Dear M.-

I am not sure how 'healthy'...but always gets requests! I call it 'goop'...melted velveeta type cheese...sliced olives...sliced jalepenos...and shrimp. Served hot with corn chips...and/or pita bread.

Also on our menu...make your own pizza...and hot buffalo wings with blue cheese or ranch dressing with celery for dipping. Raw veggies on hand for the more 'healthful' minded...

Oh...and a big pot of chili...crusty bread...salad...and beer...*and tums...both fruity and minty* lol

ok here is a dip that people LOVE
bake or foreman grill (i grill) chicken breasts cool in the freezer and shred them in the food processor
layer beans (non fat refried) on the bottom then salsa** then chicken and repeat you can also add guac** or sour cream (sub greek yogurt healthy)
bake your own tortilla chips by using corn tortillas low in fat/carbs etc in the oven at 200 for an hour ish ... this is something you can do the day/night before you just want to dry them out so they are hard and you can offer warm tortillas to put the filling into.

**salsa
in a food processor put 2 or 3 bunches of cilantro, a jar of drained roasted red peppers, a few jalapenos and tbsp of the juice, minced garlic, juice and zest of one lime, 1/2 cup of chicken broth you can also add canned/diced tomatoes drained or anything else you like

**guac
avacado 3, chopped tomatoes, 1 or 2 limes and zest of half of one lime, mix and eat. again you can add almost anything you like to the guac but basic mix is as above.

We make a YUMMY Turky Dip that my husband created and our friends steal! We use Jenny-O 99% fat free ground turkey, Tostitos Hot Salsa and a Hot & Spicy Taco Seasoning.

Cook the turkey as if making tacos and add taco seasoning. Add Salsa and serve. You can serve with Tortilla chips or bread. Supper simple and very, very, very good...and good for you!

There are totilla rolls ups that are good. Don't have the receipe on me, but yo ucan find it on the internet. REALLY easy to make (beans, sourcream, cumin, green onion, cheese and lime juice on tortialls that you jelly roll and cut up), low fat and always a BIG hit

We LOVE this recipe served with Tostitos Scoops. (You can buy the Baked ones for a healthier treat BUT I think they taste like cardboard so you decide :-) Personally we do not like spicy so I choose Rotel-Mild but suit yourself!

TEXAS CAVIAR - Corn Salsa
1/2 cup diced Vidalia onion
3 green onions, sliced thin
2 cloves garlic, minced (2 t already minced in jar)
1/2 bunch fresh cilantro (pull leaves off stems and chop leaves**)

Drain, rinse, and add to above in a large covered bowl...
1 can - Black beans
1 can - Black Eyed peas
1 can - Sweet Yellow corn
1 can - White shoepeg corn

Do not drain, and add to veggies...
2 cans - Rotel diced tomatoes with green chiles
1 cup FAT FREE Italian dressing

Refrigerate until serving. To serve: Transfer to decorative bowl, using slotted spoon.
Yields approx. 16 servings.
