Okay - someone had a party - and some of the finger foods left over is pepperoni, cheese and crackers...I'm thinking CASSEROLE!!

I don't see why crackers couldn't be crumbles over the top with cheese and pepperoni. Sounds delicious, to me!!
I have never made a pepperoni casserole with crackers, but what I would do is make a vat of tomato soup, drop the pepperoni & cheese in it, then add crackers to the individual bowls. This is one of my all-time favorite soups & has been since I was a kid. The only time we ever had pepperoni in the house growing up was Christmas for some reason & the week following there was always some leftover. This is what I grew up doing, yum-ola!
You could also do an Italian style sub sandwich, with pepperoni, other sandwich meats, olives, peppers, onions, cheese etc. I do not have a recipe, but I bet pepperoni would also taste great in breakfast potatoes (with cubed potatoes or hash browns, diced peppers, onions, and possibly even some shredded cheese on top) or mixed into an au gratin potato casserole.'

Pepperoni is great in omelets with cheese. You can also make French Bread pizzas or a varation of them. Take the French bread spread with sauce top with diced green peppers, onions and some mushrooms, and the pepperoni and cheese. Put under the broiler and when the cheese melts and bubbles they are done.
One of my ds' favorite treats is pizza bread. I just make a regular loaf of bread dough (you could make it from scratch, or in a machine, or buy a frozen bread dough and get it to the rising part). After it's kneaded, and just before I set it to rise, I add in: chopped pepperoni, minced onions, minced sun-dried tomatoes, shredded mozzarella cheese, minced black olives, and some pizza seasonings (basil, oregano, a little salt and pepper, dried red pepper flakes). The most important ingredients are the pepperoni, cheese and sun-dried tomatoes. Everything else is up to you, depending on what you like in your pizza. The other important thing is to have the pizza ingredients chopped fairly small. Let the dough rise, punch down, and bake as usual. My ds slices it, toasts it a little and it's like a meal in itself. Sometimes he puts a little more cheese on top and broils it.

I recently made stuffed bread, with pepperoni, mozzarella and ricotta cheese, and spinach... remind me to give you the recipe, SUPER easy :)
You can buy pizza dough and make a stromboli. They are delicious! Just roll it out in a big square, add pepperoni and cheese, roll it up and seal it. Brush with a little olive oil and some garlic powder. Bake until light brown.
