i agree with the ladies that answered.. or use the rice, lots of cheese and layer it. Or if you have any wraps or english muffins.. put it on that instead..
hey what do i do if i have all the makings for a mexican dinner - EXCEPT tortillas or taco shells??? (i do have rice and potatoes for a carb...) ideas!?!??!

Ummm... Depends on what you mean by makings for? (Mexican cuisine is more varied than French or Italian). Red meat, ground beef/turkey, chicken, shrimp, scallops, shellfish.... What kinds of veggies, seasonings, beans, rices, etc.
Are we talkin carne asada, or chiles rellenos, or fajitas, or tamales, or fish tacos, or chicken enchiladas, or carnitas, or _____?
We put tortilla chips down, the put the meat on, then the cheese, then the lettuce and on the top we put the tomatoes and call it a taco salad. The mexican rice and other starches around the edge as an edible garnish.

Mix up the fixings like you would for tacos and serve it over hash browned potatoes... or make and toss the fixings with the rice...
Corn on the cob, steamed broccoli & brown sugar carrots> Tonight we skipped the meat.
we use Doritos's, Frito's or tortilla's and do it like a salad :) but with rice would be just fine also
