Looking for New Meal Ideas...

I got inspired when I read another poster on different meatloaf recipes. I may try them myself. I'm looking for some new recipes myself... Some days, I feel like we're having the same meals over and over. I like simple and fairly inexpensive meals for my family... but I'm running out of ideas. Anyone have any ideas that I can try? I love using my crock-pot too. Some nights have to be quick as my son has sports on Mon. and Wed. nights. If it helps you out -- My husband and son can be picky with veggies. My daughter eats just about anything. I am not fussy whatsoever... I'd be happy with a sandwich or cereal. My husband likes to have something that "sticks"... he is a "meat and potatoes" kind of guy. My son is not crazy about things that are mixed together (such as a hot-dish/casserole).

I look forward to your ideas. I'm exited to try something new and tell everyone how my family likes them. Thank you in advance for your responses.

Here is a super fast recipe that is very delicious!
Cajun Chicken Alfredo
3 Boneless skinless chicken breasts, cut into cubes
1 or 2 Tablespoons Olive Oil
Premade Cajun seasoning (use little if you like mild, more for spicy)
2 jars Ragu Garlic Alfredo sauce (that's my favorite, but you can use other kinds)
1 box fetticuni or linguine

Using a large frying pan, brown the chicken breast cubes in the olive oil on medium heat. Cover and cook on low until cooked through, 10 minutes or so. Meanwhile, start the water for the pasta. When the chicken is cooked through, add the Cajun seasoning and the Alfredo sauce to the frying pan. Sauce is done when heated through.
Serve the sauce over the pasta with fresh grated parmesean cheese on top. With a salad and garlic bread, it's a complete meal and super fast.

For an even faster meal, use thawed precooked tail-less shrimp in place of the chicken. Then, all you have to do is mix it with the seasoning and sauce and heat it up!

I've been in food ruts recently as well. I found www.mealsmatter.org helpful... alot of duplicate recipes but alot of good ones too. There's over 10,000 easy to prepare/under 30 minutes, just over 1,700 crock pot ones (more actually if you dig... some have side notes that recipes can be prepared in crock pots as well as on the stove)... you can also add your own which is nice to have one place to look them up (and not take up space on the bookshelf, counter, where ever).

meatballs
(this is a combo of my two grandma's recipes mixed together and tweeked, this also works well to double the batch and freeze some for later use)

1 lb hamburger
1 lb pork sausage
1 egg
1c sour cream
1 pkg dry onion soup mix
1/2 tsp garlic poweder
2 tsp salt
1/2 tsp pepper
2 tsp chili powder
1 tbl horse radish
1 sleeve of crackers.

mix all together and roll into 1 inch balls and bake at 325 for 1 1/2 hrs covered.

sauce.. 2 cans of cream of mushroom soup, 1/2 c water, mix well and cover the meatballs 30mins before they are done.

we serve over rice.
with the chili powder and the hoseradish you can't taste them, but it gives it very good flavor!

Hawaiian Pork Roast
(this would be good on weekends when you have time to do it... this is so good, i cooked this for our wedding as pork sandwichs)

1 boneless pork shoulder roast (3-4 lbs)
4 tsp liquid smoke
4 tsp soy sauce
2 unpeeled ripe bananas
1/2 c water

place roast in heavy duty foil, sprinkle w/ soy sauce and liquide smoke. Wash bananas and place at the base of each side of roast. Pull foil over roast add water. Seal foil tightly. Wrap in another foil. Place in shallow pan (cake pan). Put in the fridge over night, turning several times. Bake at 400 for 1 hour, reduce heat to 325 continue baking for 3 1/2 hrs. Drain liquid, discard bananas. Shred meat for sandwiches.

BLT Hotdogs
8 Hot dogs
8 buns
8 lettuce leaves
8 strips of bacon
Diced tomatoes
mayo

Preheat oven to 375
wrap hotdogs with bacon
bake for 40-45 mins
put on bun and dress with toppings.

Chicken Alfredo
1pkg (8oz) cream cheese
6tbl butter
1/2 c milk
1/2 tsp garlic powder
2 boneless chicken breast (cubed and cooked)
2 c frozen chopped broccoli, thawed (we like the calf. melody better)
fettuccine noodles

in a skillet over low heat melt cream cheese and butter until smooth. Add milk, garlic powder, salt and pepper. Cook and stir 3 mins or til thickened. Add chicken, broccoli. Cook for a few more mins, reduce heat and cook for 5 mins or till veggies are tender.

serve over noodles.

Broccoli Cream Soup
(this sticks with you for a long time! does me anyways)
4 celery ribs, chopped
1 large onion, chopped
3 tbls butter
2 bunches broccoli (about 8 cups) chopped coursely ( i used frozen)
1 1/2 c chicken broth
2 tsp garlic salt
1/2 tsp pepper ( i added more for my taste)
2 tbls cornstarch
1 pint heavy whipping cream

in a large saucepan, saute celery and onion in butter until tender. Add the broccoli, broth, garlic salt, and pepper, bring to a boil. Reduce heat, cover and simmer for 45 mns or until broccoli is tender.

in a small bowl combine cornstarch and water until smooth. Stir into soup. Bring to a boil, cook and stir for 2 mins or until thickened. Reduce heat to low. Stir in cream, cook 10 mins longer or until heated through.

**** I used frozen broccoli and I only needed to cook it for about 15 mins instead of the 45 mins until the broccoli was cooked and it still tasted great!****

A favorite dinner at our house is:

Baked Potato Bar

wash potatoes, pierce with fork and wrap in foil
then, put them in the crockpot on low for a full day or high for a 1/2 day (don't add water or anything else)

Toppings:

taco meat
cheese
salsa
chili
sour cream
ham
broccoli
whatever you like... :)

This is great for those nights when dinner needs to be quick and/or people are coming and going.

This doesn't exactly met your wants but my son likes the meat and picks it out and has it with raw carrots and plain rice. (I don't know about your hubby depends on the stir fry bag you get)

Heat:
1/4 c veg oil
1/3 c white cooking wine
1/2 -1 tsp ginger
1/4-1/2 tsp pepper
1/3 - 1/2 c soy sauce
1 T minced garlic (from jar)

Add and cook part way:
1 pkg chicken breasts or beef cut into bite size pieces

Add one bag frozen stir- fry veggies finish cooking and serve over rice.

You can make the sauce mild or strong/salty depending on the tastes of your family and health needs.
