2 Good Salads

I need two good salads to make sometime next week. They can have noodles or not but I want to try to get away from them. I have mastered the noodle salads now on to bigger fish!

B I have been looking for that first salad i am not kidding for four years!!!!!! omg thank you!!!!!

7 layer salad is my very favorite!
lettuce
sliced celery
chopped green onions
frozen green peas
layer of mayo and/or ranch
shredded cheese
crumbled bacon

spinach, strawberry, red onion & balsamic vinagrette, top with protien of your choice, should you so desire, i.e. chopped egg, tuna, salmon, chickpeas.

watermelon, feta cheese, red onion & balsamic vinagrette.

take a look at Mark Bittman's 101 salads (he writes for the NY Times), I am sure you can find the article circulating on the web. he's got some great ideas.

Brocolli, red onion, raisin and feta cheese salad in a greek yogurt dressing. Spinach, strawberry and red onion in a poppy seed dressing.

I love to make Salads for my family, and I know lots of recipies. If you are looking for one with Fish, then Ceaser Salad is a favorite of my family. It has Anchovies in it. The only thing is that Anchovies are very salty.......My five y/o and my 8 y/o daughters will not eat them at all, so they always take them out of their salads, lol. I would suggest not putting too many Anchovies in. Especially if kids that will be eating it.

Tortellini and spinach salad

Boil up some cheese tortellini and then toss with some raw spinach salad and balsamic vinegarette. Slice up some mushrooms, mozzarella cheese, salami, cherry tomatoes, broccoli and cauliflower, and black olives. Sprinkle on some salt and pepper and Italian seasonings, chill for a while in the fridge, delicious!

This is another one I love:
Spring mix salad, along with some sliced pears or apples, crumbled bleu cheese, sliced red onions, candied pecans, and grilled chicken or small shrimp on top along with balsamic vinaigrette.

We like Arugula with fresh pear slices .. it's fresh tasting... We use a simple dressing of balsamic, olive oil, fresh salt/pepper to taste... then if you want a tangy taste, we use german mustard (we get it from cost plus) you can't just use a french's or that type..

for something more depth and YUMMY.. we do our version of a Greek... mixed green, calamata olives, cucumber, cherry tomatoes (we add fresh cilantro) garbanzo beans and fresh feta... IF in the mood, I will even add avocado... sometimes we have this salad as our main meal.. with homemade croutons..

use same dressing as above but we also add FRESH lemon into it....

Simple but great . Cucumber, onion, cherry tomato. Olive oil with apple cider vinager. Top with fresh parsley.
