That is exactly what I did and it worked beautifully!
A friend gave me a good idea and I thought I would pass it along. If you want your child to quit using the pacifer have him/her give it to Santa. You could even wrap it up and leave it with cookies and milk for Santa on Christmas Eve. In exchange, Santa will leave a special gift for your child.

We gave the pacifier to Santa at the mall on Monday night. We put it in a box Monday morning and wrote a note to Santa and taped it to the top. Monday night we went to the mall and gave it to him. We asked that he fix it up and give it to a baby that needed it. My son did pretty well the first night, had a harder time the second night and did fine the 3rd night without it. He asks for it but stops pretty quickly when we remind him who has it. He's 3 so I thought it would be much harder. Thank goodness for Santa!
I have also heard of leaving it under their pillow (or on the window sill) for the pacifier fairy - sorda like the Tooth Fairy. The Fairy will take the pacifier and deliver it to a baby that needs it then leave a special present. Same concept as Santa but can be used outside the holidays.
I did that with both my children. Although Christmas eve was hard, They both looked forward to getting that special gift!.
