Hi ladies,

I love chicken but it can get really old and while tryign to loose alot of weight its my go to food. I am looking for fantastic and healthy ways to cook my chicken. Different ways to season it and make it taste great so that I don't get tired of it.

I also love veggies but can't use butter to flavor them anymore. I need your recepies and tips for great veggies. I want more than just steamed taste out of the bag in the frozen section =)

Cube up some chicken breast, season with garlic salt and pepper, saute in skillet till done and brown, add couple of cups of frozen broccoli, strir fry till tender crisp, add splash of soy sauce and 2-3 tablespoons of "Terriyaki Glaze" (found in chinese section by soy sauce). Stir until chicken is coated and serve over rice or noodles, We eat it alone and serve side salad and another veggie. Takes bout 10 minutes too, so it's quick, tasty and easy.

I wrap a skinless chicken breast with corn, okra, pototo and cheese (use whatever veggies you like) top with about a 1/2 cup salsa. Put on grill till chicken is done.
Great recipes with little if no clean up !!!!

**All of these recipes can be made in a crockpot, skillet, pot or in the oven. Just depends how you want to serve it. They can be made with whole chicken breast or chopped into slices or diced up.**

Chicken, peppers and onions with taco seasoning. Using tortillas is optional. Add in some bananna or jalapeno peppers for a kick.

Chicken, mushrooms, water and any onion soup mix. Add over rice if you would like.

Chicken, Salsa, Fat Free Sour cream and add in black beans (and rice if you choose).

Chicken, lemon salt, little olive oil and bake in the oven. At the last 10 mins, Add sliced feta cheese (not too much as it's cheese and fattening!) This is DELISH!

Chicken marinated in lowfat italian dressing and low sodium soy sauce. AWESOME on the grill. Can butterfly the chicken before you marinate and it tastes even better!!

Chicken, marinara sauce over spaghetti squash.

Chicken Chili (leave out beans for less fat or keep them in for more fiber).

Chicken and a ranch seasoning packet. Coat chicken and grill, cook on the skillet or in the oven.

Chicken, brown sugar, can of pineapple juice and pineapples. Bake in oven.

Chicken and BBQ sauce - simple but good!

Look up Weight Watchers Chicken Cordon Blue - easy and tastes very much like the regular meal!!

Instead of butter, use the butter spray. Also you can get the no calorie dressing sprays and put them on veggies too. Spray them then put on foil on cookie sheet and bake at 400 for 20 mins. Also can do this with carrots (use a little oil) with salt/pepper and parm cheese. Also good on sweet potatoes.

Do a stir fry with chicken and veggies. Marinade some chicken in a teriyaki sauce (I just mix soy sauce, honey and a dribble of sesame oil in a Ziploc and throw the chicken pieces in and let it rest in the fridge and hour or two). Heat up a wok or large skillet with a little canola oil, cook up the chicken, remove, throw in some snow peas, diced up carrots, water chestnuts and any other veggies you want, cook a couple minutes, throw in the chicken, mix up, done.

A recent recipe I've found is baked artichoke and musroom chicken.
Preheat oven to 350
Place chicken breasts (4) on bottom of 13x9 baking dish
Season w/ salt and pepper
Cover with 1 can artichokes (set aside marinade juice)
Cover with sliced mushrooms (1cup)
Cover w/ 1/4 c. green onions
Cover with artichoke juice and 1/2 c white wine
Bake for 45 minutes (or until chicken is white throughout).

I also add some parmesean cheese and fresh spinach on top for the last 5-10 minutes of baking.

Serve w/ rice or noodles - or plain.

Enjoy!

Soy sauce is a great way to season chicken and veggies. I love to cook asparagus on the stove or in the oven on a baking sheet in a little olive oil with a little sea salt and freshly ground black pepper. You can roast almost all veggies, except the ones with high water content, in the oven with olive oil and salt and pepper. Really brings out the flavor without losing too many nutrients.

I use olive oil for everything. Usually for chicken breast, I will coat it with olive oil and some minced garlic, then season it with salt, pepper and dried taragon. Or I sometimes subsitute the dried taragon for lemon juice or lemon pepper. For veggies, I just saute in olive oil, with salt, pepper and garlic.

Skewer, brush with olive oil and soy sauce (or olive oil, lemon juice and a little oregano, or toss with a little oil, garlic and rosemary before skewering) and do on the grill or under the broiler. It's more attractive to put everything on the same skewer but you get better results if you skewer the chicken by itself, fast cooking veggies and slow cooking veggies on their own skewers. Veggies that work well to grill (or broil) - peppers - all colors, eggplant, asparagus, mushrooms, tomatoes (be careful, they tend to fall off), zucchini. You only end up using a small amount of oil when you cook this way so it really doesn't add much fat or calories.

The book 'Hot Chicken' by Hugh Carpenter and Teri Sanderson is absolutely worth buying.

i love chicken fajitas with a veggies ...cut the chicken breast ,green pepper ,yellow pepper ,onion in stripes and then heat some olive oil and add everything and season with garlic salt powder and lemon pepper .
i usually grilled my veggies with little olive oil and garlic salt powder...
i also love this recipe for a side with grilled meat or chicken you can find the nopales and queso fresco at walmart

ensalada de nopales con pico de gallo
1 lb nopales (cactus)
1 small onion
2 tomatoes,diced
1/4 cup cilantro, chopped
7 lemon (squezzed for the lemon juice)
1/2 cup crushed cacique queso fresco

boil the cactus in stripes (i brought them already diced in fiesta mart) with a clove of garlic and salt for about 20 minutes Rinse and drain the cactus. Combine the cactus with the onion, tomato, cilantro, , lemon juice, , salt, , and cheese. Pour ingredients into a large salad bowl. . Add hot peppers if desired. This salad makes an excellent taco filling, too.

also the nopales(cactus) are excelent for weight lose low calories and high in protein

Cook the veggies and the chicken (I do separate pans) in all natural, low sodium, organic chicken stock (or veggie stock) and let it reduce all the way down. I makes for amazing flavor and zero fat grams.

Mrs. Dash! Lots of flavors to choose from (even spicy). My fav.- boneless, skinless chicken, squash, zucchinni, onions, place in baking dish sprayed with no stick spray, sprinkle with choice of Mrs. Dash and bake till done. yum!

I made baked green beans fries tonight and dipped them in peanut sauce. sooo good and no oil. try cooking veggies in other veggies (like wrapping cooking veggies in raw cabbage and dipping them in a prefered sauce, or making a veggie ratatoulli) as for chicken wrap in around cheese and tomatoe and spinach and tie with twine. once cooked cut into medallions. or grind almonds into breadcrumbs (i make my own from low cal bread) and add garlic and onion powder and cook in a non stick skillet.

you should pick up a book called "nourishing traditions"

you can sautee the chicken in a little olive oil with herbs
buttermilk and salt to "brine" it (toss it in the baggy in the morning, cook it at night) add herbs just before you grill it
crockpot 3-4 breasts all day with a cup or two of white wine- use it for enchiladas and soup and rice with veggies- I use garlic salt, celery seed, onion flake, and a little lemon pepper

Do you like using a crock pot? I am all about it. Here's an easy Chicken taco recipe using one.
1 lb chicken breast whole
1 taco seasoning packet
1 cup chicken broth
1 medium onion
Put all the ingredients in the crock pot, Cook on low 7 hours or so.
Take the chicken out,. Throw out the onion. Shred the chicken and return it to to the crock pot.Stir. Voila it's ready. I use 2lbs for my family of 4 and we always have left overs(Just double everything in the recipe if you use 2 lbs of chicken)I serve it with regular taco fixings-tomatoes(sometimes I make Pico de Gallo), lettuce, cheeese, avocado. We use soft shell tacos, both flour and corn. You can fatten it up or skinny it down to your liking. It is soooo good. Your house will smell amazing all day !!

I love the seasonig "grinders" that are available. They have different spice combinations and you grind them on to your veggies, chicken, etc.
also, Balsamic vinegar is a nice choice to "flavor up" a dish.
In lieu of butter to get some of the flavor enhancing oils on your mouth, use and EVO (extra virgin olive oil) and toss with roasted garlic or seasoning grinders mentioned above.
Also, have you tried trading out some of your chicken with turkey. Different flavor of meat could help fight the blahs.

Roast the veggies - Turn the oven on @ 450 and put a little olive oil and salt and pepper on the veggies and cook @ 20 minutes.

Cut up zuccini, yellow squash, onions, carrots, tomatoes, fennel, garlic, eggplant... whatever. Hard things take longer than soft things and try to have the veggies about the same size so they cook the same.

Super easy, and super yummy.

Also - google the recipe for weight watcher squash fries. I cut up a butternut squash and portion it out so I can make some a couple of times a week, fast and easy.

for steamed veggies you can add Flax oil to them (after they are cooked, you should not cook with Flax) it gives it a buttery taste, you can use it in place of anything that you would add butter to (you just cant heat it, just after it has been heated) I use it on toast with cinnamon, on steamed veggies, love it on my eggs, scrambled or omelet, on baked potato, any veggie really.

Flax oil is very healthy for you, you can go to the Barleans.com website and see all the things you can do with it and the ways it is beneficial for you. I don't lose weight without it!
