I'm exercising more and want to be more efficient with meal prep. My hubby will eat almost anything, but he's staying away from meat - he'll eat fish, seafood, etc., and veggie crumbles, etc.
I'm a bit less adventurous but am willing to try things. I don't like textures like pastina, and a strong mediterranean taste is a bit much for me.
Are there any SUPER RIDICULOUSLY easy crock pot recipes? I've seen some where they want you to do a lot of prep of ingredients first and I am so NOT looking for that. Just dump and go, or slice/dice and go.

I do baked beans in the crockpot…not really a full meal, but it’s easy. Sort and soak your beans overnight (okay, that’s prep, but it’s super easy and only takes a few minutes.)
Add your beans, molasses, sugar or brown sugar, mustard, and whatever seasonings you’d like, cover with water, and let simmer all day. I love homemade baked beans!
We also do chili in the crockpot, with tofu instead of meat. You could try that…it’s basically the same as above, but with different seasonings.
The next time I make it, I’ll likely add in some red peppers too.
You can also do potatoes, sweet potatoes, minced red onion, red pepper, mushrooms, carrots and kalamata olives with a tin of mandarin oranges, some fresh thyme and garlic. It will stew up, but it’s heavenly.
The thing about a crock pot is it’s really, mostly a meat cooker. Slow-cooking means you can take larger, tougher, cheaper cuts, like roasts and whole chickens, and cook them all day until they fall off the bone due to tenderness.

It’s more of an addition to a meal, but you can bake potatoes in the crock pot, too. Just put them on low all day, and you have baked potatoes for dinner, without having your oven on for a couple of hours.
I also make jambalaya in the crock pot, from the Zataran’s box mix. Just dump the mix and additions called for on the box (water and butter, I think), and leave it for maybe three hours on low. If you’re going to be gone all day, add a little extra water. I like to add a bag of frozen salad shrimp at the end - they are pre-boiled and pre-peeled - they just need to get warm.
