Hi All,

I would love love love to expand my summer salad recipes and would appreciate some of your MOST favorites!

I have a fruit and veggie loving family and the kids and I are big on eating 'cold' dinners in the summer time! The only veggie we don't really care for is green bell peppers...but we will still eat them!

Also, I will be throwing a huge pool party for my son's baseball team as an 'end of the season' treat and need some help. I think we are going with steak and chicken satays as the main proteins and I would love a collection of salads (both veggie and fruits) to make and have the guests choose from.

Has anyone made the 'watermelon and feta' salad I have seen on the cooking shows so often? Was it tasty? Looks interesting.

spinach leaves, sliced almonds, cranberries, sliced strawberries w/a
raspberry vinagrette.

iceberg lettuce, corn, black beans, diced tomatoes, diced red onions & any kind of dressing you like. (You can, also, add sliced red tortilla chips.)

If you like spicy then buffalo cole slaw is good.

1 bag packaged coleslaw (no dressing)
1/2 cup blue cheese crumbles
sunflower seeds
craisens
4 tbs ranch
4 tbs Franks hot sauce or wing sauce

Mix well and serve.

You can also add chopped up chicken or steak. Really yummy.

Here is a recipe for 24 hour picnic salad from Cooks Country. It is amazing and very hearty. You layer it with all the ingredients and the dressing and keep it in the fridge overnight. Because the lettuce is salted it doesn't wilt. The dressing is really good too.

The Asian salad you received is awesome b/c it's kinda like a cole slaw but with ramen noodles and the best part is.....it can sit out for hours b/c it's not mayonnaise based so it won't go bad. Make it that day, I don't like it the following day (and I never cook the noodles).

A simple one I like is Romaine, Goat Cheese, Mandarin Oranges and almonds with a raspberry vinaigrette.

Love the Texas Caviar one you received as well.

My family's fave (and our camping trip staple) is orzo salad. Cook up a box of orzo according to package directions but DO rinse the noodles and let them cool. Add olives, diced cucumbers, cherry tomatoes halved, feta cheese, roasted yellow or orange bell peppers (they are much milder than green and when they're roasted, but you could omit them), fresh Italian parsley and Greek feta dressing. Toss, refrigerate and enjoy! Makes a huge batch. You could add whatever veggies you like that sound good with it (green onion, artichoke hearts, etc).

Yes on the Watermelon Feta salad! Yum.

I always try to duplicate the California Citrus Salad from Claimjumper- golden raisins, blue cheese, avocado, green apple, mandarine oranges, crunchy walnuts in Citrus or Raspberry vinegarette. Oh there might be some lettuce in there too ;)

I also like a simple one with just greens, 1/2cooked-1/2crunchy green beans or asparagus, gorgonzola cheese and homemade lemon vinegarette. Can add Chicken for a heftier salad.

I got a terribly fattening, rich one from Sunset magazine I think- it was endive, bacon, avocado, blue cheese and basic vinagarette. I think the idea was to put the mixture on the endive leaves like a crudite but I just chopped it all up. It's good.

Yum! I love salads.

Arugula, tomatoes, avocado, pine nuts (or even pecans), thinly sliced red onions, Parmesan, salt & pepper, garlicky EVOO, lemon juice.

It's not seasonal, necessarily, but right now I am enjoying a mix of red/purple cabbage, sunflower seeds, cranberries, grated carrot, blueberries, almond pieces.

One is Texas Caviar. I think everyone has their own favorite version of it, but I've been doing this one for a while now with approval across the spectrum of eaters.

Can be done summer or winter - just used canned if fresh isn't available.

I’d say cumin, cilantro, lime and cider vinegar are essential flavor ingredients. Otherwise measurements obviously account for personal preference :) Double recipe for parties/large groups. It can be used as a main dish (served over lettuce or pasta), side dish or dip w/ tortilla chips. I think a lot of recipes call for jalapeno or some type of pepper but I opt out when making it kid-friendly.

1 15oz can black eyed peas (drained/rinsed)
1 15oz can hominy (drained/rinsed)
+/- ½ C Chopped cilantro
+/- 1 C fresh or canned (drained) chopped tomato
½ to 1 Red bell pepper diced (or any color you prefer; and roasted (jarred or fresh) would be awesome too)
2 cloves Minced Garlic
1 to 1 ½ tsp cumin
+/- 1 tbsp worcestershire
Chopped onion (use any kind you like)
½ to 1 C olive oil
½ - ¾ C cider vinegar
Juice of one or two limes

Refrigerate 24 hours at least before serving, stirring/mixing occasionally. Season with salt/pepper if needed before serving.

Two is a great salad we eat as a main course for dinner a lot, adding hearts of palm/artichoke hearts etc when we feel like it:

The watermelon and feta salad is amazingly delicious. Just make sure you cut up the watermelon the night before and keep it in a strainer so all of the extra liquid can drain out. It ends up looking almost like cherry tomatoes if you use a melon baller.

We also love corn on the cob (roasted on the grill) tossed with chopped tomatoes, avocado, cilantro and white onion. Dressing is red wine vinegar, fresh garlic, and olive oil.

Hi In my 30's-

One of our family fav's is fresh baby spinach, grape tomatoes (halved), thinly sliced red onion, seeded cukes...bite size pieces, green pepper (optional), feta cheese (optional), fresh lemons squeezed on, EVOO, salt and pepper to taste.

Even better after a day in fridge 'chilling & marrying'.

Mine is a walnut/gorgonzola salad:
Mixed greens
walnuts
gorgonzola
sliced apples
sliced avacado
dried cranberries
