Lean Protein Meals (No Egg)

looking for some good recipes for lean protein (chicken, turkey, fish, cottage cheese, ????) I'm on a new nutrition plan and looking for more ideas for meals. Please do not include recipes that have simple carbs (rice, pasta, potatoes, bread), red meat, pork, or egg. The meal plan is very low carb (only in the morning) and my son has a severe egg allergy. It's not a NO carb diet just low carbs so things like quinoa is ok or other complex carbs are ok. I've made a couple of recipes with breaded chicken and fish and just go lite on the breading so those are ok too (I use an egg substitue for this).

Black beans are awesome (though any other beans, like pinto, are good too). We use black beans in vegetarian chili, and we also put them inside a whole-wheat tortilla with salsa and cheddar cheese.

I have fallen in love with spaghetti squash. We've been replacing all pasta with it, and so far have used it for regular spaghetti, lasagna, and last night, chicken parmesan (with baked chicken, not deep fried). We use ground turkey (93 percent fat free) or turkey sausage (also very low in fat) for these meals. Stir fry with chicken breast for the meat is also a good one.

I think for low carb/lean protein BBQ is probably one of the easiest ways to go. Put a piece of chicken or some fish on the grill, add some veggies and a salad and you are pretty much set. On the weekend, my husband made a grilled salmon (just salt and pepper), pineapple slices and red onion (they are yummy together) and squash. He just put everything on the grill. It was really good. For more substance you could add a bean salad.

I am not sure how these recipes would be for breakfast,but I'll send them just in case. We can sometimes be "untraditional" with our breakfast choices here.

The whole family really likes these lentil tacos. My hubby was leary at first, but he wound up loving it.http://allrecipes.com/Recipe/Tasty-Lentil-Tacos/Detail.aspx If you want to avoid the taco shells, this recipe does well as a lettuce wrap too.

We are also big fans of quinoa. We like to saute some green pepper and add black beans. We also enjoy smoked sausage in it. I imagine you could add chicken or turkey and that would be yummy too.

Cottage cheese with fruits.

Turkey roll ups? Deli meat with a little cheese and some veggies rolled up.

Smoked Salmon is served on bagels...how about omitting the bagel and just having smoked salmon?

Smoothies? You could add pretty much anything, including flax seed.

Has your son's Pediatrician, referred you/him to a Nutritionist?
If not, request that.
Then, that way, you WILL get menu ideas and food ideas & nutrition plans, for what to make and serve him.

That is what I would do.

How about cod, shrimp and veggie pie?
I nuke the cod for about 2 mins in the microwave then put into a pie dish with shrimp, peas, corn, celery, mushrooms, onions and any other veggies I have hanging about. Add a can of condensed soup - chicken or mushroom work well plus herbs and garlic and put it in the oven for 30 mins or so to cook through.
I normally serve this with potato or rice or pasta but it would work well with couscous or a salad...

I absolutely love Minestrone, you can add any kind of bean to it (I use Navy Beans & kidney beans) for lots of protein! Go to allrecipes.com to find a variation that you like!

There is also an oven-fried chicken recipe I love with chicken breasts coated with grape-nuts and seasoning. You just roll the chicken in egg (or buttermilk if you really don't want eggs), coat in the grape-nuts mixed with whatever seasoning you like, lay on a cookie sheet, and bake until the chicken is done. Yummy!

grilling lean meats is flavorful, and figure friendly. I like to do chicken skewers. I marinate or season chicken tenders and cook on the grill. When I'm laying off carbs and fat, I go for really bold flavor on the meat and a lot of vegetables for added fiber. Some family favorite marinades are Allegro Cajun, Bangkok Peanut Sauce ( you can make your own with peanut butter, coconut milk, and soy sauce) lemon pepper, jerk, when I want a smoky bbq flavor - cumin, paprika, salt, pepper, and garlic. I do a bunch of meat skewers and a bunch of veggie skewers. The veggies seem to cook at a differant rate than the meat, so, I seperate them.

I have a great quinoa salad recipe.

1 cup quinoa
1 cup frozen corn
1 cup edamame (immature soy beans, can find in freezer section)
1 Orange pepper
1 red onion
1 cup grape tomatoes
2 cups water/vegetable broth
Olive oil
1 lime
1 tsp cumin
salt to taste

Toast quinoa and add edamame, corn and water/broth. Cook on high until it boils, then turn to low cover, cook for 10 minuets or until fluffy. **add 1 tsp of salt if you cook with water** Set aside to cool off.

Dice the onion and pepper fine, cut tomatoes in half lengthwise. Mix about 2 TBSP of olive oil, the cumin and juice from the lime together. Mix everything together and serve.

This is a great recipe for the summer, light and fresh, but packed with protein and complex carbs!

You can marinate tofu and grill (it takes on whatever flavor you add to it), or scramble like eggs (add some tumeric to make yellow). Edamame is a complete protein (as is quinoa), and its good cooked with a dash of soy sauce. Seitan (wheat gluten) is packed with protein and contains virtually no fat. You can make your own, or buy it pre-made. There are many soy protein patties in the freezer section (Morning-star farms and boca), but read labels as some do contain egg.

Special K loaf is something i grew up on as a vegetarian. Here is a recipe that contains eggs, but egg replacer should work nicely in it, or some blended tofu as well (1/2 block should do it).

VEGETARIAN'S SPECIAL K LOAF
5 c. Special K cereal
5 eggs, beaten
1 c. chopped walnuts
1 lg. carton cottage cheese
2 tbsp. McKay chicken seasoning or onion soup mix
1 lg. onion, chopped
Chopped celery, if desired
Saute onion in 1/4 cube butter. Mix all ingredients together and turn into oiled loaf pan. Bake 45 minutes. Freezes well. To serve after freezing, reheat in oven 20 minutes.
