Quick, easy, easy, tasty meatloaf when you don't have time for anything very complicated: Campbell's Meatloaf Fixings. You can get it at the grocery store. The Wally World here stocks it near the canned tomatoes, tomato sauce, etc.

It's not homemade, but it's pretty good, really simple, and fast.

My husband makes the best meatloaf ever. Even people that do not like meatloaf will eat this. I will pull his recipe when I get home and post it for you.

This is my mom's recipe for meatloaf ( more or less... I don't have it written down so I always kind of wing it or call her! ) I grew up in a family of six so you can cut back the quantity or eat half & freeze half.

1 lb ground beef
1 lb Jimmy Dean sausage
1 can evaporated milk
1 egg
1 package Lipton golden onion soup mix (or you can use the onion-mushroom or herb, I play around w/it every time and sometimes mix 2 together)

Mix it all up and shape into a loaf in a 11 x 14 pan. Sprinkle some crushed cheddar Durchee onions on top. Cover w/ foil and cook for about an hour on 375. Check the middle after about 45 minutes to see if it's cooking all the way through, remove foil and continue cooking for about another 15 minutes.

2-lbs of hamburger meat
2-eggs
1-chopped bell pepper
1-cup of bbq sauce
1-pk crushed crackers or 1-cup oat meal
spices--your favorite
1/2-cup cut up onion
mix all well, put in loaf pan, put ketchup on top & bake @ 350 for about an hour, I usually half way through cooking will drain part of the grease (i don't like greasey food)
P.S. You can also add v8 juice instead of bbq sauce!

I have one that my family loves and they are not big meat loaf eaters. I don't measure anything our so it taste differant everytime. I use 2lbs of ground beef, potato chips, saltine crackers, a tsp of garlic poweder, one onion chopped, salt and pepper, and bbq sauce. I mix that all together and form it into a loaf and cover with foil and cook at 350 for about an hour. I have even put bacon on top, my family loves it this way but I'm not a big fan of bacon.

I made this the other day and put the mixture in muffin tins, if you do it this way make sure you put on a baking sheet because the juices will overflow from the muffin pan.

1 1/2 lbs of lean ground beef
1/2 onion finely chopped (more or less as needed)
1 pkg of Lipton's onion soup mix
1 slice of bread torn into little pieces
1 egg
scant 1/4 cup warm water (drizzle over broken up bread)
a BIG squirt of catsup (I use Heinz)
salt & pepper to taste

Pre-heat oven to 375. Put your meat in a large bowl. Have all your ingredients measured and waiting. I salt & pepper the meat and get that all mixed up, then add onion soup mix and mix that up a little. Then add rest of your ingredients. Make sure you use enough catsup or it won't taste right. Just use your own judgment. Mix well with your hands. Have your loaf pan ready and sprayed that way you can just put it right in the pan. I top mine with more catsup before putting it in the oven.

Recently I tried putting 2 slices of bread on the bottom of the pan before I put the meatloat in and it soaked up all that meat juice. It worked pretty well!

Bake at 375 for appr. 45 minutes.

This is my mother-in-law's recipes and I've been making it for 37 years. It was one of the firt things I learned how to cook! My family still loves it! Good Luck!

This is my Mom's recipe. It is really easy and very kid friendly!! My 4 kiddos ask for it at least 3x a month!!
Hope you enjoy it too! I am going to give you the recipe 1/2ed, which is the way I made it when we only had 2 kids. I now have to double the recipe, (double everything, except only use 3 eggs)!!

1 lb. hamburger
1/2 c. quick oats
2 eggs
salt pepper
1 small onion chopped
ketchup (1 or 2 squirts)
milk (about 1/4c or less)
Combine oats, eggs, salt, pepper, onion, milk, and ketchup. Add hamburger and mix well w/ your hands. Shape into a loaf and bake at 350degrees for 50 min. Add ketchup to top and bake 5 min. more.

I know all about trying to re-create a family favorite from childhood by memory as an adult. I, too, had meat loaf growing up and the closest I came to making it like the original, believe it or not, was using the Souperior Meat Loaf recipe from Lipton (www.recipesecrets.com). It is very easy and my family and I enjoy it. It uses 1 envelope onion soup mix, 2lbs. ground beef, 3/4 c. plain dry bread crumbs (I use Italian), 2 eggs, 3/4 c. water, and 1/3 c. ketchup. In a large bowl, combine all ingredients. In a 13x9-inch baking or roasting pan, shape into a loaf (I have also used a bread loaf pan). Bake 1 hour or intil done. Let stand 10 minutes. I hope this helps and is similar to the taste you are looking for. Best wishes:)

1/2 5 lbs hamberger 2 eggs large 1 rool ritz type crakers smashed( or fretos , oatmeal, saltine crakers,cormflacks) about 2 table katchup( total of about 4 to 5 tablespoon) mesh together line 9 x 13 pan bottom and sides with katsup then pour in mix flaten but katchup on top 350 30min check

Hi G., I'm 55 yrs. old & I have never heard of putting BBQ sauce in meatloaf, who knew, lol.
This is my old family recipe.
1 lb ground beef or turkey
1 pkg crushed saltines
1 can tomatoe sauce
1 med chopped onion (suit your taste)
1 or 2 eggs, slightly beaten
splash to a 1/4 C. milk makes more moist.
salt & pepper to taste
I use lemmon pepper & season salt
Mix well put in loaf pan or whatever baking dish & top
with Ketchup.
You can buy meatloaf seasoning instead of salt & pepper.
Bake at 375, 45 min or til done.
I use a microwave dish & cooks in 20 min. make a hole in the middle about 2 inches, cooks moe even & faster.

Hi G.,
I've made this so long, I don't really measure but here goes
1 lb ground beef
1 cup bread crumbs
1/2 cup ketchup
1 egg
diced onion to taste
diced bell pepper to tast
small cubes of cheddar cheese (as much as you like)
salt & pepper

Mix all together
put in loaf pan
I put ketchup on top

put foil over it and cook at 375 for 1 hour

My family loves the cheese, hope u like it too.

I know there are many, many different recipes. I just wanted to make a suggestion for a healthy substitution when you make it. Almost every recipe I've ever seen calls for bread crumbs. Try substituting an equal amount of ground flax meal. It doesn't change the taste or texture. My family hasn't noticed the change at all. However, this adds so many GREAT things to the meatloaf---omega 3's being the most important. It also avoids gluten which is too rampant in our diet in the U.S.

Meat loaf is a favorite at our house, too!

This is different than typical meatloaf, but here's a Mexican Meatloaf recipe from WeightWatchers that I love!

1 spray(s) cooking spray
1/2 pound(s) raw extra lean ground beef
1/2 pound(s) lean ground turkey, breast
2 large egg white(s)
2 oz cornbread stuffing dry mix, (about 1 cup)
1 medium onion(s), chopped
1/2 tsp chili powder
1/4 tsp ground cumin
4 oz canned green chili peppers, diced
8 oz canned enchilada sauce

Instructions
Preheat oven to 375°F. Coat a broiler pan with cooking spray.

In a large bowl, mix beef, turkey, egg whites, stuffing mix, onion, chili powder, cumin, chilies and half of enchilada sauce together. Shape into an oval with your hands and place on prepared broiler pan.

Cook for 1 hour, top with remaining enchilada sauce and bake for 5 minutes more. Slice into 6 pieces and serve.

I make Mini Meatloaves, and my kids and hubby love them...

1 lb. ground beef or turkey
1 box stuffing mix
1 teaspoon garlic powder
about 3/4 C water
Barbecue Sauce
Cheddar Cheese - grated

Mix first four ingredients. Divide among muffin tin, sprayed with cooking oil. With a small spoon, make a well in the middle of each meatloaf and fill each with about 1 tsp. barbecue sauce. Bake at 350 for 30-35 minutes. Sprinkle with cheese. Bake additional 10 minutes.

This recipe is from the Kraft Food and Family magazine and has other variations, such as Italian and Mexican. You just use appropriate substitutions for the garlic, barbecue and cheese variety.... kraftfoodandfamily.com Enjoy!

1 pound ground turkey
1 package cornbread stuffing
BBQ Sauce (enough to moisten the stuffing mix)

Mix all the above to gether, spread a little bit of BBQ sauce on top and bake at 350 for 45-60 minutes, uncovered.

We don't like traditional meatloaf with ketchup, but we love this one.
