I second the Moosewood cookbooks!
My favorite is Simple Suppers. Had to get it from Barnes and Noble or Amazon though, because I couldn't ever get the Moosewood people to contact me.
Hi, I've decided to transition to a Total Vegetarian diet. So, I thought a Total Vegetarian cookbook or one made for a Vegan diet would be beneficial. I have started reading books and different websites to get recipes, etc. I'm just wondering if anyone can recommend a good vegan cookbook, which has quick meals and is easy to follow? Thanks so much!

I know the Moosewood (I'm pretty sure that's the name of them!!) cookbooks are popular with a lot of vegetarians I know and I'm guessing they would have a vegan edition too, Google it and see what you find!

On FB, there are tons of resources too and ask other vegans for there favorite recipes.

I sort of prefer to make my own variations to all recipes.......meat can be omitted or replaced with ease in 90% of things
We used vegan vittles:recipes inspired by critters of the farm sanctuary, and PETA's compassionate cook.
We also use Veganomicon. Check out the potato/kale enchaladas...excellent. We've also made the vegan Cassoulet. Again, really, really yummy. Vegan with a Vengence is on our book shelf and another wonderful cookbook is The Conscious Cook by Tal Ronnen. Tal teaches vegan cooking at the famous Le Cordon Bleu affiliated culinary schools nationwide. He also cooked for Oprah's 21 day vegan cleanse. His cookbook uses French culinary techniques and many celebrities use his services.
Watch for the local Veg Fest, I think it is held in the spring...www.VegFest.com. I heard Tal speak there last year. Good luck...enjoy the adventure. D.
cafe gratitude has a cookbook out.. I've had their raw banana coconut cream pie (no animal and no cooking) and it was one of the BEST pies I have ever had.

once you hook into two guys, you can see by what they recommend food wise and by way of other vegans...
Also, Gabriel Cousens, a physician gone alternative has done some interesting research on it... again., once you hook into one vegan , you'll find many other resources..
