A nice platter of cut up fruits is always nice, goes well and is refreshing to go along with the BBQed meat & veggies.
I am going to a bbq and the host is serving kabobs and asked us each to bring a side dish to share. I thought about a 7 layer salad...but with kabobs do we need more veggies? Should I do a potato salad? I also thought about corn on the cob, but I don't know how big of bbq they have and it seems weird to take something they would need to cook. I don't know what to do b/c I have never made/served kabobs to anyone but my hubby and kids and they don't really care "what goes" with them. TIA

What about rice pilaf? Near East brand makes a really good boxed one that we always add some sauteed onions, celery and pine nuts to. It is just prepared on the stovetop and you could keep it warm by wrapping the bowl in foil, also it tastes good at room temp.
I think a green salad would taste good with kabobs. You could also do cut up fruit like strawberries, grapes, watermelon, cantaloupe, pineapple. Pineapple slices on the grill are so yummy and sweet! Or bring a loaf of crusty bread, some butter and or some balsamic vinegar for dipping. Or how about chips and dip? Good luck!
No BBQ is complete without watermelon :)
When it's a bbq anything goes because you're going to have a varying group of people. Bring whatever sounds good to you. 7 layer salad? Sure! Pasta salad, corn on the cob, a watermelon cut up. Anything goes at a bbq!

I usually make a Couscous salad...w/cranberries and feta.
Couscous with herbs and small bits of veggies.
What about rice? I would bring some kind of rice. Or maybe corn on the cob?
Kabobs MUST have rice or cous cous (I'm half Middle-Eastern, so I know best :)).
Find out if rice will be served. If so, bring a plate of grilled whole tomatoes to mush into the rice. Very authentically Middle-Eastern, very yummy.
You can also make a cucumber and yogurt salad as a side dish. Again, very authentic. Chop cukes and some onion (optional...green onions work well, too), fresh mint if you like, and stir it into plain yogurt (I recommend Nancy's cause it has a good bite) along with some crushed garlic, salt, and pepper. SOOOOO Good!
Bulgar Wheat is one of my favs., also one of the simplest things on the planet to make.
- Chop and onion and saute until transluscent. (or skip this part)
- Add water or stock to onions (or empty pan if you skipped the onions)
- Bring water or chicken stock to boil at a 2:1 ration (2pts liquid to 1pt bulgar)
- Add bulgar
- Turn off heat
- Let sit for 5-10 minutes.
- Give a stir.
- Plate.
- Bonus: Put some tzatziki in the center of the plate for people to dish up with their bulgar wheat
- Bonus: garnish w a little cillantro or basil or parsley
how about an appetizer or fruit salad, or what is that jello I have seen at bbqs, jello layered with sour cream, fruit and nuts or something like that.
dessert might be another option
7 layer salad would be fine, as would corn on the cob......you could prepare the corn on the cob ahead of time by cooking it right before you leave if you do not have to drive to far to get there.....just a thought.....Also like the idea of a pasta salad, fruit salad or just a greens salad with some really good dressing....I agree with previous mamas: ANYTHING goes! LOL! Enjoy, sounds yummy!
Couscous with caramelized diced carrots, onions, raisins and toasted pumpkin seeds with curry and tumeric...can be served HOT or room temp...very tasty...esp with raw chopped green onions on top at last minute!!!

When in doubt, ask the host what she/he would like you to bring. What goes well with kabobs is basmati rice (cooked with beef or chicken broth and a little safron or curry), but they will probably already be making that. Your salad sounds wonderful too!

I usually do rice or cous cous with kabobs. You can get a boxed kind and then spice it up with some dried fruits nots, celery, or whatever. It should be fairly easy to keep warm-ish with some foil over it. How do you feel about quinoa? I've had some really tasty quinoa salads that can be either hot or cold. I bet you could find some recipes on line and they looked really easy!
Your seven layer salad does sound good and it would probably be great or a fruit salad would also be good, or a corn salad. I'd stay away from corn on the cob just b/c I think you're right, it might be weird to bring something they have to cook. In the end, I'm sure whatever you bring will be fine...it's a pot luck after all!
What about a pasta salad, I usually serve noodles with kabobs.
Or a rice dish.
Potato salad sounds really good
Tossed greens with mandarin oranges and walnuts or strawberries and nuts. With a vinaigrette dressing.
Fruit salad? Rolls or flat bread? ( flat bread and some nice dipping oil would be yummy) some kind of appetizer/ veggies and dip? When in doubt ask your hostess for suggestions.

A pasta salad would be good. Here's an easy, inexpensive and very good recipe:
Cook corkscrew pasta (the multi colored ones for appeal), when cool add diced tomatoes, sliced olives and mix about 1/2 a bottle of italian dressing over it all. (You can add chunked cheese and meat if you want too) Yum!
Pine Nut Cous Cous Salad (Make Cous Cous, add chunks of tomato, stir, add fresh Basil, Stir and serve) or Potato Salad and a green salad.
Avo, Lettuce, Tomato, Onion, cilantro, Lemon Juice, Olive Oil, Salt and Pepper
Crispy Bread rolls or "pull away" garlic Loaf
A rice dish would be a good addition IMO. Also perhaps a fresh fruit salad?
I'd make an orzo salad. Combine the cooked orzo with some crushed garlic, salt and pepper to taste and a good drizzle of olive oil (doing this when the pasta is warm will let the pasta soak up all the flavors). Let the orzo cool to room temp and add in some chopped tomatoes, chopped cucumber and crumbled feta cheese. Oh, and if you want more flavor, cook the orzo in chicken stock.
I would say a pasta salad or rice salad. I recently made a orzo salad that was so yummy with spinach and feta....
Even a fruit salad would be nice.
