Cookin’ Quinoa

Here is a simple recipe using a renowned superfood – quinoa (pronounced “keen-wa”). By now, most people have heard of quinoa, but do you know how great it is for your body and how easy it is to cook? Although commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and Swiss chard. The protein-rich seed has a fluffy, slightly crunchy texture and a rather nutty flavor when cooked. Quinoa is one of the few vegetarian sources of complete protein, meaning, like meats, it has all nine of the essential amino acids. It’s also gluten-free, full of fiber, and contains other heart-healthy vitamins. This recipe is flavorful and exquisitely simple to prepare – most of these ingredients are pantry staples. Impress your family with your whole-foods prowess and whip it up tonight.

Quinoa With Chicken & Peas

  • 1 c. quinoa, rinsed well (use red quinoa if you can find it, it’s prettier)
  • 1 lb. chicken cutlets, cut into strips
  • 1 medium onion, finely chopped
  • 1 3/4 c. low-sodium chicken broth
  • 1 c. sweet peas, cooked
  • 3 cloves garlic, finely minced
    v3 T extra virgin olive oil, divided
  • 1 T white wine vinegar
  • 2 T tomato paste
  • Finely grated Romano cheese, about 1/2 c.
  • Salt and pepper to taste

Marinate chicken with salt, black pepper, garlic and 1 T of the olive oil for about 15 minutes. Sauté onion in 2 T of the olive oil on low heat until soft, about 5 minutes. Add vinegar and tomato paste, mix well and sauté for another two minutes. Add marinated chicken to the mix and cook, covered, for ten minutes or until chicken is no longer pink inside. Turn the chicken pieces occasionally to coat them with the sauce. Add the quinoa and stir in the chicken broth. Reduce the heat, cover and cook for approximately fifteen minutes, or until the liquid is absorbed by the quinoa. Mix in the peas and cheese and serve immediately.

Pair this with a crisp and simple side salad. Serves 4.

I made a delicious VEGETARIAN quinoa recipe recently.
Instead of water for the liquid I used a can of coconut milk (Trader Joe's brand). I also added at the end of cooking time, dried cranberries, cubed apples and sunflower seeds. I ate it for breakfast and dinner.
You can add anything else that you like.

I'm trying this one! Incidentally, I put some quinoa in my multi grains mix that I make in the crockpot for breakfast. (Barley, wheat berries, steel cut oats, spices, etc.)

Well in my house we had repleaced quinoa for rice, I always like it since I'm from Bolivia and I grew up eating it. There are many ways to cook quinoa from savory dishes to desserts. One of my favorites savory recipe is one that I learned from my mom (she used to make it at least twice a month) . I cook the quinoa with extra water when the quinoa is cooked I add whole milk or evaporated milk and cheese mmmm is so delicious and kids love it. This dish takes me back to my childhood :)

This looks yummy! Does anyone know how long you can keep quinoa before it goes bad? I have had a box of red quinoa for kind of a long time because I wasn't sure how to make it...

My sister in law told my husband and I about Quinoa. So everytime I go to the super market, I look for it because I'd love to start cooking with it. However, I just can't seem to locate it in the store. I've asked customer service, and they tell me it's in the Kosher section..haven't seen it. I've even looked by the couscous and such...any suggestions?

I've never seen quinoa in the grocery store. where do I find it? would it be where the rice and grains are? thanks!

I found in my market a cereal made from Quinoa--as far as I can tell quinoa is the only ingredient, but somehow it cooks much faster and comes out creamier more like oatmeal. It is fast and my 8-month-old daughter loves it with just a little mashed banana. Great protein source for a toothless person!

I recently went on a no carb diet and discovered much to my amazement that my arthritis all but dissappeared! I am so very happy!!!I am now searching for wheat substitutes and and am curious where I would purchase quinoa? What do I look for - how do I know the higher quality quinoa brands? and are there breads made of this? Without arthritis I can exercise and do not need a no carb diet!(am only 10lbs. overweight now).Thanks!!!

I guess I need some help with quinoa. I have tried it a few times and it is bitter. Is my quinoa bad or what am I doing wrong?

Caroline- if you do not rinse the quinoa it will taste bitter. You want to rinse it till the water runs clear. Hope that helps!
