Hi ~ How about enchiladas or taco casserole w/mexican rice maybe a bag or tortilla chips & some salsa. Have a mexican themed dinner
I'm making a meal for a family tonight and just looked at the sign up sheet. Both the meal before mine and the one right after mine are pasta. I was one of the first to sign up so didn't think about this, was originally going to prepare baked ravioli. I need some ideas for non pasta meals that are easy to transport. Added mind block is my husband is vegetarian and he won't mind if I cook meat hear but my mind doesn't readily think that way anymore.
If I don't think of anything else, I was going to use a recipe from the side of a can of tomatos, still pasta but with mexican flavoring. I've tried it before and it's pretty good, but would like to go a different way.
Ideas? Thanks in advance

Chicken, broccoli and rice is easy.
Vegetarian chili, transported in a crockpot.
My mother cooks a potato-broccoli-cheese dish in the oven that is pretty good. Chicken and rice in the oven is good, too.
Beef stew with potatoes and veges, chicken pot pie, shepherd's pie, meat/vege stir fry on a bed of rice, enchiladas, soup or chili...
Think crock pot!
- Beef Stew
- Chili with cornbread (include sour cream, chopped onions and shredded cheddar)
- Frittata (SO easy... and can be a totally veggie meal too)
You could also do all of the "fixings" for a taco bar.
- Ground turkey pre-seasoned
- chopped lettuce
- tomatoes
- sliced black olives
- taco sauce
- shredded cheese
- sour cream
- taco shells
I made a roast for a co-worker who had just had their second baby. I actually brought my crock-pot to work and let it cook all day, then dropped it off to them on my way home. (However, the folks in my office were not very happy to learn that they weren't going to get to eat what they'd been smelling all day!)

Grilled cheese with tomato soup
Vegetable soup
Veggie Quiche
Quesadillas
I'd put a roast in the crockpot - beef or pork shoulder or brisket.
Shred it, add a jar of bbq sauce and serve on hamburger buns. Serve with beans and potatoe salad
or cook it with carrots and potatoes and enough water to make a gravy. Sever with a loaf of french bread fro the grocery store
or cook it with a jar of hot sauce and shred it. Serve it on tortillas with chips and salsa
I love to make a homemade chicken pot pie! It's pretty cheap, easy and makes a alot. Its way healthier than buying it from the store and tastes way better! Let me know if you want the recipe!

Burrito mix with the fixings.
Mexican lasagna.
Chili & corn bread.
If your husband does not mind meat being cooked then why would you not go with a wonderful Sheppard's pie?

Vegetable soup is always a winner in my house,
stir fry rice and veggies,
squash, eggplant, mushrooms, couscous, sweet potato casserole,
I also love fish dishes, Salmon or crab cakes are nice
I would hop online and find some vegetarian dishes I could possibly whip up quickly and make it happen. Brown rice and/or red potatoes make a nice place for most dishes to land. They make great substitues for pasta.
How about soup and bread and salad? You could make black bean soup or squash soup or a Thai vegetable soup.
