I use K''s Mom recipe and love it! It freezes well too. We shred the zucchini in 2 cup servings and freeze it. Then I can bake it in the dead of winter too (that's my favorite time to have it).

Today my daughter and I went out to our garden to find some huge zucchini squash(the dark green kind)....I was thinking about what I can make with them and thought of zucchini bread yummmmm! I have never made it but have heard people rant and rave about how yummy it is. So my question for you lovely gal's is I need a good recipe to make and would love it if you ladies could share it...I did go online and looked up several recipes but I would much rather make one that has already been tested-tasted and loved.....I would greatly appreciate any recipes! Thank's in advance!
I feel like such a doofis! lol..I spelt "zucchini" wrong lol! But I love all the recipe's ladies! I have soo much zucchini that I just may have to try out all the recipes! But I will definately let you all know how it turned out! Thank's once again!

I couldnt jump up fast enough to get my recipe for you!! This is soooo good, Ive taken it to brunches and friends and they all stop using their old recipes once they taste this.
3 eggs
1 cup oil
1 cup white sugar
1 cup brown sugar
2 cups grated zucchini..just wash it off and grate ,,with peel.
2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
2 teaspoons baking soda
1 Tablespoon cinnamon
1 teaspoon vanilla
a cup of chopped nuts if you want.
Mix all ingredients in a big bowl and pour into a large greased loaf pan.
Bake 350 degrees for 1 hour or until a knife inserted in center comes out clean.
I usually get 2 smaller breads from this since I loaned my large loaf pan to someone and never saw it again. And it also works well for muffins. Youll love it!

A good friend of mine has a food blog called very culinary. There's a recipe on there for A-Z Bread and it is fantastic! Basically it's a bread recipe that you can add anything to and it always turns out great.

Paula Dean's recipe is wonderful. It calls for nuts but you could leave them out. It freezes well too.

Banana Bread/Zucchini
Combine 1 egg, 1/2 cup oil and 1 cup zucchini or bananas
in blender. (I usually use 2 - 3 bananas.) Add 3/4 cup
sugar. Sift together 1 1/2 cup flour, a 1 1/2 teaspoon
cinnamon, 1/2 teaspoon baking soda, and 1/2 teaspoon
salt in mixing bowl. (I usually don't sift, but rather
whisk the dry ingredients.) Add the zucchini/banana
mixture from blender. Gradually add 1/2 cup nuts,
raisins may be added for variety. (If I don't have
nuts, I just add the raisins, or if I don't have both
raisins and nuts, I just leave them out.) Bake at 325
degrees for 1 hour. Makes 2 small or 1 regular loaf of
bread.

Zucchini Pineapple Bread
3 Eggs
2 Cups Sugar
1 Cup Cooking Oil
1-1/4 Tsp. Vanilla
-1/2 Cup Raisins (opt.)
1 Cup Drained and Crushed Pineapple
2 Cups Grated Zucchini
3 Cups Flour
1 Tsp. Baking Powder
1 Tsp. Baking Soda
1 Cup Nut Meats (opt)
1 Lemon, zest and juice
Beat together oil, eggs, sugar and vanilla. Add zucchini and dry ingredients. Stir in pineapple, lemon juice and zest, raisins and nuts. Pour into two greased and floured loaf pans. Bake in oven for 1 hour at 350̊F. Small loaf pans - 40 minutes at 350̊F.
If you have too much try a cake with cream cheese frosting too. Yummy. Group recipes has a great one online that is a zucchini spice cake.
Chocolate zucchini bread from allrecipes.com is also very yummy. Tastes just like chocolate cake.
Question for goingon4boys or anyone, how do you freeze the zucchini? Just shred, throw in a ziplock & put in the freezer, or do you have to do something else to it first?
I don't have one that I've used recently. I'd go to www.allrecipes.com and they have a ton of them.

This is my in-laws' recipe, with pineapple (canned) and cranberries (dried)-- yum!
1 c. sugar
1 c. canola oil
3 eggs, beaten
2 t. vanilla
1 c. crushed pineapple, drained
2 c. shredded zucchini
1 c. chopped dates, raisins, or dried cranberries
3 c. flour
2 t. baking soda
1/2 t. baking powder
2 t. cinnamon
Preheat oven to 350F. Beat together sugar, oil, eggs, and vanilla. Stir in pineapple, zucchini, and dried fruit. In a separate bowl, combine flour, baking soda, baking powder, and cinnamon. Add to zucchini mixture. Mix just until well blended. Turn into 2 greased 8.5 x 4.5" loaf pans. Bake for 1 hr. Cool on rack 10 min. before removing from pans. Cool completely before slicing. Makes 2 loaves.
