We just got a beef processed and now I have some interesting things in my freezer. One of those is Soup Bones. What do I make with those? I figured soup but does anyone have a step-by-step recipe?
Have you tried www.allrecipes.com or www.ehow.com? There are some interesting recipes there.
Just cover the bones with water, bring to a boil and simmer for a couple of hours. Throw in bayleaf, onions and garlic for more flavor. You can also brown the bones in a roasting pan first for a richer broth.
Then ladle the hot broth over cut carrots, celery, tomatoes, onions, garlic, cabbage, green beans, rice, barley, wild rice… whatever you have on hand. Salt and pepper to taste. Cook for an hour. Then add cubed beef, spinach, chard and other vegies that cook quickly. Cook through, 10 minutes or so. And you have soup.,
I use them to make demi-glace sauce. It is time consuming but it usually makes enough for me to freeze a few cups.
I use the demi-glace for rack of lamb, tenderloin, etc.
A basic recipe for it should be on All Recipes.
I just boil them for a very long time for a nice rich stock and broth. Throw in veggies and boil them till soft. Or I give them raw to the dog outside. Did you get leg bones or tail bones? You can make Ox Tail Soup with Tail bones.
Vegetable soup with beef stock.
And once you’ve cooked the bones, the bone marrow is a delicious treat. As a kid, my mom would scoop out the marrow, spread it on a piece of white bread, and salt it. Since there were 4 kids, she’d have to cut the bread into four pieces so we’d each get one. (I’m guessing that there was a second piece of bread with spread that she enjoyed all to herself.) Delicious! This may be one you have to grow up eating to enjoy, but I recommend it if you’re adventurous.
(Bone marrow seems to be the trend item in Portland, OR restaurants these days.)
Beet Borscht. You can find lots of recipes for it online.
