Need YUMMY Recipes for Diabetics

Hi,

Thanksgiving is being celebrated at my house this year and my mom happens to have Type 2 diabetes (which you would never guess because she is the most petite, food concious and exercising woman you'd ever meet!). We are going to have turkey and all the dressings, but I'd like to prepare some dishes my mom can eat without feeling guilty or hurting her health. I know there are diabetes websites with recipes, but I thought I'd see if y'all had any tried and true recommendations. I'd feel better about using a recipe someone has already given a stamp of approval. I'm looking for side dish and dessert recipes.

Thanks so much for helping me take care of my mom and spoil her at the same time! I hate how closely she has to watch her diet and want to help her enjoy a meal at Thanksgiving.

My grandfather, grandmother, and mother all have diabetes, so we always have diabetic foods around. I know several recipes for desserts, one is a strawberry pie, its delicious! Email me I'll give them to you.

You don't have to go too far out of your way, just make substitutions in your favorite dishes. Use a fat-free, trans-fat free margarine or butter substitute, use Splenda instead of sugar, use fat-free dairy products, offer a nice veggie tray (with fat-free, sugar-free dressing), egg beaters instead of eggs, and go easy on the salt. Diabetics need low carb, so she'll likely pass on the potatoes, but she can go to town on the green beans. I have seen some great recipes in a cookbook called Cooking with the Diabetic Chef. And you might find some good alternative recipes on the American Diabetes Association or American Heart Association web sites.

I have gestational diabetes (I'm 35 weeks pregnant) and have only been dealing with this problem for about a month or so. However, I have found that fresh or frozen veggies are always "safe." Your mom may even be able to eat some of the things she likes within moderation as long as she adjusts her diet the rest of the day - I'm sure she knows this. I haven't tried any diabetic dessert recipes...I just "cheat" every now and then. However the American Diabetes Association website has the best recipes I have found (my picky husband and 2 year old son even like them!). Just go to www.diabetes.org. Hope this helps a little.

Basically anything "lo carb" is ablso diabetic friendly if that helps! My husband has it too and personally, I've found most diabetic recipes to be yucky. But, another thing you can try is cooking w/splenda and wheat flour. You could also make dressing from scratch w/whole grain bread (although cornbread isn't all bad either)...
