Quick Salad (Fruit)

I just got invited to go over to a fellow mama's house tonite for a meeting for a committee that I am on. One of the mom's is bringing salads (lettuce) another is doing drinks. Do you have any ideas for a quick dessert or a fruit salad i could bring? These mama's are pretty health concious. I just don't want to show up empty handed but not a fan of going to the grocery store bc its a 25 minute drive. Any help is appreciated! I do have pineapple, peaches, a banana and some apples if this helps.

Can you take something savory or a meat salad and bread?

Chicken salad can be extremely well made with grapes and nuts and all sorts of stuff in it. I'm allergic to nuts so I'd make some with everything and some with more basic things. Tuna salad is good too.

You could do a soup. Potato salad, macaroni salad, something that you can make.

You could cut up the fruit you have and string them on bamboo skewers or large toothpicks?

You can do a salad with what you have. Do you have any lemon juice? The apples and bananas will get brown if you don't dip them in lemon juice. If you don't have any, just slice the bananas after you arrive at her house, and add it in & toss gently. For the apple, you can do that when you arrive as well. If you want to do it at home, leave the peel on it, cut it in quarters, but reassemble it so the cut surfaces aren't exposed to the air. Wrap in plastic, then when you get there, split it open, quickly cut out the core, and slice each wedge into chunks.

If you have any Greek yogurt, you can spoon some into a glass bowl, cut up and add the mixed fruit, then top with more Greek yogurt. You can add some granola or Grape Nuts to the top if you have it, or take a drizzle of honey and make a little swirly design on top. I think Greek works better than regular yogurt which is a little runny.

I think everyone will be delighted with what you bring, no matter what!

One of my favorite, easy dressings for a salad is lemon juice mixed with honey and some cinnamon. Perfect on peaches... do you have any frozen berries? Those would pair well too...

A favorite in my house it just a simple fruit and yogurt salad. I cut up whatever I have (berries, apples, grapes, oranges, bananas, ect) and simply mix them with vanilla yogurt.

so, cut up the fruit you have and toss it with a little lemon juice and maybe a gourmet vinegar if you've got some on hand.

If you have vanilla yogurt - I would do the peaches (sliced) with yogurt.
