Asking for Filling Ideas for Stuffed Peppers

Okay so I want to make stuffed peppers for the first time this weekend. I have always wanted to, but want to know all of your favorite fillings. And do you have a preference on the color or type of pepper you use?

So What Happened?

Well I made them last night. Used orange bells, and made them on the "lighter side". Stuffed with ground turkey, brown rice, grated parmesan, a tiny bit of bread crumbs, Italian seasoning, a few dashes of hot sauce and topped with low fat cheddar and tomato sauce. My husband loved them!!!

I have mixed up quiche and used The pepper as crust.
I have used flank steaks grilled and stuffed the peppers with cheese ,steak,and grilled onions
Couscous and ground pork,onions,shredded carrots and egge and cheese.

yum the traditional everyone uses below and sometimes J. fill with mashed potatoes and corn mixed together and baked and cheese on top sometimes yummmm

Use any color you have or that are on sale...I like green best. This is the receipe that my family likes.

I do make one change...I put in half ground beef, half groud italian sausage. Also after blanching the peppers and filling them...I individually saran wrap them and freeze them for later baking. They turn out really good this way and a good way to just double or tripple the receipe and make 3 or 4 dinners all at once. Love to make this when the giant green peppers are on sale.

For my stuffing, I saute onions, a little garlic, chopped up pepper from when the top is cut off, and some ground beef. I mix with a little tomato sauce. I top off the stuffing with a mixture of bread crumbs and parm cheese.

I've also had them using ground sausage, which is very good. You can use ground pork or turkey if you prefer.

Also, many people add rice to the stuffing mixture. I make rice and serve as a side dish.

I like any color of peppers, but be sure to blanch them in boiling water before stuffing and baking. As for filling, I don't have an exact recipe but I make a meatloaf like filling with ground hamburger or turkey, cooked brown rice, grated cheese, diced onion, and seasonings. Some people use a lot of spaghetti sauce on top too but I don't like that. Once the pepper are blanked and filled, bake and top with more cheese. Good luck

I use a mix of sausage and turkey sausage, mushrooms, onions, seasoned with s+p, cumin, garlic, paprika, and cayanne pepper. I cook all that together, mix it with cheddar or Mexican blend cheese and stuff it in the yellow hot peppers and the dark green larger hot pepper, dont know the names but they are the milder of the hot peppers. Sometimes I boil the.peppers a little first if you want them softer. After they are stuffed I put them I the oven for 20 - 30 minutes. Serve over white rice sprinkled with some extra cheese. Its making me hungry thinking about it.

now i'm drooling for stuffed peppers!
i use whatever color i've got or is on sale, but i like to use the big blocky chunky ones with a lot of flesh. if they won't stand up, slice a little off the bottom to even 'em out. you can steam 'em in the microwave first but i'm usually too lazy.
as for stuffings, oh my.........
boil quinoa and/or spelt (or rice if you're not feeling fancy) until tender, mix with sauteed onions and garlic, shredded chicken, salsa, top with some shredded cheddar.
seasoned bread crumbs or stuffing mix moistened with water, olive oil or butter, mixed with chicken chunks.
tofu sauteed with tamari, mixed with cooked rice, pineapple, sauteed veggies and a touch of brown sugar on top.
ground beef mixed with a can of seasoned tomatoes, topped with a little mozzarella.
leftover green bean casserole, topped with swiss.
pretty much any of your leftovers.
brush with olive oil and grill!

When I make stuffed peppers, I use green ones. I think they hold up better, but you could use any color.

I use ground beef, chopped onion, garlic, tomato sauce, rice, (not minute rice). A little salt, a little pepper. Mix it all up like you're making a meat loaf, stuff the peppers and bake in the oven. You can put them in a casserole or on a baking sheet. I put foil over them for the most part of the cooking and take the foil off so the tops can get brown. You can add a little cheese to the top or put parmesan if you like it.

I've been making them for years and I tweek things here and there sometimes, but they always come out great.

First a hint.. When you pick out the peppers, make sure they are a good size and that they will stand up on their own.

If they will not stand on their own.. I cut the bottom of the pepper so it will stand flat. I place it on Parchment or aluminum foil on the cookie sheet or baking pan.

You can Blanche them if you want. I usually do not.

I saute the chopped top of the pepper (not the stem of course) onions and garlic with a little olive oil.

Saute some cooked rice with this mixture.
Then mix this with Ground meat.. can be a mixture of beef and pork or turkey and pork. I season with salt and pepper.. and a dash of Tabasco sauce.

Sometime, instead of the Tabasco I will do a dash of Nutmeg.. OR a dash of cumin..

Mix all of this together, then stuff the peppers. Bake for about 25 to 30 minutes. You can serve this with hot sauce or with a spicy tomato sauce.

I use green peppers. Clean, halve and steam so they are soft.

Mix ground meat and seasoned breadcrumbs.

Top with tomato sauce (not spaghetti sauce!).

Bake. Serve with rice on the side.

Not sure what type of peppers, but we make some good jalepeno poppers. first get chicken breasts and marinate in italian dressing overnight (if possible, no biggie if you dont)
cut peppers in half lengthwise
take seeds out
put chunks of monterey jack cheese and small pieces of chicken in one side of pepper
cover with other side of pepper
wrap with a slice of bacon
to hold together use toothpicks
then cook on the BBQ
THEY ARE SO SO GOOD!

Any color pepper, blanched, either cut the top off, or cut in half to make a "boat". Stuff with mixture of ground beef, cooked rice and Campbells tomato soup, and top with cheddar cheese.

banana peppers. Slice open and empty of seeds. Stuff with (cooked) sausage, cheese (I like goat cheese and muenster but any cheese would work) tomatoes, and grilled onions. Wrap closed with a slice of bacon and toothpicks. Broil for 7 minutes on both sides.
