped finely (onions, carrots, celery, green peppers, scallions), a few dashes of worcestershire sauce, and a healthy dose of dill weed. Mix it all together and bake!

An EASY way we make it is to use 2 pounds of ground beef and mix an equal amount of salsa and bbq sauce. We'll add an egg or two and bread crumbs...bake!

My kids and whole family will eat Cottage Meatloaf.

It has a topping of ketchup mixed with brown sugar and mustard. So it's a sweet and flavorful recipe.

It's on a lot of recipe sites, I do not add the pepper flakes. The kids don't like spicy but as for the rest of the recipe, I cook the meat loaf in a meat loaf pan so the grease drains off into the 2nd pan and I put the topping on after it has cooked a few minutes.

If I am making it at someone's house and they don't have a meat loaf pan I cook the meat until there is a bit of grease around it then I take it out of the oven and hold it with a big spatula so it can't fall out and I drain as much of the grease off as I can. Then I put the topping on it and put it back in the oven.

Here's my go to meatloaf. About the only thing I can make without a recipe:

1.5-2 pounds ground beef
1 box stuffing (I've used cornbread, chicken, turkey, herb doesn't matter)
1 cup milk
a squirt to BBQ Sauce
An egg ( I have forgotten this and it still tasted great.)

Mix together. Put into loaf pan. Squirt more BBQ sauce on top.

Bake at 350 degrees for 1.5 hours.

I just made mine two nights ago and there were no leftovers! My hubby hated meatloaf til he tasted mine. Here's what I do:
Ground beef, diced onion and bell pepper (I like the red ones for color), egg, salt, pepper, garlic and onion powder, Worcestershire sauce (just a little) and some tomato sauce. I add Panko Italian bread crumbs. Then bake. About 15 mins. before taking it out of the oven, I put a little more tomato sauce on top (NEVER ketchup). Then, right before taking it out, I sprinkle shredded sharp cheddar cheese on top and allow to melt. It's a winner every time. :)

you've gotten good responses so far. i don't like dry meatloaf so i adjust the milk to bread ratio. some of my secret ingredients (or substitutions if i run out of something) are:
baby food carrots-sneaks in veggies and makes it moist and no one will ever know!
for sauces-bbq, steak, worcestershire, tobasco and/or you can use any flavor salad dressing to jazz up the taste. mix with the egg, etc. then add meat. also, overmixing can affect tenderness/taste.
instead of bread or crackers, i've used uncooked oats or grape nuts (really!)
sometimes i put a layer of cheese (string works) in the middle and/or smother the top with mashed potatoes about half way thru baking.
