I have had better success in using the lighter green peppers - I can't remember their name right now...

Needed:
Meat - hamburger, chicken, sausage.
Rice - cooked
Peppers - one per person
Can of diced tomatoes (Rotel, Hunts with garlic and onion, etc.)
Bread Crumbs (I use the Progresso Italian Herb)
Options:
mixed veggies
scrambled eggs (usually two - like you would for fried rice)

Pre heat oven to 350.

Brown hamburger or sausage or half/half of each. While cooking meat - cook rice. once rice is cooked - you can add a can of diced tomatoes or Rotel tomatoes with spices...I fry 2 eggs maybe more - then add them to the rice and tomatoes...if I have left over mixed veggies, i add those too!! So none of my food goes to waste!!!

Stuff the peppers, cover top with bread crumbs and bake at 350 for 30 to 45 minutes.

I like cooks.com. Type in stuffed peppers then browse the recipes.
But here is mine. It has alot of steps but they are easy.
Get large peppers that stand by themselves. Cut the top off very close to the top, scoop all the seeds and veins out. Place peppers in salted water to blanche for 7 to 9 minutes. Totally immerse peppers so the inside gets done too. When done drain and place in deep 9x13 pan.
Cook Ground Beef with 1/2 small onion and 1 clove garlic both finely chopped. Stir in 3/4 cup cooked rice and 1 can tomatoe sauce 1 tsp worcestshire sauce and salt and pepper to taste. Cook down till all liquid is gone. Then I layer the meat and cheese in each pepper topping with cheese. I do not cover with sauce I just bake at 350 till cheese is melted. I serve the remaining meat on the table.
Good Luck!

Try allreceipes.com They have a lot of good recipes.

My hint.... look at a few recipes you like and then blend them to your tastes to make you own unique recipe.

We like stuffed peppers fairly plain, mostly like a good seasoned meatloaf stuffed into the pepper and s sweet marinara type sauce. I make homemade marinara and that is what I use.

Good luck and enjoy!

I never use a recipe--

Do you want Italian style or Mexican?

Frankly I usually start with the leftovers from Taco night or pasta night.

Cut off the tops of your peppers and clean them out. Stuff with a mixture of leftover hamburger, rice (optional) a little shredded cheese and whatever else you have leftover that sounds good. Top with marinara or salsa or a can of seasoned diced tomoatoes. Sprinkle with more cheese. Bake at 350 until peppers are soft, filling is hot and cheese is melted.

If you make up a bug batch they freeze well!
