If you dont want to use mayo you can use veganaise... its in the refridgerated section.... good stuff.
For a non mayo cole slaw I use cabbage, carrots, white onions... and then redwine vinegar, a little evoo and sugar to taste.

Are you wanting to substitute the mayo with a similar item to maintain the classic creaminess? Or do you want to completely get rid of the creamy dressing?

I suggest you google: No Mayonaise Coleslaw....
Here's one link :http://www.foodista.com/recipe/L7QFV7B4/no-mayonnaise-col... this one uses green pepper, I would sub red or orange pepper.

Depending upon what I'm making I omit the mayo all the time. If I want an Asian friendly slaw, then I use rice vinegar and a splash of sesame oil with the other oils. If i want more American than I add a green apple and use apple cider vinegar with peanut oil.

this is my husbands great-grandma's recipe.
2 heads cabbage (chopped or ground)
3 peppers
1 bunch celery
1 T celery salt
1T white mustard seed
4 cups sugar
2 cups vinegar

we sometimes use only 1 cabbage and no other veggies and cut the recipe in half with celery salt only.

We have one we love. Unfortunately, we don't measure the ingredients but I'll try to here.

Bag of pre-shredded cabbage
1-2tsp of chopped garlic
1Tbsp of paprika (for an added spice you can use a little bit of both smoked paprika and regular paprika)
1tsp onion powder
salt & pepper to taste
olive oil
Apple cider vinegar

For the oil and vinegar jus add a little at a time and taste as you go. I can't even begin to guess how much we use just remember you can always add more.

google oil and vinegar coleslaw and you will find a ton. I like it much better that way.

This is a recipe for an Asian-style coleslaw that does not have any mayo in the dressing. My family likes this a lot, though it can be a little labor intensive with the dressing ingredients. I also use either a crunched up bag of ramen noodles or some sliced almonds or sesame seeds for crunch.

If you're asking because someone doesn't like the taste of mayonnaise (rather than having a dietary problem with mayonnaise), I can give you a recipe that might work. Our daughter will only eat this coleslaw because she doesn't like the mayonnaise taste in other slaws.
Finely shred six cups of cabbage. Mix in a quarter cup of thinly sliced green onions. Cover and refrigerate several hours or overnight. Mix together a cup of mayonnaise or salad dressing, 2 tablespoons sugar, 2 tablespoons vinegar (I like to use a red or white wine vinegar for this), 2 teaspoons celery seed, 1 teaspoon salt. Cover and refrigerate the dressing several hours or overnight. Mix dressing with cabbage/onion mix just before serving.
While this slaw does have the mayonnaise in it, the flavor is quite different. It's almost a sweet-sour kind of flavor. This has been a favorite recipe for me to take to pot-lucks and family gatherings for years. People will ask me to bring it when planning an event.

I often make broccoli slaw and just use bottled miso-ginger dressing as the binder. Sometimes I add just a touch of mayo for creaminess, but usually not. Either way, it's refreshing and delicious.

Try ranch dressing and see how you like it. Maybe thin it with milk if you need. I always make coleslaw with mayo, milk cinnamon and a bit of sugar. I bet ranch dressing would still work instead of mayo. Or even a nice alfredo sauce.

I use a combo of Mayo and Henri's Tastee dressing. Maybe you could go heavier on the dressing and use sour cream instead of mayo?
