Potatoes Recipes Needed

We don't eat a lot of potatoes at our house, but they had a 10 pound bag on sale for $2.49 and the thrifty person in me couldn't resist.

Anyway, other than the standard baked potatoes or mashed potatoes, any other suggestions of not-too-time-consuming recipes to do? We did home fries the other night (cubed, a little oil, and baked till crispy, about 20 min @ 500). But I'm looking for some other ideas.

Any help is appreciated. :)

You can grate them into hash browns, add onions, chorizo, broccoli and cheese, mix in an egg to hold it all together and bake in a mini muffin tin. They freeze great and rock kids lunch boxes! See pics here:

Potato pancakes are always a big hit in our house. I don't have the recipe handy, but they aren't too hard and we usually have all of the stuff in the house!

Oven roasted:
I usually peel and quarter them and then cut the pieces in half again
Olive Oil
Salt
Pepper
Rosemary (dried)
Garlic (minced
Combine and cook for 40 minutes at 425. Delicious with roasted meat!

Super Simple Crock Pot Beef Stew
2 lb stew meat cubed
1/2 bag baby carrots
chunked peeled potatoes
onion in large chunks
can beef broth
can cream of mushroom soup
1 tsp dried thyme

Pile it all in the slow cooker for 8 hours on Low. Then 15-20 minutes before serving, crank it to high and add 1/2 bag of frozen green beans. Cheap, easy and very tasty!

Au gratin?

Cooked in the crock pot with a roast? Chop up with other veg and put them on the bottom under the meat.

In a vindaloo (mostly like a stir fry with potatoes included, we put curry on the side)

You can use them in soups, egg bakes, casseroles, etc.

My favorite potato recipe involves thin slices in a pan, then dot with pats of butter and sprinkle with grated parm and pepper. Bake. Delicious! I usually use new potatoes for this since they are softer, but I think it would work with regular potatoes as long as you slice them thinly enough.

Greek Lemon Roasted

Peel and quatrer potatoes. Lay in a baking dish or roasting pan. Clice as much fresh garlic as you like and add to the potatoes. Pour 3/4 cup chicken broth over potatoes. Mix 2/3 cup olive oil with 2/3 cup lemon juice, and add Greek seasonings to the mixture (oregano will do). Pour over potatoes. Bake at 400 for about 1 hour 15 minutes. If you throw a few chicken breasts or a pork tenderloin in with the potatoes you have a meal in a pan.

Root Veggies Casserole

Chop potatoes, onions, turnip, sweet potatoes, carrots and parsnips and put in baking dish. Mix one cup of beef broth with 1/4 cup olive oil and add herbs and seasonings (whatever you like). Pour over veggies and bake at 400 for one hour.

My kids love this recipe: peel and cube potatoes. Sometime I dont even peel them and leave the skins on. Mix one packet dry onion soup mix with a little bit of olive oil (its healthier than vegetable oil) and put everything in a ziploc bag and shake it to coat potatoes. Bake at 375-400 for a half hour or until potatoes or done. I've also tried it with dry ranch dressing instead of the onion soup mix, but I like the onion flavoring better.

Also, you can peel and cut potatoes, mix some cream of chicken soup, milk and shredded cheese with potatoes and bake 400 for 30-45 minutes until potatoes are done: easy, cheesy potatoes (sometimes I put cubes of ham in it also)

Shepherd's pie (you top the ground beef, sauted onions, diced carrots &
peas w/the mashed potatoes & bake. )

Diced the potatoes & brown them to serve for breakfast

Potatoe skins! I save the little bit of center that gets scooped out and freeze it for use in soups or as a thickener.

Hash Browns

Roasted Potatoes with lots of Parsley, Garlic, EVOO

I mix cauliflower in with my mashed potatoes - yummy!!

I make Augrauten Potatos.

Slice up about 4-5 potatoes thinly.

In sauce pan heat up 1 cup milk, 2 tablespoons of butter, and 1-1 1/2 cup of cheese ( cheddar, or what every you like). Bring milk and butter to boil. stirr in cheese until it is all melted, add 2 table spoons of Flour or corn startch to thikin slightly..

Put sliced potates in 8 X 11 baking dish.

add cheese saucse, bake 45-50 mins of 400.

Very yummy ..

You can add ham, or any meat.. and other veggies if you like..
