You can use a waterproof mattress cover! They're easy to find... Target, Walmart, etc. all carry them and prices range from $12 - $80. The $12 ones work just fine.
I finally just moved my 2 y/o into a big boy bed. Its a twin. I found a waterproof mattress pad at Target for less than $10.

It goes over the sheet and is really easy to remove during late night accidents when you just want to get you and your daughter back to bed quickly. I recommend getting 2 so you always hav a spare. Although not cheap, they make life easier. Good luck.
You can probably use the same thing I have on my two year old's bed. It's a simple plastic cover. Since it's noisy, we covered it with a cotton mattress cover (which is not waterproof) and a sheet, it makes it much quieter. For my son we had a nice waterproof mattress cover. It fell apart because I had to wash it so often, so now I steer clear of those kinds.
if she doesn't toss and turn a lot ... puppy pads. Also you can find disposable pads in different sizes at most drug stores.
Otherwise the other options already listed work well too. I wish I'd gone with the disposable pads with my oldest ... would have saved on laundry .. maybe LOL

i use some very large garbage bags under the sheets.
Target sells a waterproof mattress covers, they enclosed the entire mattress. Also, I cut the elastic off of a crib mattress protecter and use that for my son's bed.
The website www.onestepahead.com sells matress covers for all bed sizes. The go under the fitted sheet and they're machine washable and dryer safe.
I used 2 or 3 crib pads, the ones with a rubber layer between laters of flannel. They didn't feel as sweaty or make as much noise as the plastic covers. They also didn't tear as easily.
You can use a waterproof pad for a crib. It only has to cover about a 3' x 3' area right?
I have gotten them at Ikea and Bed, Bath & Beyond. The mattress slips into it and then you can zipper it shut.
