It may be a little out of the way, but Coram Deo Academy in Flower Mound might be a good option. Their K program is 2 days a week, but you can add an optional day of electives making it 3.
Does anyone know of a private kindergarten in the Mid-Cities area that offers school 3 days a week? I know of Red Apple in Hurst that is 4 days a week and Sonshine Academy in Colleyville that is 2 days a week, but I would really love to find a kidergarten program that is 3 days a week!

You could try Fort Worth Christian in NRH.
You could also try some of the child care centers. My son went to Bright Horizon's Kindergarten (accredited program so they are ready for first grade) it is in the hospital district in FW. May be a bit of a drive. If you are interested they are called Kids' Place.

Most public K's are 7 hours a day/5 days a week. Reading Friends in Keller is 5 days a week, but only 4 hours a day. You don't want your child to be too far behind in public school by only going to school so little hours. Plus, going to school 5 days a week for a shorter period is a better transition than going 3 part time days than jumping into 5 full days the following year.
I was under the impression that First Baptist Church in Keller has a 3 day kinder program but you would have to double check with them
