What are some of your favorite side dish recipes you don't mind sharing? I have a few recipes I've added to my meal menus but on the lookout for some new ones.

I have been searching my favorite recipe sites but it just isn't the same without "I've tried it and loved it" referrals from other cooks.

This literally takes 5 minutes of prep. and is so good. We often have it at holidays and it is always the most popular side dish.

Corn Casserole

1 (15 1/4-ounce) can whole kernel corn, drained
1 (14 3/4-ounce) can cream-style corn
1 (8-ounce) package corn muffin mix (recommended: Jiffy)
1 cup sour cream
1/2 cup (1 stick) butter, melted
1 to 1 1/2 cups shredded Cheddar

Preheat oven to 350 degrees F.
In a large bowl, stir together the 2 cans of corn, corn muffin mix, sour cream, and melted butter. Pour into a greased 9 by 13-inch casserole dish. Bake for 45 minutes, or until golden brown. Remove from oven and top with Cheddar. Return to oven for 5 to 10 minutes, or until cheese is melted. Let stand for at least 5 minutes and then serve warm.

i've recently discovered sweet potato fries and they are awesome. i have never been a fan of the sweet potato but now we are fighting over the last one!

slice potato (however many you want depending on how many people) into however you want them. mine usually turn out in rectangles.

mix 1 tbsp of olive oil and the smallest dash of salt in a big bowl, toss in potatoes and mix.

heat oven 450 put fries on baking sheet (spray with canola oil or wipe on) then cook for about 12 minutes then flip for another 10 or so. just keep a lookout so they don't burn.

they are wonderful and low calorie. enjoy!

My family likes Scalloped Potatoes and "jazzed" up veggies like Green beans with slivered almonds and butter and garlic sauce.They are fab.Sometimes I just want cherry tomatoes with-a little favorite dressing on them.

i love "normal" side dishes just spiced up a little...
+like green beans with almonds & tomatos
+steamed okra with onion & tomato
+stuffed tomatos (you hollow out the tomato & stuff with already cooked rice, seasoned with your fav. spices & cheese, then bake for like 20min, on 375)

I just made this Mexican Rice tonight. I hoping it'll freeze well because it did take a few steps and I'd like to do two batches next time and freeze the other one.
