You can make veggie soup:
Onion, celery, garlic, carrots, cauliflower, zucchini, tomatoes (I freeze my ripe tomatoes and toss them in the soup later), and kidney beans or garbanzos, with chicken broth. Add a little pasta and make them a grilled cheese or turkey sandwich on the side. If they are old enough, set everything out and they can make it themselves. If sandwiches are too much work and you want to add protein, add a spoonful of (cooked) ground beef, then top the soup with cheese.

I follow the instructions on a box of "Classic" pasta salad. In a separate pan, I put a little onion, garlic, celery; add cauliflower, broccoli, zucchini, a couple of green beans; 3 parts water, red wine vinegar, and olive oil. Add salt, pepper, dried parsley, and dried oregano. Turn the fire to low and let it cook for about 3 - 5 minutes. You will see the broccoli change from vibrant green to dark green. It should still be stiff so that when it is cold it has a little crunch. Remove from heat and remove the oil & vinegar mix. Toss with the pasta salad. You can add garbanzos or kidney beans, cucumber, and tomato. Refrigerate and serve with a sandwich. Once you refrigerate it, all the oil will soak up and it will lose flavor. You can add your favorite bottled Italian salad dressing, I use Wishbone. The salad has everything else, so you can just set up some simple sliced cheese and sandwich meats with a bag of rolls. I like the Hawaiian sweets, they are always a hit.

I also like to make smoothies. They freeze and thaw well. They are great for breakfast on the side of a small bowl of cereal.
When my strawberries & bananas begin to ripen, I toss them in the freezer. Then I toss them in the food processor (a blender will work) along with a few spoons of plain yogurt and a squeeze of honey. I also ad about 5-10 leaves of spinach. Eat them right away or freeze them in personal sized containers. My daughter came in the other day and ordered a smoothie for everyone out front! I love that she was out there bragging, but OMG! I made the smoothies and poured them into 2 oz disposable ketchup cups and gave them a plastic spoon. They loved them and I loved that I didn't have to give them a pouch of sugar and water.
