Good Chicken Salad Recipe Using Rotisserie Chickens

I'm hosting a baby shower with 3 other ladies and I was asked to take care of the Chicken Salad. Does anyone have a good recipe using the Rotisserie chickens from the grocery store?

I would keep it simple (and economical). My husband hates celery, so I do a more traditional southern chicken salad recipe (which omits fruit or nuts). I do hard boiled eggs, sweet salad cubes, salt (if needed), pepper, mayo, paprika Just chop these all together, and keep tasting until you like it. For parties, I like making finger sandwiches. You can't go wrong!

I wouldn't call it a recipe exactly.
I just make a leafy salad using Spring Greens, some tomatoes, add what ever else you like in a leafy salad.
Sprinkle bite sized pieces of chicken breast on top.
I use Marie's Super Blue dressing (about half mixed with buttermilk so it's not too thick), then sprinkle with fresh ground pepper and some dried oregano on top. Add a few croutons.
My family loves it.

Best Chicken Salad Ever

Prep Time: 20 Minutes
Ready In: 20 Minutes
Servings: 10
"Whipped cream gives this chicken salad a lift. Green grapes and crunchy almonds add sweetness and texture to this creamy chicken salad."
INGREDIENTS:
2 1/2 cups diced and chilled, cooked
chicken meat
1 cup chopped celery
1 cup sliced, seedless grapes
1/2 cup sliced almonds
2 tablespoons chopped fresh parsley
1 teaspoon salt
1 teaspoon paprika
1 cup mayonnaise
1/4 cup heavy whipping cream
DIRECTIONS:
1. In a medium bowl, whip cream to soft peaks.
2. Combine meat, celery, grapes, almonds, parsley, salt, paprika and mayonnaise with whipped cream. Chill.

The Ladies Aid at my church sponsors two High Tea's every year. The following is the recipe we use. It is simple and very tasty and is always the favorite. My husband even likes it and he doesn't generally like this. I usually omit the nuts as my daughter has nut allergies and it is just as good, just not as crunchy. At our teas, we serve on either white or wheat bread, crusts removed and cut into either fingers or triangles. At home I generally use croissants. The sandwiches can be assembled an hour or two ahead of time. We always lightly butter the bread, but it isn't necessary.

Unbelievable Chicken Salad
4 boneless, skinless chicken beasts boiled and chopped or equivalant of rotisserie chicken
1 small package chopped walnuts
1/2 cup dried cranberries (Craisins)
1 tall stick celery, chopped small
4-5 Tablespoons Mayonnaise (more or less depending on how moist you like it)
Salt and pepper to taste

Combine diced chicken, stir in Craisins, walnuts and celery. Mix enough mayonnaise to make salad spreadable, using 4-5 tablespoons. Salt and pepper lightly. Refrigerate about 1 hour; stir again before serving.

Everyone loves this recipe
Chop chicken,
add mayo
add chopped cashews
add chopped red grapes (or you can use green)
Mix together
refrigerate until ready to use

I can't have the rotisserie chicken from most grocery stores because the seasoning contains MSG. If you serve this for a group of people please be aware of the fact many cannot eat this chicken. Also please have ingredient information available to your guests.

I'd make quinoa. Then I'd mix in shredded or cut up chicken, sliced almonds, craisins, avocado, and tomato. Maybe cut up cheese as well. I'd add salt and pepper and make a homemade dressing of olive oil and basalmic vinegar (or lemon juice). I'd mix it all together and serve it over arugula. Yum!

I got the BEST chicken salad recipe from the Pioneer Woman. Super easy and everyone (even my non-cranberry loving friend) loves it.

Patsy’s Chicken Salad
Combine the following:
1 roasted chicken, deboned and cut or pulled into small bite-size chunks
1 – 1 ½ cups dried cranberries
½ – 1 cup coarsely chopped pecans
2 tablespoons poppy seeds
Mix:
½ cup plain yogurt
½ cup sour cream
½ cup mayonnaise
Combine with chicken mixture, place in storage container and refrigerate.

My best friend makes an awesome chicken salad. She uses rotisserie chicken, mayo, green apple, with the skin, chopped small, craisins, and walnuts. It is really yummy

Hi V.-

I make a shredded chicken salad with mandarin oranges, toasted almonds, green onion and ginger salad dressing (from the refrigerator section)...really tasty - and always one of the food requests when eldest daughter is home from college. You can also sub in sliced grapes for the mandarin oranges. Salt, pepper to taste...and let chill over nite. Serve on lettuce and/or croissant...

I take the white meat and chop it up. Add chopped onions and celery, a dollop of brown (or your favorite) mustard and mayo. Easy and tasty. You can pretty up the top with parsley if you like. Some people add hard boiled eggs, but we rarely opt for that.

I take leftover rotisserie chicken, boil some funky pasta, add cashews, craisins, artichoke hearts, Broccoli, sundried tomatoes, aspargus, bacon and any other thing I can think of...I toss it together with buttermilk ranch dressing, sourcream, and sometimes milk if it is too thick. It is amazing!

My favorite chicken salad recipe with rotisserie chicken comes from costco. It is terrific just like it is, but I have also added chopped apples or chopped nuts or grape halves.
