Cookin’ Quinoa

Here is a simple recipe using a renowned superfood – quinoa (pronounced “keen-wa”). By now, most people have heard of quinoa, but do you know how great it is for your body and how easy it is to cook? Although commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and Swiss chard. The protein-rich seed has a fluffy, slightly crunchy texture and a rather nutty flavor when cooked. Quinoa is one of the few vegetarian sources of complete protein, meaning, like meats, it has all nine of the essential amino acids. It’s also gluten-free, full of fiber, and contains other heart-healthy vitamins. This recipe is flavorful and exquisitely simple to prepare – most of these ingredients are pantry staples. Impress your family with your whole-foods prowess and whip it up tonight.

Quinoa With Chicken & Peas

  • 1 c. quinoa, rinsed well (use red quinoa if you can find it, it’s prettier)
  • 1 lb. chicken cutlets, cut into strips
  • 1 medium onion, finely chopped
  • 1 3/4 c. low-sodium chicken broth
  • 1 c. sweet peas, cooked
  • 3 cloves garlic, finely minced
    v3 T extra virgin olive oil, divided
  • 1 T white wine vinegar
  • 2 T tomato paste
  • Finely grated Romano cheese, about 1/2 c.
  • Salt and pepper to taste

Marinate chicken with salt, black pepper, garlic and 1 T of the olive oil for about 15 minutes. Sauté onion in 2 T of the olive oil on low heat until soft, about 5 minutes. Add vinegar and tomato paste, mix well and sauté for another two minutes. Add marinated chicken to the mix and cook, covered, for ten minutes or until chicken is no longer pink inside. Turn the chicken pieces occasionally to coat them with the sauce. Add the quinoa and stir in the chicken broth. Reduce the heat, cover and cook for approximately fifteen minutes, or until the liquid is absorbed by the quinoa. Mix in the peas and cheese and serve immediately.

Pair this with a crisp and simple side salad. Serves 4.

you cn find organic quinoa at trader joes!--

Thanks for this post! I, too, have made quinoa several times and it was bitter and yucky. I now understand I need to rinse it well. I will try this recipe and look forward to adding it into our diet.

Who knew! I am peruvian and grew up eating quinoa, savory and sweet. Brings me back home. Rinsing is key to flavor, or it will taste a little bitter. We never had "crunchy" we cook it longer and it becomes softer. Only crunchy if you want to make a tabouli like dish, with lemon juice, fresh tomatoes, finely chopped cilantro, and finely cut onions, salt and pepper to taste and little olive oil, wonderful for summer meals.

Quinoa is great. We use a quinoa and spinach salad recipe at our house a lot. It has dried apricots, garlic, tomatoes and red onions. The dressing is made with olive oil, lemon juice, yogurt and cumin. Yummy. Recipe can be found at eatingwell.com. Another great grain to try is Teff. Both can be found in the section containing Bob's Red Mill products. You can order directly from them online, as well.

My multi-grain breakfast mix is so easy. I like to experiment by buying small amounts of different grains from bulk bins at the grocery store...

I'm going to try this tonight. For some of you who have posted looking for Quinoa, I found bags of Organic Quinoa at Costco of all places! Many of the "healthier" grocery stores stock it also- like Whole Foods. I live in Oregon so it's pretty easy to find here. Good Luck!

Yes, quinoa is a very healthy food, and I've heard before that quinoa is total protein. Then why are you combining it with chicken then? It's giving more protein in the meal than is needed. Just makes no sense to me.

We tried plain quinoa today and loved it! Please post the crockpot multi-grain breakfast also. I found quinoa in bulk at Fisher Nuts in Barrington, IL.

Where do you get this quinoa?

I really enjoy quinoa as well, since I cannot eat gluten. Bob's Red Mill sells larger packages of already rinsed quinoa, which is nice to not have to worry about it tasting bitter. I shop at Marc's, which is so much cheaper than Kroger's, Giant Eagles, ect. and they have the Bob's Red Mill products in their organic section (I have price compared with Raisin Rack and Whole Foods and it is considerably cheaper). They also have smaller boxes of quinoa in the ethnic foods aisle...

Ladies, you all can get Quinoa at you local health food store. Here in Houston we have Whole Foods., in the Bulk section. Also there is a flour from quinoa,(you can get the flour in the healthy section in Krogers) you can mix 2 cups of quinoa flour, 2 tablespoons italian seasonings, dash of sea salt or ii tablespoon tableblend or garlic and herb Mrs. Dash, 1/3 cup olive oil or seasame oil mixed, add water till consistancey of cornbread and bake at 350 oven for 20-25 minutes...

Quinoa can be found in the bulk bins at stores like Sprout's and Henry's. I just recently discovered it and my family loves it! Great substitute for cous cous!

Thanks for all the suggestions. I am eating gluten free and I am really having a hard time with protein these days. I get really turned off by beef and pork but lately chicken is a problem as well. It's not that I want to be a vegetarian, sometimes I go through this phase and I don't really know why. I have a really hard time tolerating beans otherwise I would just eat more of them...

Bitter taste: unless your quinoa package specifically says the quinoa is "pre-rinsed," you must rinse your quinoa before you cook it. Quinoa is naturally coated with saponins, a bitter coating that make their seeds less-palatable to birds and other seed-eaters.

Quinoa keeps for a long time in an airtight container...
