I want to feed my children more beans...any kinds...But, I need recipes to use the beans...Do you have a good recipe that has beans in it...that is fairly easy to make? Please share.

Allrecipes.com has some great recipes for corn and black bean salsas! (And they are not hot salsas, not chile or peppers) You can add more stuff or take out what the kids might not like but they are great for summer time because they are cold. My toddlers love then and just eat them with a spoon or crackers.

Here's a recipe for baked beans that have sausage in them. You can serve it as a side dish, which I've done at work functions & there's never any left. At home I usually serve it over rice for a main dish once or twice a month & my kids love it. Here's the recipe:

I also make a Mexican Chicken Soup that I created the recipe for a year or so ago & everyone loves it. You can definitely play with it to make it your own. Here's how I do it:

2 (26oz) containers chicken stock
2 (10 3/4oz) condensed cream of chicken soup
2 (10oz) Diced tomatoes with green chilies (Ro-Tel, mild)
1 (15.5 oz) can kidney beans, drained and rinsed
1 (15.5 oz) can black beans, drained and rinsed
1 (11 oz) can whole kernel sweet corn, drained
1 large sweet onion, chopped
1 rotisserie style chicken, meat removed
juice of 2 limes
Tortilla chips
Shredded taco cheese
Sour cream
1 lime, sectioned

Directions
Pour broth and condensed soup in large stock pot. Add tomatoes through lime juice and bring to a boil. Reduce heat to medium low setting and simmer 30 minutes. Crunch chips into bottom of a bowl and ladle soup over. Sprinkle with cheese and add sour cream and fresh lime wedge if desired.

We have a go to black bean recipe that I use for several different things.
Take two cans of black beans rinse and strain.
Add fajita seasoning
Diced tomato green, pepper, onion and jalapeno if wanted.
You can also add about a cup to a cup and a half of chicken stock or water.
I have even added diced yellow squash and zuccini.
Simmer until veggies are tender.
I will mix this as is with spanish style rice and use as a barrito stuffing with whole wheat tortillas you can also mash and spread on tostada shells top with more tomato, letuice and cheese. It is also great as a side dish.
My 2 yo loves them but then again there really isn't much he wont eat.

quesadillas! you can put them on wheat tortillas with some cheese and spread low fat refried beans! kids love them. my kids also eat beans with bbq and like them well. seems like beans go great with crock pot recipies. good luck.

we eat a lot of beans at our house. some ideas:
-hummus (to serve with veggies like carrots, celery, broccoli, cauliflower; we also use it on sandwiches instead of mayo or spread on bread or pitas for a snack)
-Chili (we particularly like butternut squash chili with beans and swiss chard)
-Minestrone soup with beans
-Italian Sausage soup with lima beans
-tacos, taco salad, burritos, quesadillas etc with black beans or refried beans

I wish I had the recipe but my friend hasn't sent it yet. It is on the internet black bean brownies.

A friend of mine made them and they're fantastic. A nice treat but incredibly healthy with all that good fiber and lower sugar.

My kids will eat tostadas, tacos, nachos, and burritos that have a layer of refried beans smeared on them, so long as I top the beans with colby jack cheese.

My standby recipes for beans are:

Roasted chickpeas (just drain a can, toss with olive oil, salt, pepper and whatever fresh herb I have and pop in the oven for 20ish minutes). My son loves to pop these into his mouth.

I serve this with fish but it can really be served with anything. My kids like this--even my toddler.

finely chop 1 or 2 cloves garlic, half medium onion (really fine if your kids do not like onion), saute in pan with Italian Seasoning, salt and pepper in olive oil for a minute or 2 until onion and garlic are cooked. My kids also like it when I add just a pinch of chili powder.

Add a can of beans that have been rinsed, 1 cup of chicken broth, and one tomato chopped. My kids hate tomatoes so I have to chop them up really well. Cook for a couple of minutes, add a can of corn or you can use frozen or fresh from the cob if you like. Cooking time depends on what kind of corn you use. I also add a cup or more of chopped spinach. The best thing of this is you can add seasoning to your taste and add a little extra chicken broth and serve over rice.

My kids love refried beans. Cook up black beans, mash them in a food processor, reheat them in a skillet over oil (we use olive oil), add salt and cheddar cheese, cook until the cheese is melted, and have them eat it with tortilla chips and salsa (if they like salsa; my kids just eat them with tortilla chips). Extremely easy to make; cooking beans from dried ones taste better (to me, anyway) but you could also use canned beans and mash them if you want to save time.
