Sweet Potatoe Recipe for Thanksgiving

This year I'm taking care of all the vegetable dishes for our family's Thanksgiving. I'm not a big fan of sweet potatoes, but several of the family is.

What I'm hoping for is to find a recipe for sweet potatoes that doesn't involve marshmellows and isn't too candy sweet.

Does anyone have any good suggestions?

I didn't read the replies so forgive me if this is a duplicate, but I make roasted sweet potatoes and my family LOVES them. Just slice the sweet potatoes into wedges or strips, toss with a little olive oil and salt and pepper, and spread on a foil-lined baking sheet. I usually spray the foil with Pam so they don't stick. Roast at 425 for about 40 minutes, flipping them over halfway through. This is delicious and super easy--I make them about once a week! I hope you like the recipe if you try it.

There are soooo many good recipes out there. I love to go to allrecipes.com or the foodnetwork.com for some great receipes for anything. You will find a great one! Happy Thanksgiving

Try looking it up on www.recipezaar.com. I am also a HUGE fan of Taste of Homes, although I prefer their books to their website. Look for something that appeals to you (not too sweet) and you can always personalize it further. If it calls for 3/4 cup of sugar, but you think 1/2 will do it - only add a half cup! :) Cooking is so fun and is really a personal expression of yourself. After you try your version of sweet potatoes that don't involve too much sugar or marshmallows, you may really grow to appreciate them. :) I love them plain, personally, and think it's a waste to pile all that junk on top of such a tasty food. Have fun with it and you'll probably surprise yourself.

This is one recipe both my kids request for their birthdays also! You can substitiute the brown sugar for the Splenda brand and it doesn't change the taste too much but it is not a very sweet taste to start with.

Sweet Potato Pie
2 cups mashed sweet potatos
2/3 cup firmly packed brown sugar
1 cup heavy cream
2 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon nutmeg
1/4 allspice
1 unbaked 9" pie shell

Heat oven to 450. Combine all ingredients. Pour into pie shell. Bake 10 minutes. Reduce Temp to 325. Bake 40 minutes longer or until center is set. Cool. Enjoy!

I hate marshmallows with sweet potatoes and don't even generally eat sweet potatoes unless they are in a souffle recipe. This is my favorite, super simple, recipe though. The topping is fabulous and usually makes this a huge hit with everyone, even those who don't like sweet potatoes.

I've also made this same recipe and substituted the sweet potatoes with winter squash (acorn, butternut, etc) and no one even knew the difference. I found the squash to be a little less sweet though which was nice.

Simple Sweet Potato souffle

3 c. mashed sweet potatoes
1 c. sugar
1 tsp. vanilla
1/2 c. butter

TOPPING:

1 c. brown sugar
1 c. chopped nuts
1/3 c. flour
1/3 c. butter, softened

Mix above ingredients in the first section until smooth. (I use a potato masher.) Put in souffle dish and sprinkle topping over it. Bake at 350 degrees for 30 minutes.

I have found alot of great recipes at allrecipes.com. I believe it was there that I had found a Brandied Sweet Potato recipe (cooking them in the alcohol brandy). Good luck!

My favorite is Sweet Potatoe Casserole. A lot of times we just put sweet potatoes in the oven in a bowl by theirselves and they are good by just putting butter on them when they are done. Everyone loves both of these except my Husband who does not eat sweet potatoes.

We've tried the casserole type with the crumbled mixture on top that others have mentioned. That was very good. How many people do you have to serve? I have a yummy recipe, but it may be more work than just throwing together the casserole. We cook sweet potatoes on a regular basis at our home since they're very healthy for you. Usually, we just bake them like potatoes and put butter and cinnamon on top (or salt). However, I found this "dressed up" recipe in a cancer prevention book that I occasionally make. It might be something different. This isn't the exact recipe, but you'll get the idea.
Twice Baked Sweet Potatoes. Bake the sweet potatoes until soft. (Do not wrap in foil to bake. You want the skin to be a little tough.) When they're done, take them out, slice them down the top, and carefully scoop out the inside. Transfer all sweet potato "insides" to a large bowl and mix with orange juice, butter, salt, cinnamon (and you might even try a dash of another spice, like nutmeg). Whip them up like mashed potatoes. Spoon the whipped mixture back into the potato shells. Sprinkle a mixture of chopped pecans (or walnuts, if you prefer) and a little brown sugar & cinnamon on top. Bake again for 20 min. or so until warm & toasty! Only drawbacks to this delicious recipe are 1)Picky eater kids... 2) If you have big sweet potatoes, it's enough to fill you up all by itself! Maybe try cutting them in half after they've been twice baked. Not a traditional Thanksgiving recipe, but I thought I'd throw it out there.

My very favorite sweet potato casserole is a big hit with everyone who eats it, including and especially kids...
1) Get in car
2) Drive to Publix
3) Buy theirs from the deli
4) Use the container it comes in to heat it up, serve it, and store leftovers if there are any.

My family traditional recipe for Sweet Potato over a 100 years old. They all love it. I don't eat sweet potato so I will have to take theor word for it!

4 large cans of yams or sweet potato drained
1 large can crushed pineapple juice and all
1/2 cup dark brown sugar
1/2 cup white sugar
teaspoon vamilla or cinnamon
4 eggs beaten
2 TBSP butter or marjorine

MIX ALL TOGETHER AND SPREAD IN 9 X 12 PAN.BAKE AT 400 UNTIL YOU CAN STICK A KNIFE INTO IT AND IT COMES OUT ALMOST CLEAN. SHOULD BE MOIST BUT NOT SOUPY.

CHOOSE YOUR OWN TOPPING.
MARHMALLOWS IS WHAT MY FAMILY LIKES BUT SINCE YOU DON'T YOU MIGHT LIKE THE ONE I LIKE BELOW
MIX SELF RISING FLOUR WITH SMALL AMOUNT OF MILK,BUTTER,BROWN SUGAR AND WALNUTS TOGETHER TO FORM A CRUMBLED MIXTURE AND PUT ON TOP OF SWEET POTATO AND BAKE UNTIL GOLDEN BROWN AND LOOKS LIKE A CRUST LIKE MIXTURE.

YOU HAVE TIME TO TRY THIS OUT BEFORE THANKSGIVING. CUT RECIPE IN HALF IF MAKING FOR JUST A FEW. THE ONE ABOVE SERVES ABOUT 20 PEOPLE OR MORE. IF YOU DON'T LIKE PINEAPPLE YOU CANLEAVE IT OUT.

Ingredients
10 cups sweet potatoes, peeled and chopped
1/4 to 1/2 cup butter
3 tablespoons honey
1/4 teaspoon ground cinnamon
1/4 teaspoon kosher salt
Directions
Add the potatoes to a large Dutch oven and cover with water. Bring to a boil over medium-high heat. Reduce the heat and simmer or until the potatoes are tender, about 8 to 10 minutes, drain well. Return the potatoes to the Dutch oven and add the butter, honey, cinnamon, and salt. Beat at medium-low speed with an electric mixer until smooth. Transfer to a serving bowl and serve hot.

Cook's Note: For more sweetness, add more honey.

I know you have lots of choices but this one is great and made in a SLOW COOKER so it also saves you some space..

6 medium (2 pounds) sweet potatoes or yams, peeled and cut into 1/2-inch cubes
1 1/2 cups applesauce
2/3 cup packed brown sugar
3 tablespoons butter or margarine, melted
1 teaspoon ground cinnamon
1/2 cup chopped nuts, toasted

Total Time: 3 hours 0 min
1. Place sweet potatoes in 2- to 3 1/2-quart slow cooker. Mix remaining ingredients except nuts; spoon over potatoes.
2. Cover and cook on low heat setting 6 to 8 hours or until potatoes are very tender.
3. Sprinkle with nuts.

An easy old recipe I use for Sweet potatoes is Boil them as you would to make mashed potatoes. Use a 1/4 cup of coconut and a 1/4 cup of walnuts,1/4 cup butter. Put Brown Sugar in to your taste and warm in the oven until center is warm again.
Comes out great and all will love it.

I do not like the marshmallow sweet potato dish either and that's what most people make in my extended family. So a couple of years ago, I found a great recipe and everyone enjoyed it. Martha Stewart has a recipe that's made with applesauce (use the unsweetened kind) and caramelized apples on top. Very delicious and simple to prepare. (I don't do complicated.) The recipe is from Martha Stewart Living, November 2006. I got it off her website. It's called "Whipped Sweet Potatoes with Caramelized Apples."

my mom has been making an awesome dish called sweet potato surprise for years. it is tart and tangy, it has fruit in it and it's delicious. always a big hit! enjoy.

This can be assembled a day ahead and stored unbaked and tightly covered in the refrigerator.

4 pounds sweet potatoes or yams
4 bananas, chopped
2 large green apples or ripe pears (any kind but Bosc)
2 tablespoons minced fresh ginger
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1 teaspoon salt
1 3/4 cups apple juice or cider
1/2 cup fresh lemon or lime juice
1/2 cup chopped dried apricots
2 cups chopped nuts (optional)

1. Peel sweet potatoes, and boil until soft. Drain.
2. Meanwhile, sauté apples and bananas with ginger, cinnamon, allspice, salt, and 1/4 cup apple juice. Cook slowly, covered, but stirring intermittently for 10 to 15 minutes. If mixture gets too dry and a bit more juice.
3. Preheat the oven to 350 degrees. Butter a 9x13-inch baking dish or deep casserole.
4. Puree potatoes with the fruit juices. A food processor with the steel attachment works ideally for this.
5. Stir the sautéed fruit into the puree. For a smoother texture you can puree the fruit first before adding to the potatoes. Add the apricots. Heap into the prepared baking pan and, if desired, top with the chopped nuts.
6. Bake uncovered for 45 minutes.

Bake the sweet potatoes until they are soft (at 350 for about an hour and 20 minutes, depending on the size). Baking them carmelizes the sugars to make them naturally sweet. After they cool a bit, take off the skins, add some maple syrup (the real stuff!), cinnamon, butter a pinch of salt and a little bit of milk and whip them up. They are DELICIOUS this way!

I too use a recipe like the one that Tiffaney responded with and always gets lots of requests for the recipe. I think the topping really makes the difference - I don't like the marshmellow topping either:( I use pecans in my topping with light brown sugar and flour and butter.

We eat lots of sweet potatoes, they are so good for you... but Im not a "sweetie" type ... I cut the potatoes into wedges, throw them in a bag, sprinkle olive oil on 'em, shake it around, then throw in sea salt, cayanne pepper, paprika (whatever spice u like) shake it all around until coated... then I throw them on the grill or put em on a cookie sheet in the oven.... bake until crispy on outside, soft inside... freekin' yummmieee!!! Like spicy fries.. but baked! Oh yeah... I leave the skin ON!!
