They are a little bit labor-intensive, but well worth it!!

Kristina,

Here is my favorite recipe for lemon bars. I often use the crust portion of the recipe to make Scottish shortbread. Enjoy! Janet

Lemon Bars

Crust:
2 c flour
1 c butter, melted
½ c powdered sugar

Filling:

4 eggs
2 c sugar
1 tsp. baking powder
4 Tbsp. flour
6 Tbsp. lemon juice

Mix crust ingredients. Press into greased 9x13 inch glass baking dish, leaving edges somewhat higher than the center. Bake at 350 degrees for 20-25 minutes or until crust begins to brown.

To make filling, combine all ingredients and mix well with a mixer. Pour into baked crust and bake 20-25 minutes at 350 degrees. Bars are done when fairly firm. Cool completely. Dust with powdered sugar and cut into small squares.
