Quick Side Dishes to Go with Grilled Shrimp?

Last minute friends over for dinner. I'm doing grilled shrimp and turkey keilbasa with a salad but want another side. I don't want to wander the store aimlessly with kids in tow....any suggestions for me?

grilled red peppers, peeled, cut in large strings and mixed with just salt and extra virgin olive oil are great! If you want more punch, add in the mix a chunk of fresh garlic (do not mix the already chopped garlic that you buy in a jar, that's too strong). They taste wonderful!
If you have extra eggs that you want to use up, mix them with grated romano cheese and chopped fresh basil and make a frittata...super yummy and you can serve it already cut in squares and cold.

Corn on the cob with herbed butter! Put softened butter in a food processor with fresh herbs- I like basil, thyme, a little parm cheese and salt and pepper. You can grill the corn as well.

Buy a bag of carrots, blanch them for a few minutes, then marinate in olive oil and garlic. Grill them until tender.

Pasta and steamed veggies or salad :).

You could do this same recipe and substitute brocolli for the shrimp if you want:

QUICK & EASY SHRIMP SCAMPI WITH PASTA
1 pound of shrimp, shells removed and butterflied
2 cups of uncooked rotini pasta
3 Tb butter
3 Tb olive oil
3/4 tsp salt
1/2 tsp oregano
1/8 tsp basil
2 Tb minced garlic
A large handful of chopped parsley
Fresh ground pepper to taste
Grated Italian cheese (Romano and/or Parmesan)

Cook pasta in salted water. While pasta is cooking, combine butter, oil, seasonings, in large frypan (or wok), and heat to sizzling, but not burning. Add shrimp and stir until cooked.

Turn heat to low. Add parsley and grind in a bunch of pepper.

Turn off heat until the pasta is done. Drain pasta and toss with the shrimp. Serve immediately, passing grated cheese.

Can be doubled. And butter to olive oil ratio can be altered as well for the more health-conscious.

I would do some kind of carb, either rice or pasta (maybe fettucine with alfredo sauce).
